Why Bulalo Has a Unique Gelatin Problem

Act While the Broth Is Still Warm — Gelatin Sets Firm Below 35°C
Bulalo broth gelatin is water-soluble and easily absorbed when warm, but sets to a sticky semi-solid as it cools. If you reach the spill while it is still steaming, you can blot most of the gelatin out with paper towels. If the broth has already cooled and gelled on the carpet, do not blot dry — apply warm water first to re-liquefy the gelatin before attempting blot-up. Unlike egg, there is no heat-setting risk with collagen gelatin — warm water is the correct first step on a cooled bulalo spill.
Step 1 — Absorb Warm Broth Immediately (or Re-liquefy if Already Set)
If the broth is still warm: cover the full spill area with paper towels and press firmly. Lift and replace towels until no more liquid is absorbed. Remove the bone and any marrow pieces. If the broth has already cooled and gelled: apply warm water to the gelled area, wait two minutes for the gelatin to re-liquefy, then blot. The gelatin will behave like liquid broth again once warmed above its setting point.
Step 2 — Warm Water Rinse for Gelatin Flush
Apply warm water to the full broth zone — not hot, but warm enough to keep the gelatin liquid (above body temperature is sufficient). This flushes the dissolved collagen gelatin and dilutes the beef protein and fat. Blot out thoroughly. Repeat once.
Step 3 — Baking Soda Paste for Bone Marrow Fat
Apply baking soda paste generously to the bone marrow landing zone — the area directly below where the bone sat in the bowl. Bone marrow is the most lipid-dense common food fat encountered in home spill scenarios; it requires a heavy baking soda application and a full 25 to 30 minute dwell to draw out the saturated fat. The shank meat fat zone also benefits from baking soda. Vacuum thoroughly.
Step 4 — Protease Enzyme Cleaner
Apply protease enzyme cleaner to the full spread area with warm water dilution (warm, not hot — no risk of protein setting with these beef proteins at warm temperature). Apply diluted dish soap to the marrow fat zone and shank meat area. Dish soap emulsifies the saturated beef marrow fat and rendered shank fat. The marrow fat may require two rounds of dish soap application if the baking soda step left visible grease. Allow two to three minutes, blot and rinse warm.
Step 6 — Hydrogen Peroxide for Broth Discolouration
Bulalo broth has a moderate amber-brown colour from the collagen and beef protein breakdown products — darker than chicken soup but lighter than soy-based broth. Apply 3% hydrogen peroxide to the stained area if a visible brown-amber tint remains after the enzyme step. Allow 8 to 10 minutes, blot and rinse. One to two passes is usually sufficient.
Step 7 — Baking Soda Dry Finish
Apply dry baking soda across the full treated area after all liquid steps. Leave for 20 to 30 minutes. This absorbs residual marrow fat not captured in steps 3 and 5, and addresses any minor fish sauce odour from patis seasoning. Vacuum and allow full ventilation drying.
