Why is the kak'ik stain so much darker and more intense than regular chicken soup?

Standard chicken soup has no significant carotenoid pigment — it derives its pale yellow colour from chicken fat and very low concentrations of riboflavin. Kak'ik contains three highly concentrated fat-soluble carotenoid pigments (bixin from achiote, capsanthin from dried red chiles, and lycopene from tomato), all at concentrations far exceeding anything in standard poultry stock. Bixin in particular is one of the most intensely pigmented carotenoids in any food — a tiny amount of annatto produces a very vivid colour. The combined carotenoid load in kak'ik is among the highest of any traditional soup from world cuisine.

I tried to clean the kak'ik stain with warm water and it spread — why?

Warm water partially melted the fat phase of the stain, allowing the dissolved carotenoids (bixin, capsanthin, lycopene) to spread laterally through the carpet pile. All three carotenoids are fat-soluble, meaning they travel with the fat phase rather than dissolving in the water itself. Adding warm water without first absorbing the fat causes the fat to liquefy and migrate outward, carrying the pigment with it and enlarging the stain. Does the tomatillo in kak'ik create a different stain from regular tomato?

Dish soap does not chemically break down triglycerides — it only suspends them in water for rinsing. A residue of surfactant left in carpet fibres also attracts dirt over time, leaving a dark patch where the stain was.
