Step 7 — Baking Soda Dry Finish

After all liquid treatment steps, apply dry baking soda across the full treated area. Leave for 20 to 30 minutes to absorb residual moisture and salt. Bibingka stains benefit from a slightly longer dry treatment than puto because of the salt component from the salted egg brine and the fresh cheese whey. Vacuum and allow full ventilation drying.

Fresh Kesong Puti Spreads More Than Aged Cheese
