Moqueca baiana (Brazilian Bahian fish stew) is one of the signature dishes of Bahian cuisine — a fragrant, richly coloured stew of fresh fish or seafood (commonly snapper, sea bass, shrimp, or a combination) simmered with dendê palm oil, coconut milk, fresh tomato, red and green pepper, onion, garlic, and cilantro. The dish takes its vivid orange-red colour from dendê palm oil, which is pressed from the fruit of the oil palm and is among the most carotenoid-rich cooking oils in the world — the same deep orange colour source found in acarajé. Moqueca Capixaba (the Espírito Santo coastal style) uses annatto (urucum) oil rather than dendê and omits coconut milk — a somewhat lighter colour challenge. On carpet, moqueca baiana creates a multi-component stain: dendê carotenoid colour (the main challenge — two to three peroxide rounds), combined dendê and coconut milk fat (two cornflour rounds), fish protein and seafood protein (enzyme), fish odour (overnight baking soda), and tomato-pepper colour (addressed within the same peroxide rounds as the dendê).

Step 1: Remove Fish, Seafood, and Vegetable Pieces

Collect fish pieces (which will be orange-coated from the dendê broth) with a spoon. Fish bones may be present — inspect the spill area for loose bones. Shrimp, if present, should be collected individually. Tomato pieces, pepper strips, and onion should be collected before blotting. Dendê-coated tomato and pepper pieces carry a significant colour load and will transfer orange-red pigment to any carpet zone they contact.

Step 2: Blot the Dendê Broth Immediately

Dendê palm oil carotenoids (alpha and beta-carotene, lycopene) begin bonding to carpet fibres immediately. Blot the vivid orange-red broth from the outer edge inward as quickly as possible. Apply cold water and blot again. Repeat three times. The dendê colour is very intense — even after blotting, the carpet will show an orange tint, but the repeated dilution cycles significantly reduce the pigment load.

Step 3: Apply Cornflour for Dendê and Coconut Milk Fat (Two Rounds)

Moqueca baiana has a high combined fat load: dendê palm oil (which is approximately 50% saturated fat) and coconut milk fat (which is approximately 90% saturated fat — primarily lauric acid). Both are solid or semi-solid at lower temperatures and respond well to cornflour absorption. Apply cornflour generously over the spill area, allow 20 minutes, and vacuum. Apply a second round and allow 20 minutes before vacuuming. Two rounds are the minimum. The cornflour step is particularly important for moqueca because the dendê carotenoid pigment is fat-soluble and carried in the oil phase — removing the fat carrier increases the effectiveness of the subsequent hydrogen peroxide treatment.

Step 4: Apply Enzyme Cleaner for Fish and Seafood Protein

Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. Fish protein and shrimp protein from the broth respond to protease enzyme. The coconut milk also contains casein-like proteins that are addressed in this step. Follow with dish soap solution to emulsify residual fat. Blot and rinse.

Step 5: Treat the Dendê and Pepper Colour (Two to Three Rounds)

Apply hydrogen peroxide 3% over the stained area and allow 10 minutes. Blot and rinse. Allow to dry fully. Dendê palm oil colour is one of the most persistent natural carotenoid stains — it requires two to three rounds on pale carpet. The tomato and red pepper colour in the moqueca is addressed within the same peroxide rounds as the dendê. Allow each round to dry fully before applying the next — applying peroxide to still-wet carpet from the previous round reduces effectiveness.

Step 6: Apply Baking Soda Overnight for Fish Odour

Fresh fish and shrimp in moqueca create seafood odour compounds (trimethylamine, amines) when the protein contacts carpet fibres. Apply baking soda over the fully dried stain area and allow overnight. The coconut milk also contributes a slight sweetness to the odour zone that dissipates with the baking soda treatment.

The moqueca was made with a whole fish (dourada — gilt-head bream) cut into large sections including the head and tail. The fish head was present in the pot and the head section was in the spill. Fish head includes brain, eye, and gills which have very different protein and fat compositions from fish muscle. Does fish head in the spill change the treatment?

Fish head sections — including the bream head with cheek meat, eye, gill, and brain tissue — are present in some moqueca presentations. Each of these tissues has a different composition from fish muscle fillet. Fish brain tissue is very high in fat (the brain is largely lipid — approximately 60% fat by dry weight); eye tissue contributes a concentrated small zone of fat and protein; gill tissue is very blood-rich. The blood from gill tissue (if present in the spill) adds haemoglobin protein to the stain — haemoglobin responds to enzyme cleaner, and cold water is important for haemoglobin removal (hot or warm water sets the haemoglobin into fibres). The brain tissue fat adds to the overall fat load — plan for two cornflour rounds regardless of oil usage when fish head is present in the spill. The enzyme step is more important with brain tissue — the lipid-rich neural protein is degraded by the enzyme more slowly than muscle protein. Allow the full 25-minute dwell when fish head contributed to the spill.

On carpet, manioc starch from pirão dries to a very firm, adhesive film that is harder to remove than the moqueca components alone. Treatment for pirão-plus-moqueca: the warm-water re-liquefaction step (as used for starch gel broths) is important for the pirão component — apply warm water to the pirão zone specifically to soften the manioc starch before blotting. The enzyme step is critical for pirão — amylase (if present in your enzyme cleaner) degrades manioc starch directly. The cornflour and peroxide rounds for the moqueca itself are unchanged — pirão does not add colour or fat, only starch.
