Acarajé on Carpet: Removing Dendê Palm Oil, Deep-Fry Fat, Vatapá Paste, and Dried Shrimp

What Acarajé Leaves on Carpet

Acarajé is a traditional Afro-Brazilian street food from Bahia — a ball of black-eyed pea paste (feijão fradinho, ground with onion and salt) deep-fried in dendê palm oil until golden-orange, then split and filled with vatapá (a thick paste of dried shrimp, ground peanut, coconut milk, bread, and dendê), caruru (an okra-shrimp stew), and whole dried shrimp. When acarajé falls on carpet, multiple distinct stain components land simultaneously: dendê palm oil (the frying medium — orange-red carotenoid pigment at extremely high concentration), black-eyed pea starch and protein from the fritter body, the vatapá filling (peanut fat, coconut milk fat, shrimp protein, bread starch), and dried shrimp protein with its very pungent salt-dried seafood odour.

Step 1: Remove Acarajé and Filling Contents

Pick up the acarajé pieces — the fried fritter body is firm and crumbles somewhat, but the main mass can be lifted cleanly. Scoop the vatapá paste filling with a spoon — it is a thick, dense paste that can be scooped effectively. Remove any dried whole shrimp. Vacuum up scattered black-eyed pea fritter crumbs.

Step 2: Absorb Dendê Palm Oil and Complex Fat Layers — Four Rounds

Acarajé has three distinct fat layers: the dendê frying oil (which saturates the entire fritter surface and interior during deep-frying), the peanut paste fat in the vatapá (approximately 50% fat by peanut weight), and the coconut milk fat in the vatapá. These combined fat sources make acarajé one of the highest total fat deposits among food spills. Apply cornflour generously and allow 20 minutes. Vacuum. Four rounds are appropriate — do not reduce this number before wet treatment.

Acarajé has three simultaneous high-fat sources: dendê frying oil, peanut paste fat, and coconut milk fat. This is the highest combined fat load of any dish in this guide series. Completing all four cornflour rounds before any water is introduced is essential — otherwise the emulsified fat penetrates the carpet backing permanently.

Step 3: Treat Bean, Shrimp, and Peanut Protein with Enzyme Cleaner

Apply cold water and blot. Apply enzyme carpet cleaner and allow 25 minutes — the extended dwell addresses the combined black-eyed pea legume protein (vignin and phaseolin), shrimp protein (dried shrimp is a concentrated protein), and peanut storage protein simultaneously. Blot from outside inward. Rinse with cold water. Apply dish soap solution (one teaspoon in 250ml cold water) in two rounds to address the multi-layer fat emulsion. Blot and rinse between rounds.

Step 4: Remove Dendê Carotenoid Pigment with Hydrogen Peroxide

Dendê palm oil carotenoid is the most challenging component of an acarajé spill — it is present at extremely high concentration in both the frying oil that saturates the fritter and the vatapá filling, which also uses dendê. Apply 3% hydrogen peroxide to the orange-red stained area and allow 15 minutes. Blot and rinse. Allow to dry between rounds. Three hydrogen peroxide rounds are the starting expectation for acarajé on light carpet — the combined fry-oil and vatapá dendê pigment load is very high.

Step 5: Neutralise Dried Shrimp Odour

Dried shrimp (camarão seco) has a very intense, concentrated seafood salt-cure odour — far more pungent than fresh shrimp because the drying and salting process concentrates the trimethylamine and amine compounds. Apply a generous mist of equal parts white vinegar and water over the treated area and allow to dry. Apply baking soda overnight (at least eight hours — longer is better for dried shrimp). Vacuum. A second overnight baking soda application is strongly recommended for acarajé with a generous dried shrimp quantity.

The acarajé was served with abará — a similar black-eyed pea paste dish, but abará is steamed in banana leaf rather than deep-fried. Abará is white rather than orange-red, and has no dendê surface coating. Some abará also fell on the carpet. Does abará require the same treatment as acarajé?

Abará is black-eyed pea paste steamed in banana leaf with dendê and dried shrimp mixed into the paste — rather than the fritter being dipped into dendê as a frying medium. The dendê is inside the paste rather than coating the outside, so abará has a lower surface oil contact than acarajé. It also lacks the deep-fry oil saturation of the fritter body. For abará that fell alongside acarajé: treat the abará contact zone with two cornflour rounds (rather than four for the acarajé zone) — the fat load from within the paste is lower than the frying oil-saturated fritter. The hydrogen peroxide treatment for dendê pigment is still needed for abará (the dendê inside the paste deposits carotenoid on the carpet), but one to two rounds rather than three. The dried shrimp odour treatment (vinegar mist, overnight baking soda) applies equally to abará.

The caruru (okra stew) filling from the acarajé also spilled on the carpet. Okra has a thick mucilaginous quality that makes it very sticky. How do I treat okra from the caruru alongside the dendê and vatapá?

Caruru includes okra (quiabo) — and cooked okra produces a viscous mucilage (from the okra pectin and polysaccharide content) that creates a sticky, gel-like residue on carpet. The okra mucilage is different from the other fat and protein components in the spill: it does not respond to cornflour (it is not a fat) and it does not respond well to enzyme cleaner alone. The okra mucilage is a polysaccharide gel — it responds to white vinegar (acetic acid breaks down the pectin polysaccharide). After the cornflour and enzyme steps for the overall acarajé spill, apply a targeted white vinegar-water solution (equal parts) to the specific caruru-heavy zones where okra mucilage is visible as a shiny, sticky residue. Allow 10 minutes and blot. Rinse with cold water. The okra mucilage zone also benefits from an enzyme amylase application — amylase in enzyme cleaners partially degrades the okra polysaccharide alongside the starch components.

We had acarajé at a large Bahian festival and the fritter was very freshly fried — the dendê oil was still smoking and the fritter was almost too hot to hold. It dropped onto a light beige carpet almost immediately after being removed from the frying pot. How does freshly-fried extremely hot acarajé differ from cooled acarajé?

A freshly-fried, still-smoking acarajé has dendê palm oil at near-frying temperature (dendê fries at approximately 170–180°C). At this temperature, the dendê oil is a very thin, mobile liquid — it penetrates carpet fibres to the backing almost instantaneously on contact. This is the worst-case dendê spill scenario. Act on the cornflour step immediately — apply cornflour to the spill within the first 30 seconds if possible. The hot oil will have already penetrated before you can fully react, but the first cornflour application draws up the oil that has not yet reached the backing. For a still-smoking acarajé drop: apply five cornflour rounds rather than four; the fry-oil penetration depth is significantly greater from the hot drop. Three to four hydrogen peroxide rounds rather than three are likely needed for the deep carotenoid penetration. A hot dendê spill on beige carpet is a very strong candidate for professional hot-water extraction regardless of how well home treatment goes — the penetration depth at frying temperature makes full removal from backing fibres exceptionally difficult at home.
