What Piti Leaves on Carpet

Piti (پیتی) is one of the most distinctive and beloved traditional dishes of Azerbaijani cuisine — a lamb stew slow-cooked in individual sealed clay pots, with each diner receiving their own personal clay pot at the table. The preparation and serving ritual is integral to the experience: the small clay pots are filled with the raw ingredients — pieces of lamb on the bone (typically neck and shoulder), soaked chickpeas, sliced onion, pieces of kurdyuk (the fat-tail sheep fat from the large breed of fat-tailed sheep native to the Caucasus and Central Asia), saffron strands or saffron water, sour göyəm plum (a small tart Caucasian wild plum) or dried plums/prunes, salt, and sometimes chestnuts in the Sheki region variant — and sealed before slow cooking in a special oven for several hours. At the table, the diner breaks open or removes the clay pot lid, and often follows a traditional eating sequence: the broth is poured out first and drunk with torn bread, and then the solid components (meat, chickpeas, kurdyuk) are consumed with the remaining bread. Piti's distinctive yellow-golden colour comes from the saffron staining the rich chickpea and lamb broth. The kurdyuk fat (from the fat tail of the Karakul or Azerbaijan fat-tailed sheep) is a key flavour component — it is rendered during the slow cooking and enriches the broth with a specific type of sheep tallow that has a higher melting point and a more distinctive aroma than ordinary lamb fat. When piti spills on carpet, the combination of saffron colour and kurdyuk fat creates the most challenging treatment requirements.

  • Dish soap (one teaspoon per 250ml cold water)
  • Hydrogen peroxide 3% (one to two rounds for saffron and dried plum colour)
  • Baking soda (overnight for fat-tail tallow aroma)

Step 1: Remove Lamb, Chickpeas and Kurdyuk

Collect lamb pieces carefully with a spoon — piti lamb is bone-in, so check the carpet for bone fragments. Collect chickpeas — they roll readily across carpet pile and should all be located before liquid treatment. Collect any visible kurdyuk (fat-tail fat) pieces — they appear as small white or cream-coloured pieces with a waxy surface. Collect dried plum or prune pieces. The piti broth is a vivid golden-yellow from the saffron and spreads from the broken clay pot or from the bowl when served.

Step 2: Blot Saffron Broth and Kurdyuk Fat

Blot from the outer edge inward. The saffron broth is vivid golden-yellow and transfers immediately to the blotting cloth. The kurdyuk fat — rendered during the slow cooking and now dissolved in the hot broth — has a high melting point and solidifies quickly as the broth cools on carpet. Act quickly while the broth is still warm. Apply cold water and blot twice more.

Step 3: Apply Cornflour for Kurdyuk Fat

Apply cornflour, allow 20 minutes, vacuum. Kurdyuk (fat-tail sheep fat) is notably different from ordinary lamb fat — it is denser, more waxy, and has a higher melting point (approximately 45–55°C) from its higher stearic and palmitic acid content. One cornflour round may not fully address a heavy kurdyuk spill; if the carpet shows a persistent greasy zone after vacuuming, apply a second cornflour round before proceeding. The chickpeas in piti also have a small fat content (from their natural oil), which the cornflour round addresses alongside the kurdyuk.

Step 4: Apply Enzyme Cleaner for Chickpea Starch and Lamb Protein

Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. Chickpeas are the dominant starch source in piti — they contain approximately 27% starch and 19% protein, both addressed by amylase and protease enzyme respectively. Lamb muscle protein (protease) and the extensive collagen gelatin from the long slow cooking of bone-in lamb (also protease) are addressed. If chestnuts are present (Sheki-region variant), chestnut starch is also addressed by amylase. Follow with dish soap and rinse.

Step 5: Treat Saffron and Dried Plum Colour

Apply hydrogen peroxide 3%, allow 10 minutes, blot and rinse. Saffron colour in piti comes from crocetin and crocin (water-soluble apocarotenoid pigments) — both are relatively amenable to peroxide oxidation, unlike turmeric curcumin. One peroxide round typically addresses saffron colour adequately. For a heavily saffron-coloured piti broth (generous saffron use), a second round may be needed. Dried plum or prune anthocyanins (dark purple-red compounds) are also addressed by hydrogen peroxide. If göyəm (Caucasian wild plum) was used fresh, its anthocyanin is more concentrated — plan for two peroxide rounds.

Step 6: Treat Fat-Tail Tallow Aroma

Apply baking soda over the fully dried area and allow overnight. Kurdyuk fat-tail sheep fat has a distinctive aroma from its fatty acid composition and from the presence of branched-chain fatty acids characteristic of fat-tailed sheep breeds. The aroma is described as richer and more intense than regular lamb fat — a pronounced tallow note. One overnight baking soda application is usually sufficient for piti, as the saffron itself has very little aroma impact on carpet (saffron's picrocrocin and safranal volatile compounds are present in very small quantities). If kurdyuk contact was significant, a second application may be needed.

Sheki-style piti with chestnuts adds the following to the carpet stain treatment: (1) Chestnut starch — chestnuts are an unusually high-starch nut (approximately 45% starch by weight — far more starch than other nuts, which are primarily fat-based). Cooked chestnut pieces in the piti release chestnut starch into the broth during the long clay pot cooking. Amylase enzyme addresses chestnut starch alongside the chickpea starch. Chestnut starch creates a slightly thicker, more viscous broth than a chickpea-only piti. (2) Chestnut colour — chestnuts have a brown outer skin (pellicle) that releases brown tannin compounds into the broth during cooking. The broth from a chestnut piti has a slightly darker, more amber-brown colour than a chickpea-only piti. The peroxide step addresses these tannin compounds alongside the saffron colour. (3) Chestnut protein — chestnuts also contain protein (approximately 4% by weight), addressed by the protease step. (4) Chestnut texture on carpet — cooked chestnut pieces are soft and paste-like and smear readily on carpet contact. Collect all chestnut fragments with a spoon before applying any liquid treatment to prevent the chestnut paste from spreading further.

The piti clay pots were brought to the table still in the oven-hot clay pots and the clay pot cracked and broke at the table, releasing the very hot contents (near boiling temperature) directly onto the carpet in a compact zone. Does boiling-temperature piti stain or damage carpet differently?

A cracked clay pot releasing near-boiling piti onto carpet creates the following specific considerations beyond the standard treatment: (1) Heat damage to carpet fibres — boiling-point liquid (close to 100°C) will cause immediate heat distortion in synthetic carpet fibres (nylon, polyester, polypropylene). Nylon fibres begin to distort above approximately 50°C. Look for a zone of matted or melted-looking fibres at the direct impact point — this is heat damage, not a stain, and cannot be fully reversed by cleaning. After cleaning and drying, use a handheld clothes steamer to raise the pile temperature carefully and lift the fibres with a stiff brush while still warm. (2) Deeply penetrating fat — near-boiling kurdyuk fat has extremely low viscosity and penetrates carpet pile, backing, and underlay extremely rapidly before it cools and solidifies. Act immediately on the fat step — the window to absorb the fat with cornflour while it is still fluid is very narrow for a near-boiling spill. If you apply cornflour within the first few minutes of the spill, the fat can still be absorbed before it sets into the carpet backing. (3) The saffron stain and protein treatments are otherwise unchanged — the temperature affects penetration speed but not the cleaning chemistry.

The piti was served at an Azerbaijani community event where the traditional piti eating sequence was followed — the broth was first poured into a separate bowl to be drunk, and then the bowl with broth was also accidentally knocked, creating two separate stain zones: one from the clay pot contents (meat, chickpeas, kurdyuk) falling directly on carpet, and one from the broth bowl being knocked and spilling a separate broth-only zone. How are the two separate stain zones treated?

Two separate piti stain zones (solid contents zone and broth-only zone) should be treated as follows: (1) The solid contents zone (lamb pieces, chickpeas, kurdyuk, dried plum) — this is the primary stain zone with the full range of fat, protein, starch, and colour components. Treat with the full sequence: cornflour, enzyme, dish soap, peroxide, baking soda. (2) The broth-only zone — the broth that was poured into the bowl before serving has already separated the bulk of the solid kurdyuk fat pieces (which remain in the clay pot). The broth in the bowl still contains dissolved saffron colour, dissolved fat from the broth, dissolved protein (gelatin from the bone-in lamb braising), and some chickpea starch and plum anthocyanin from the soaking liquid. The broth zone stain is therefore: lower fat load (no solid kurdyuk pieces, but dissolved fat is still present — one cornflour round still appropriate); similar saffron colour intensity; similar gelatin protein load; potentially less total colour than the solid-contents zone. Treat both zones independently but simultaneously where possible. Start both cornflour applications at the same time. If the broth zone is much larger in area than the solid-contents zone (which is common when a bowl of liquid overturns), allocate more cornflour coverage to the broth zone.
