Binagoongang baboy presents four simultaneous challenges: the bagoong fermented shrimp paste contains biogenic amines more concentrated and persistent than plain fish sauce, a pink-red astaxanthin pigment from the shrimp, and a very high sodium chloride content. The salt causes the stain to be hygroscopic — it draws ambient moisture into itself, which can expand the stain footprint if not addressed. Step 1 — Remove Solids and Absorb Immediately

Remove pork pieces, tomato fragments, and any eggplant by hand. The bagoong paste itself is a thick, sticky semi-solid — use a spoon or card to scoop up as much as possible without pressing it into the pile. Do not wipe — the paste spreads rapidly when smeared. Blot the liquid oil component with paper towels from the outer edge inward.

The Salt in Bagoong Is Hygroscopic — Act Quickly and Do Not Leave Dry

Bagoong alamang contains a very high sodium chloride concentration from its fermentation brine. Salt is hygroscopic — it pulls moisture from the air. If a bagoong stain is left partially treated or incompletely dried in a humid environment, the salt residue will draw ambient moisture and the stain will appear to spread or "re-wet" itself. Complete the full treatment sequence and ensure the carpet is thoroughly dried before declaring the stain resolved. Do not apply baking soda and leave it overnight in a humid room — the salt-baking soda mixture can absorb moisture and reactivate the stain.

Step 2 — Cold Water Rinse to Dilute Brine and Biogenic Amines

Apply cold water generously to the full stain area. Cold water dilutes the concentrated salt brine, flushes the biogenic amine compounds (TMA, putrescine, cadaverine), and begins to loosen the astaxanthin pigment from the fibres. Blot out thoroughly. The purpose here is volume dilution of the brine concentration — apply more water than you would for a standard stain.

Step 3 — Baking Soda Paste for Pork Fat and Biogenic Amine Neutralisation

Apply baking soda paste to the stain area. Baking soda serves two functions here: it absorbs the rendered pork belly fat, and as an alkaline compound it begins to neutralise the acidic biogenic amines (putrescine and cadaverine are diamine compounds — they respond to alkaline treatment). Leave for 20 to 25 minutes. Vacuum, but do not proceed with baking soda dry finish until after the full treatment sequence, to avoid moisture-reactivation from the salt residue.

Step 4 — Dish Soap for Pork Belly Fat

Apply diluted dish soap to the pork fat and paste residue zone. Dish soap emulsifies the rendered pork belly fat and the lipid fraction of the bagoong paste. Allow two to three minutes, blot and rinse cold.

Step 5 — Protease Enzyme for Shrimp and Pork Protein

Apply protease enzyme cleaner to the full stain area using cold water dilution. This addresses the fermented shrimp protein compounds in the bagoong (breaking down the amino acid chains contributing to biogenic amine odour), the pork belly protein, and any tomato protein residue. Extended dwell — 15 minutes — given the high concentration of fermented protein compounds in bagoong versus plain fish sauce. Blot out and rinse cold.

Step 6 — Hydrogen Peroxide for Pink-Red Astaxanthin and Tomato Lycopene

Apply 3% hydrogen peroxide to the stained area. The pink-red astaxanthin pigment from the fermented shrimp is the primary chromophore in binagoongang baboy and requires H2O2 treatment. Tomato lycopene (if present) also responds to H2O2. Allow 8 to 10 minutes dwell. Blot and rinse cold. Bagoong astaxanthin staining may require two passes of H2O2 — the pigment concentration in fermented shrimp paste is significantly higher than in fresh shrimp. Repeat with a second pass if pink tinting remains after the first application dries.

Step 7 — Extended Baking Soda Dry Finish (After Thorough Drying)

After all liquid treatment steps, ensure the carpet is well-ventilated and as dry as possible before applying the final baking soda dry finish. This is the key difference from most stains — the salt residue means you must dry first, then apply baking soda, rather than applying baking soda to a damp surface. Once the carpet is dry, apply generous baking soda, leave for two to three hours, and vacuum. The bagoong biogenic amines are the most persistent odour compounds in common Filipino home cooking — a second enzyme pass the following day may be needed if any fermented paste odour remains.

What makes bagoong smell so much worse than fish sauce on carpet?

Fish sauce (patis) is primarily TMA — trimethylamine from fermented fish protein. Bagoong alamang contains TMA plus a broader spectrum of biogenic amines produced during the longer, higher-protein fermentation of whole shrimp: putrescine, cadaverine, and histamine. These additional diamines have a more complex, penetrating odour than TMA alone and are less volatile — they stay in the carpet backing longer. The high salt content also preserves the amine compounds, slowing their natural breakdown. This is why bagoong requires extended enzyme treatment and multiple baking soda cycles rather than the single-cycle approach that clears patis odour.

The stain looks pink after cleaning. Is that the astaxanthin?

Yes. Astaxanthin is a carotenoid pigment naturally present in shrimp — it is the compound that makes shrimp pink. In fermented shrimp paste it is concentrated and becomes more stable through the fermentation process. A pink tint remaining after the enzyme and dish soap steps is astaxanthin that has not yet responded to H2O2. Apply a second 3% H2O2 pass, allow 10 minutes, and rinse. On pale or cream carpet the pink tint may need three passes. On dark carpet it may be invisible but the odour treatment remains the priority.

Should I use vinegar to neutralise the bagoong smell?

No. Vinegar (acetic acid) is sometimes suggested as a deodoriser for amine-based odours, and it does partially neutralise TMA through acid-base chemistry. However, for bagoong the acetic acid residue adds its own odour, can partially fix the fermented shrimp protein, and does not address the non-TMA biogenic amines (putrescine, cadaverine) as effectively as enzyme treatment followed by baking soda. Baking soda (alkaline) is counterintuitively the better odour neutraliser for the full biogenic amine spectrum — it does not add a secondary odour.

Is eggplant in binagoongan a significant stain factor?

Minor. Eggplant skin contains anthocyanins — the purple-blue pigment class — but the concentration is low in cooked eggplant because anthocyanins are pH-sensitive and partially break down under heat. Any eggplant anthocyanin contribution to the stain typically clears in the H2O2 step applied for the astaxanthin. The eggplant flesh itself is primarily water and does not add a significant stain component.
