Argentine asado is one of the world's great grilling traditions — an open fire or wood-burning grill (parrilla or asador) over which various cuts of beef and offal are slowly cooked: asado de tira (short ribs with bone), vacío (flank or skirt steak), tira de costilla (strip ribs), alongside chorizo (pork sausage seasoned with paprika and garlic), morcilla (blood sausage with pork blood, lard, onion, and spices), and mollejas (grilled sweetbreads — veal or beef thymus gland). Chimichurri — the sauce inseparable from asado — is an uncooked, very green, herby condiment made from finely chopped fresh parsley, dried oregano, garlic, red chilli flakes, red wine vinegar, and olive oil. A full asado plate spill brings together: rendered beef fat from multiple cuts, dark char from the grill (caramelised Maillard compounds), blood sausage blood pigment, pork fat from chorizo, and the vivid green chimichurri with its chlorophyll, olive oil, and red wine vinegar components.

Beef Fat and Grill Char: The Dominant Components

Argentine asado is cooked low and slow over wood coals, which renders a large volume of beef fat from the fatty cuts (short ribs and flank are both very fatty). The rendered beef fat (tallow) is the dominant stain component — apply dry cornflour or baking soda immediately across the full contact zone and repeat twice. Chimichurri: Green Chlorophyll and Red Wine Vinegar

Chimichurri is the signature sauce of Argentine asado — a generous amount is typically spooned over the meat or provided as a separate bowl for dipping. Its vivid green colour comes from the fresh flat-leaf parsley, which is very high in chlorophyll. Chlorophyll on light carpet creates a noticeable green stain — blot chimichurri immediately, as the olive oil in the sauce spreads the chlorophyll-bearing plant matter across a wider carpet area as it flows. After the fat absorbent step (for the olive oil) and enzyme step, apply 3% hydrogen peroxide for 15–20 minutes on light carpet for the parsley chlorophyll. Red wine vinegar in chimichurri is acidic (pH approximately 2.5–3) and provides a mild organic acid component; it does not stain but helps with the rinsing process. Dried red chilli flakes contribute a small amount of capsanthin carotenoid (red-orange) that is also addressed by the hydrogen peroxide step.

Wood Smoke Aroma from Asado
