What Erwtensoep Leaves on Carpet

Dutch erwtensoep (split pea soup — also called snert) is one of the Netherlands' most traditional winter dishes. It is made from split green peas simmered for hours until fully dissolved, with pork ribs or pork trotters, smoked sausage (rookworst), celeriac, celery, carrot, leek, and onion. A traditional Dutch saying holds that proper erwtensoep should be thick enough to hold a spoon upright — it is a very dense, starchy, almost porridge-like soup when properly made. The colour is a dull, muted olive-green from the cooked and partially oxidised chlorophyll in the split peas. On carpet, erwtensoep is a manageable but distinctive stain: the main challenge is the extreme pea-starch viscosity (the soup gels when it cools, requiring warm water to re-liquefy before treatment), the combined pork and smoked sausage fat (two cornflour rounds), and the split pea protein (enzyme). The dull olive-green colour is relatively easy to remove — degraded pea chlorophyll (pheophytin) responds to one peroxide round on pale carpet.

Step 1: Remove Pork, Sausage, and Vegetable Pieces

Collect pork rib pieces (which may include bones — inspect the spill area for loose bones). Rookworst (smoked sausage) slices should be collected immediately — the smoked sausage contains a high load of pork fat and smoking compounds that will transfer to carpet on extended contact. Celeriac, carrot, and leek pieces should be scooped with a spoon.

Step 2: Re-Liquefy the Pea Gel with Warm Water

If the erwtensoep has cooled, the split pea starch will have gelled into a semi-solid mass. Apply warm (not hot) water to the gelled zone and allow two minutes — the warmth softens the starch gel back to a liquid state. Blot firmly. Apply cold water and blot again twice. The gelled pea starch has a different texture from a liquid soup stain — it may feel rubbery or resistant to blotting when cold. Once re-liquefied, it blots readily.

Step 3: Apply Cornflour for Pork and Rookworst Fat (Two Rounds)

Erwtensoep has a substantial fat load from two sources: pork ribs or trotters (which release a significant quantity of fat during hours of slow cooking) and rookworst (Dutch smoked sausage, which is a fatty pork sausage — approximately 25–30% fat). Apply cornflour over the stain area, allow 20 minutes, and vacuum. Apply a second round and allow 20 minutes before vacuuming. Two rounds are the minimum for erwtensoep with both pork ribs and smoked sausage.

Step 4: Apply Enzyme Cleaner for Pea and Pork Protein

Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. Split peas are high in protein (approximately 25% by dry weight) — the pea protein that has transferred to carpet fibres in the broth responds well to protease enzyme. Pork protein from the rib and trotters is also addressed. The split pea starch (the main thickening agent) responds to the enzyme amylase if present in your cleaner. Follow with dish soap solution to emulsify residual fat. Blot and rinse.

Step 5: Treat the Olive-Green Colour

The dull olive-green colour from erwtensoep is from pheophytin — chlorophyll that has lost its magnesium ion through the long cooking process, turning from bright green to khaki-olive. Pheophytin is less colour-fast on carpet than raw chlorophyll and responds well to hydrogen peroxide. Apply hydrogen peroxide 3% over the stained area and allow 10 minutes. Blot and rinse. One round is typically sufficient for the mild olive-green erwtensoep colour.

Step 6: Address Smoked Sausage Odour if Present

Rookworst smoked sausage contains phenolic smoking compounds (guaiacol, syringol) from the smoking process that can leave a faint smoky smell on carpet. If a smoky note is detectable after the area dries, sprinkle baking soda over the area, allow two hours, and vacuum. The smoked pork aroma is lighter than fresh pork odour and typically resolves with a two-hour rather than overnight baking soda application.

The erwtensoep recipe used pig's trotters (varkenspoten) rather than ribs as the pork component — trotters provide gelatine (collagen) and very little meat, giving the soup an especially thick, gelatinous quality when cold. Does a trotter-based erwtensoep stain differently?

Pig's trotters (varkenspoten) are extremely collagen-rich and fat-rich — the long simmering of trotters releases large quantities of dissolved collagen (gelatin) and rendered fat into the soup. A trotter-based erwtensoep will gel much more firmly when cold than a rib-based version (the dissolved gelatin significantly increases the gel strength). On carpet, trotter erwtensoep forms a very firm, almost rubbery gel when the spill cools — it may be firm enough to be partially peeled from the carpet surface rather than liquefied. Scrape up as much of the firm gel as possible with a spoon before the warm-water re-liquefaction step. The gelatin (dissolved collagen) responds to the enzyme protease step — the collagen protein is broken down during the 20–25 minute enzyme dwell. Three cornflour rounds rather than two for the higher trotter fat content.

The erwtensoep was the leftover version reheated the next day — in Dutch tradition, day-old erwtensoep is considered even better than fresh because the flavours deepen overnight. The reheated soup was even thicker than the fresh version and the pea starch had retrograded (the starch molecules reorganised into a firmer structure). Does retrograded pea starch stain differently from fresh pea starch?

Retrograded starch (starch that has reorganised after initial gelatinisation and cooling) is more resistant to re-gelatinisation on reheating and more resistant to enzymatic breakdown. The retrograded pea starch in day-old erwtensoep will require more warm water and more time to re-liquefy than fresh soup starch. When re-liquefying: apply warm water generously and allow four minutes rather than two — the retrograded starch takes longer to hydrate back to a workable state. Agitate gently with a spoon to help the water penetrate. The enzyme step for retrograded starch also benefits from a longer dwell — 25 minutes rather than 20. Amylase in the enzyme cleaner degrades retrograded starch, but more slowly than freshly gelatinised starch (retrograded amylose is largely resistant to alpha-amylase; the amylopectin component degrades more readily). If your enzyme cleaner is protease-only, the cold-water blotting and dish soap steps are the primary mechanism for the retrograded pea starch residue.
