Gallo pinto (literally "spotted rooster" in Spanish — named for the black-and-white speckled plumage of the criollo spotted farmyard rooster, which resembles the visual pattern of black beans mixed through white rice) is the undisputed national dish of Costa Rica. Eaten at breakfast, lunch, and dinner throughout Costa Rica, gallo pinto is the everyday foundational dish of Costa Rican cuisine in the same way that rice and beans are foundational across Latin America, Asia, and Africa — and like all such dishes, it has a regional identity so strong that both Costa Rica and Nicaragua claim it as their national symbol (the two versions differ slightly, with Salsa Lizano being the uniquely Costa Rican signature ingredient). Costa Rican gallo pinto is made from two primary components: day-old cooked white rice (rice cooked the previous day and refrigerated overnight — the day-old drying is essential, as fresh-cooked moist rice would clump and steam rather than fry crisply) and cooked black beans with their cooking liquid. The preparation begins by sautéing diced onion and sweet bell pepper in pork fat (manteca de cerdo, the traditional fat) or vegetable oil. The day-old rice is then added to the hot pan and fried until some grains develop "pegado" — the crispy, slightly charred bottom crust that is prized in gallo pinto. The cooked black beans are added next, along with a generous pour of the black bean cooking liquid (the dark, deeply pigmented liquid from cooking the black beans, which is considered essential — it is what gives gallo pinto its colour and depth of flavour). Black Bean Cooking Liquid: An Intensely Concentrated Anthocyanin Stain

Black beans (Phaseolus vulgaris, the black variety) obtain their deep black-purple colour from an extraordinarily high concentration of anthocyanin pigments in the seed coat (the thin, black outer skin of the bean). Black beans contain five different anthocyanin types: delphinidin-3-glucoside, cyanidin-3-glucoside, petunidin-3-glucoside, peonidin-3-glucoside, and malvidin-3-glucoside — the exact same five anthocyanin types found in red wine (which also gets its colour from these five anthocyanins from dark grape skins). The total anthocyanin concentration in black bean seed coats is remarkably high — gram for gram of bean, black beans actually contain more anthocyanin than most red wines. When black beans are cooked in water, these anthocyanins leach from the seed coat into the cooking water, creating the intensely dark purple-black liquid that is the caldo de frijoles negros. On carpet, the black bean cooking liquid creates one of the most visually dramatic stains of any food liquid in Latin American cuisine — a vivid, deep purple-black stain that spreads rapidly into carpet fibres. Cold water rinse immediately and thoroughly: the black bean anthocyanin is water-soluble and can be partially flushed from carpet fibres with cold water before it bonds to the carpet fibre surface. Do not use hot or warm water — heat drives the anthocyanin deeper into carpet fibre pores. Hydrogen peroxide (3%, from pharmacy) is the primary treatment for black bean anthocyanin: apply, cover with a white cloth, leave 20–22 minutes, blot from outside inward. The hydrogen peroxide oxidises the anthocyanin chromophore, breaking the conjugated double-bond system responsible for the intense colour. The black bean anthocyanin is similar in chemistry to red wine anthocyanin and responds similarly to hydrogen peroxide — though the higher initial concentration from black bean liquid requires the full contact time.
Salsa Lizano Dark Brown and Pan-Fried Rice Starch
Salsa Lizano is a thick, dark mahogany-brown commercial sauce that is Costa Rica's most iconic condiment — invented in 1920, it is found in every Costa Rican home and most restaurants. Its colour comes from the Maillard reaction browning of its vegetable and sugar components during production. On carpet, the Salsa Lizano in the gallo pinto adds a dark brown Maillard stain superimposed over the purple-black from the black bean liquid. The two stain components — anthocyanin purple-black from the beans and Maillard dark brown from Salsa Lizano — overlap in the spill zone but can appear as different colour nuances at the spill edges (where one or the other may be more concentrated). Hydrogen peroxide addresses both the anthocyanin and the Maillard pigments simultaneously. The day-old rice that has been pan-fried in pork fat until some grains develop pegado (crispy, browned bits): physical collection of any rice grains from the carpet first (before wet treatment), working with the carpet pile direction. The pegado bits from the pan-fried rice leave faint Maillard-brown marks at their contact points on light carpet — minimal contribution compared to the bean liquid stain, but addressed by the hydrogen peroxide step. The pan-fried rice grains also carry pork fat from the sauté. Two rounds of dry cornflour for the pork fat load before wet treatment. Lipase enzyme for the pork fat. Cilantro Chlorophyll and Pork Fat
Fresh cilantro is used generously in Costa Rican gallo pinto — both stirred through during the final minute of cooking and sometimes as a fresh garnish on the serving. The cilantro leaves release chlorophyll (the bright green plant pigment — discussed in the encebollado, yassa poulet, and other posts where fresh herbs are a major component) on carpet contact. Fresh cilantro chlorophyll on light carpet: cold water first to flush the fresh chlorophyll before it oxidises. Oxidised chlorophyll on carpet turns grey-brown over several hours as the magnesium-porphyrin complex (the coloured centre of the chlorophyll molecule) degrades. Hydrogen peroxide oxidises the remaining chlorophyll-related colour. Some Costa Rican households also use "culantro coyote" (Eryngium foetidum — a different herb species with a similar but much more intense, slightly sharper cilantro-adjacent aroma, used in Central American and Caribbean cooking) alongside or instead of common cilantro (Coriandrum sativum). The aroma character of culantro coyote on carpet is more pungent and more persistent than common cilantro — the baking soda overnight step is more important when culantro coyote was used. The pork fat (manteca de cerdo) in the sauté is a traditional lard — rendered pork fat with a slightly higher saturated fatty acid content than vegetable oil (pork lard is approximately 40% saturated fat, 45% monounsaturated, 11% polyunsaturated — comparable to chicken fat but slightly higher in saturated fat). Apply two to three rounds of dry cornflour for the pork fat in the gallo pinto, followed by lipase enzyme treatment.

I was making a large batch of gallo pinto for a family gathering and I used dried black beans that I soaked and cooked from scratch (rather than canned beans). I soaked 500g of dried black beans overnight in a large pot of water, then drained and cooked them in fresh water for about 90 minutes until tender. The soaking water I discarded. But the cooking water (the caldo after 90 minutes of cooking) was extremely dark — almost opaque black-purple. I used this cooking water generously in the gallo pinto. When the gallo pinto fell on the carpet (a large serving for a gathering), the volume of black bean cooking liquid was much larger than a normal single-serving gallo pinto and the stain was very large. Large-volume black bean cooking liquid stain from scratch-cooked dried beans on carpet: (1) Scratch-cooked black beans produce more intense caldo than canned beans — when you cook dried black beans from scratch for 90 minutes, the anthocyanin leaching from the seed coats into the cooking water is significantly greater than the liquid from a can of canned black beans (which has already been heat-processed and has lost some anthocyanin in the canning process, and which contains a lower volume of liquid per bean). The caldo from scratch-cooked black beans for a large batch (500g dried beans = approximately 1.25kg cooked, yielding perhaps 1.5 litres of intensely coloured caldo) is highly concentrated and very dark. A large-volume spill of this liquid on carpet is a serious stain event. (2) Immediate action is the highest priority — for a large-volume liquid spill, every additional minute of contact time before the first cold water flush allows more anthocyanin to penetrate deeper into the carpet fibre structure and underlay. Immediately: blot up as much of the liquid as possible with clean white towels (pressing firmly to transfer the liquid from carpet to towel, working from the outside of the spill inward to prevent spreading). Do not rub. Then immediately apply a large volume of cold water to dilute and flush the remaining liquid — more cold water than for a normal small spill, applied in stages (pour cold water, blot, pour more cold water, blot) to progressively dilute the anthocyanin concentration in the carpet pile. (3) Multiple rounds of hydrogen peroxide — for a very large initial anthocyanin concentration from a large-volume caldo spill, a single 20–22 minute application of hydrogen peroxide may not fully address all of the stain. For very heavy staining (the carpet appeared almost black at the contact zone), a third application may be needed after the second has dried. (4) Professional treatment for large area — for a stain larger than approximately 30cm diameter from a large-volume black bean liquid spill, professional carpet cleaning with a hot-water extraction machine will be more effective than home treatment alone, particularly to flush the anthocyanin-coloured liquid from the underlay beneath the carpet, where it can wick back up to the carpet surface after home treatment.
