What Happens When Arancini Drop on Carpet

Step 1: Remove Filling Contents and Vacuum Breadcrumbs
Scoop the cracked arancino and any filling contents off the carpet surface. Then vacuum the impact area before applying any liquid. The fried breadcrumb shell shatters on impact and fragments spread across the surrounding area. Vacuuming removes these dry breadcrumb fragments before liquid causes them to swell into a starchy paste. Any filling that has spilled (ragù, mozzarella, pea mixture) should be scooped before vacuuming.
Step 2: Absorb Deep-Fry Oil with Cornflour
Arancini are deep-fried in sunflower or olive oil — the breadcrumb shell absorbs a significant quantity of oil during frying. Apply cornflour over the full stained area and allow 25 minutes. Vacuum. Two rounds are appropriate for arancini given the high oil absorption of the fried coating. The saffron risotto interior also contains butter from the risotto preparation — include this in the fat absorption step.
Step 3: Treat Rice Starch and Filling Protein with Cold Water and Enzyme Cleaner
Cooked risotto rice releases starch readily. Any ragù filling provides meat protein. Mozzarella provides casein dairy protein. Apply cold water and blot to dilute. Apply enzyme carpet cleaner and allow 20 minutes — the amylase addresses the rice starch and breadcrumb starch; the protease addresses the ragù meat protein and mozzarella casein. Blot from outside inward. Rinse with cold water.
Step 4: Remove Saffron, Tomato, and Ragù Pigment with Hydrogen Peroxide
Arancini typically have three colour sources: saffron (if the risotto was coloured — yellow crocetin pigment), tomato sauce (orange-red lycopene), and ragù (dark meat sauce colour). Apply 3% hydrogen peroxide to any remaining coloured area and allow 10 minutes. Blot and rinse. Saffron may require two to three rounds; tomato and ragù one to two rounds. The saffron pigment is usually the last to clear.
Step 5: Address Mozzarella Fat
If the arancino had a mozzarella filling, the molten mozzarella will have flowed out on impact. Mozzarella is approximately 22% fat (lower than most cheeses). The cornflour step absorbs most of this fat. If the carpet still feels slightly oily or tacky after the enzyme step, apply dish soap solution (one teaspoon in 250ml cold water) to lift the residual mozzarella fat. Apply baking soda if a faint dairy odour is present. Rinse and blot dry.
