Why Bitterballen Create a Particularly Sticky Carpet Stain
Bitterballen are one of the Netherlands' most beloved bar snacks and borrel (drinks) accompaniments — round, breadcrumb-coated deep-fried balls with a crunchy golden exterior and a piping-hot, intensely sticky liquid filling. The filling (ragout) is made by making a very thick béchamel sauce (butter, flour, milk) and incorporating slow-braised shredded beef or veal, concentrated beef stock (often made from bones for high gelatin content), onion, and seasonings. This thick ragout is then chilled until firm enough to portion and roll into balls, coated in flour, egg wash, and fine breadcrumbs, then deep-fried at high temperature until the exterior is golden and the interior is liquid again from the heat. The interior ragout at serving temperature is essentially molten — it flows immediately when the ball is cut or broken.
