What Carbonada Criolla Leaves on Carpet

Carbonada criolla is one of Argentina's most distinctive traditional dishes — a sweet-savoury stew that reflects the Spanish colonial and indigenous culinary heritage of the Río de la Plata region. The stew combines cubed beef (typically brisket or chuck), large pieces of zapallo criollo pumpkin (a criollo squash variety with deep orange flesh and a high beta-carotene content), sweet potato (batata), pieces of fresh corn on the cob, peach halves (duraznos — fresh or canned), pear pieces, white potato, and tomato in a sofrito base of onion, garlic, red bell pepper, and cumin. White wine and herbs are added during braising. The dish is sometimes served inside a whole hollowed-out pumpkin shell baked in the oven, which is brought to the table. On carpet, carbonada criolla creates a stain dominated by: the very vivid orange colour of the zapallo pumpkin and sweet potato (both extremely high in beta-carotene carotenoid pigments — among the deepest orange food stains from vegetables); the tomato sofrito lycopene (red-orange); and the peach and pear fruit juices. The beef fat and sofrito cooking oil are the primary fat components. The cumin-and-sofrito aroma is one of the more persistent aromatic profiles in Argentine cooking.

  • Enzyme carpet cleaner (protease enzyme)
  • Dish soap (one teaspoon per 250ml cold water)
  • Hydrogen peroxide 3% (one to two rounds for pumpkin and sweet potato beta-carotene)
  • Baking soda (overnight for cumin and sofrito aroma)

Step 1: Remove Beef, Pumpkin, Sweet Potato, Corn, Peach, and Pear

Collect beef cubes with a spoon — the beef will be coated in the orange pumpkin-tomato broth and will transfer this orange-red colour to carpet on contact. Collect pumpkin pieces carefully — zapallo criollo pumpkin has very orange flesh that will break and smear under pressure. Do not press pumpkin into the carpet while removing it; scoop from beneath. Collect sweet potato pieces similarly. Collect corn pieces. Collect peach and pear pieces — these fruit pieces are soft and have high sugar content (from natural fruit sugars, especially in ripe peach); they can bond to carpet fibres if left to dry.

Step 2: Blot the Orange-Red Pumpkin and Sofrito Broth

Blot the vivid orange stew broth from the outer edge inward. The carbonada criolla broth is an intensely coloured orange-red liquid from the dissolved pumpkin and sweet potato beta-carotene combined with the tomato sofrito lycopene — the combined colour is a deep, vibrant orange-red. Apply cold water and blot twice more. The peach and pear juice adds a slight fruit-sugar note that makes the broth slightly sticky as it dries — blot promptly.

Step 3: Apply Cornflour for Beef Fat and Sofrito Oil

The sofrito base (onion, garlic, bell pepper, and tomato sautéed in vegetable oil) provides cooking oil to the stew broth. The beef (brisket or chuck) contributes beef fat rendered during braising. Apply cornflour, allow 20 minutes, and vacuum. One round is typically sufficient if the sofrito was modestly oiled and the beef is a lean cut; apply a second round if the beef was a fattier cut or the sofrito was generously oiled. The pumpkin and sweet potato themselves contain very little fat (less than 0.5% fat for both), so the fat load is primarily from the sofrito and meat.

Step 4: Apply Enzyme Cleaner for Beef Protein and Pumpkin Starch

Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. Beef protein responds to protease enzyme. Pumpkin and sweet potato contain starch that responds to amylase. Corn starch from any corn kernel pieces also responds to amylase. Peach and pear pieces contain pectin (a cell-wall polysaccharide) that is addressed by pectinase activity in broader-spectrum enzyme cleaners. Follow with dish soap to emulsify remaining sofrito oil and beef fat. Blot and rinse.

Step 5: Treat the Pumpkin and Sweet Potato Orange Colour (One to Two Rounds)

The orange pumpkin and sweet potato beta-carotene is the primary colour challenge of carbonada criolla. Zapallo criollo pumpkin has exceptionally deep orange flesh — beta-carotene is an oil-soluble carotenoid pigment that, once the carrier fat is removed by cornflour, responds to hydrogen peroxide. Apply hydrogen peroxide 3%, allow 10 minutes, blot and rinse. Allow to dry fully. If an orange mark remains on pale carpet (common when large quantities of pumpkin were in the spill), apply a second round. The tomato sofrito lycopene (red) and peach beta-cryptoxanthin (another carotenoid) are addressed in the same peroxide step. One round is typically sufficient for a moderate carbonada serving; two rounds for a large spill or a dish made with very deeply orange-fleshed pumpkin.

Step 6: Treat the Cumin and Sofrito Aroma Overnight

Apply baking soda over the fully dried area and allow overnight. Carbonada criolla's aromatic profile is dominated by cumin (a key spice in Argentine sofrito) and the long-cooked onion, garlic, and bell pepper sofrito base. Cumin volatile compounds (cuminaldehyde and terpene derivatives) are among the most persistent cooking spice aromas on carpet fibres. The peach and pear fruit aromas are highly volatile and dissipate within hours — they are not a persistent carpet concern. One overnight baking soda application is generally sufficient for carbonada criolla aroma.

The practical challenge is that soft baked pumpkin flesh can be ground into carpet pile more easily than firmer braised pumpkin chunks — scoop very gently with a spoon, lifting from beneath rather than pressing. The rest of the treatment is identical to standard carbonada criolla.

The carbonada used canned peaches in syrup (duraznos en almíbar) rather than fresh peaches — canned peaches in heavy syrup are a common ingredient in Argentine carbonada criollo and provide more sweetness than fresh peach. Canned peaches in heavy syrup (duraznos en almíbar) differ from fresh peaches in that the syrup is a concentrated sucrose solution (approximately 30–40% sugar by weight) that is absorbed into and coats the peach slices. When the syrup is also added to the carbonada, the stew broth becomes noticeably sweeter and slightly thicker from the dissolved sugar. On carpet, the additional sucrose from the heavy syrup creates a slightly more adhesive stain — sucrose in solution can partially recrystallise as the spill dries, creating a slightly sticky surface in the dried stain zone. Treatment adjustment: if the stain has been allowed to partially dry, apply a brief warm-water step (30 seconds) before blotting to re-dissolve the crystallised sugar — this prevents the sticky sugar residue from acting as a trap for dirt. The enzyme step addresses the dissolved sugar (invertase in broader-spectrum enzyme cleaners; alternatively, sucrose dissolves completely with warm water). The peroxide step is unchanged — the peach colouring (beta-cryptoxanthin carotenoid) is present in canned peaches in reduced concentration compared to fresh, so the pumpkin and sweet potato beta-carotene remain the primary colour drivers.

The Malbec anthocyanin combined with the pumpkin beta-carotene creates a complex orange-red-purple stain. (2) Grape must (fresh or partially fermented grape juice) is very high in anthocyanin and tannins — more intensely coloured than finished wine. (3) Dried apricot (orejones) are apricot halves that have been sun-dried, concentrating the beta-cryptoxanthin and other carotenoid pigments into a very dense, sticky, dark-orange piece. On carpet, dried apricot can leave a concentrated orange-brown sticky stain from both the concentrated carotenoid and the residual sulphur dioxide used as a preservative in commercial dried apricots. Treatment adjustment: begin peroxide with two rounds as the baseline for the Malbec-and-must version (the Malbec anthocyanin layer plus the pumpkin beta-carotene together require more peroxide than standard carbonada). For the dried apricot zone specifically: apply warm water (30 seconds) before the enzyme step to soften and re-hydrate the dried apricot sticky residue before the enzyme cleaner is applied.
