Bicol Express Carpet Stain: Coconut Milk Fat, Abundant Capsanthin, and Bagoong TMA

Bicol Express is the signature dish of the Bicol region of the Philippines — pork belly (liempo) or other pork cuts cooked in coconut milk (gata) with a generous quantity of bird's eye chilli (siling labuyo) and bagoong alamang (fermented shrimp paste). The defining characteristic of authentic Bicol Express is heat: it is among the spiciest Filipino dishes, using significantly more chilli per volume than most other Filipino coconut milk stews. The coconut milk is fully incorporated (not coconut cream on top) and the sauce reduces to a rich, red-orange, creamy consistency.

Treatment Sequence

  1. Remove pork pieces from the carpet with a spoon. Blot the sauce from the outside edge inward — Bicol Express sauce is thick and does not spread as rapidly as thin soups.
  2. Apply baking soda paste (1.5 tablespoons baking soda + 1 teaspoon cold water). Leave 20–22 minutes. The combined pork belly + coconut milk fat load justifies the extended dwell.   3. Rinse baking soda with cold water. Blot dry.
  4. Apply enzyme cleaner (lipase for coconut MCT fat and pork long-chain fat; protease for pork protein and shrimp protein from bagoong). Leave 18–20 minutes.
  5. Rinse with cold water. Blot dry.
  6. Apply white vinegar solution (1 part vinegar, 4 parts cold water). Leave 8 minutes for bagoong alamang TMA. Blot dry.
  7. Apply 3% hydrogen peroxide. Leave 10 minutes. Blot. Round 1 partially oxidises the capsanthin. For the high chilli volume in Bicol Express, a single round rarely fully removes the red-orange capsanthin on synthetic carpet — allow the carpet to fully dry before assessing.
  8. Apply a second H2O2 round after the carpet has fully dried. Leave 10 minutes. Blot. Rinse with cold water. The second round addresses residual capsanthin from the high chilli concentration.
  9. Rinse with cold water. Blot dry. Air-dry with ventilation.

Ginataang gulay uses coconut milk with vegetables (and sometimes shrimp or small fish) rather than pork belly with high chilli. The fat treatment (baking soda + lipase for coconut MCT) is the same. Reduce the baking soda to 14–16 minutes (no pork belly fat). The capsanthin H2O2 rounds depend on how much chilli was used — ginataang gulay often has less chilli than Bicol Express, so 1 round may be sufficient.
