It is thought to have originated in the Canary Islands and was brought to Cuba by Canarian immigrants. Cuban ropa vieja consists of flank steak (falda) or skirt steak slow-cooked in water or broth with onion, garlic, and bay leaves until completely tender, then shredded by hand into long strands. The shredded beef is then returned to the pan and finished in a vivid sofrito sauce made from: olive oil; onion; green bell pepper and red bell pepper (both are essential and present in generous quantities — they are co-primary ingredients, not mere seasonings); garlic; ground cumin; dried oregano; bay leaves; and crushed tomatoes or tomato purée with a splash of white wine or dry sherry and sometimes a handful of green olives and capers. The finished ropa vieja is a vivid red-orange stew of tender, sauce-soaked shredded beef with softened peppers. When ropa vieja falls on carpet, the tomato and bell pepper colour stains in the olive oil sauce are the primary challenges.

Step 1: Remove Shredded Beef and Sauce

Collect shredded beef strands and sauce solids (softened pepper strips, onion) with a spoon or fork. Use a lifting motion — do not drag the beef strands across the carpet. The shredded beef has absorbed a large amount of sauce: each strand is saturated with tomato and pepper pigments. The softer the beef (longer-cooked), the more sauce it holds and the more it releases on carpet contact.

Step 2: Blot Olive Oil and Beef Fat

Blot from the outer edge inward. The blotting cloth picks up a vivid red-orange fat from the tomato and bell pepper pigments dissolved in the olive oil. Olive oil is 100% fat (predominantly oleic acid — monounsaturated). Flank steak is a relatively lean cut but releases some intramuscular fat during the long slow cooking. Apply cold water and blot twice more. The cold water dilutes the water-soluble components of the tomato and wine sauce.

Step 3: Apply Cornflour for Beef Fat and Olive Oil

Apply cornflour, allow 15 minutes, vacuum. The olive oil from the sofrito and the rendered beef fat together create a moderate fat load. One cornflour round is appropriate. The cornflour turns red-orange from the tomato and pepper carotenoids dissolved in the olive oil. After vacuuming, apply cold water and blot before the enzyme step.

Step 4: Apply Enzyme Cleaner for Beef and Pepper Protein

Apply enzyme carpet cleaner and allow 20 minutes. Shredded beef muscle protein (protease — cold water only; never hot). Bell pepper protein (protease — capsicum has a moderate protein content). Onion and garlic protein (minor; protease). Olive protein from olives if included (minor; protease). Follow with dish soap and rinse.

Step 5: Apply Peroxide for Tomato and Bell Pepper Colour

Apply hydrogen peroxide 3%, allow 10 minutes, blot and rinse. Ropa vieja has two simultaneous colour sources: (1) Tomato lycopene — the vivid red carotenoid from the crushed tomatoes. (2) Bell pepper capsanthin and capsorubin — the red and orange carotenoids from the red bell peppers (the same pigments found in paprika). Both are fat-soluble carotenoids addressed by peroxide oxidation. The combination of tomato and red bell pepper creates a more persistently vivid colour than tomato alone. One to two peroxide rounds depending on the carpet colour and the quantity of red bell pepper used.

Step 6: Treat Garlic and Cumin Aroma

Apply baking soda over the fully dried area and allow overnight. Ropa vieja's sofrito base uses garlic and cumin as primary aromatics. Garlic organosulfur compounds (allicin decomposition products: diallyl disulfide, diallyl trisulfide) create a persistent garlic aroma that adsorbs to carpet fibres. Cumin's cuminaldehyde also adsorbs readily. One overnight baking soda application addresses both for a standard ropa vieja spill.
