Pepián and Its Ancient Seed-and-Chili Carpet Stain

Pepián is one of Guatemala's most ancient and culturally significant dishes — a pre-Columbian Mayan recado (the term for traditional Guatemalan-Mayan thick spice and seed paste sauces) that has been prepared on the territory of present-day Guatemala for centuries before the Spanish conquest. Pepián is recognised by UNESCO as an Intangible Cultural Heritage of Humanity within the framework of Guatemalan culinary traditions, and it is considered by many Guatemalans to be the dish that most completely represents the depth and complexity of Mayan culinary knowledge. The name itself derives from "pepita" — the Mayan-derived Spanish word for pumpkin seed (Cucurbita maxima or Cucurbita pepo seeds), because ground toasted pumpkin seeds are the foundational ingredient of the sauce. Pepián paste is assembled from a complex set of toasted and charred ingredients, each ground on a traditional stone metate (the flat grinding stone used in Mesoamerican cooking since at least 5000 BCE): multiple dried chili varieties — guajillo (providing fruity, bright red-orange colour from capsanthin carotenoids), mulato (a dried ripe poblano with deep chocolate-brown colour, coffee-and-cacao notes, and very dark Maillard compounds from the drying process), and sometimes ancho or pasilla — are each individually dry-toasted on a comal until fragrant before grinding. Toasted pepitas (pumpkin seeds), toasted sesame seeds (ajonjolí), dry-roasted tomatoes (jitomate), dry-roasted tomatillos (miltomate — the small green husked tomatillo, Physalis philadelphica), roasted onion and garlic, a piece of dark-toasted or charred corn tortilla or stale bread (which functions as a thickener in the sauce), cinnamon, cloves, black pepper, and cumin are all ground together with the chilies into the "recado" paste. This paste is thinned with chicken stock to a stew consistency and used to braise chicken pieces. The result is pepián rojo (red pepián) — a deeply complex, very dark red-brown stew — or pepián negro (black pepián), where the charred tortilla and mulato quantities are increased until the sauce reaches an almost-black colour.

Dried Chili Paste: A Very Dark, Complex Stain

The dried chili component of pepián creates the most visually intense stain on carpet. Guajillo chili (Capsicum annuum — the dried mirasol chili) is one of the most common dried chili varieties used across Mesoamerican cooking and creates a vivid red-orange capsanthin carotenoid stain on carpet. Mulato chili (Capsicum mulato, the dried ripe poblano at the brown-black stage) contains capsanthin and capsorubin carotenoids at lower concentration than guajillo (because the mulato is fully ripe and browned, with more Maillard degradation of the carotenoids), but contributes very dark brown Maillard compounds from its extensive drying process — making the mulato contribution to the sauce more "chocolate-brown" than "red-orange". The combined guajillo (red-orange) and mulato (dark brown) stain on carpet produces a stain that is darker and more complex than a single-chili sauce stain. Additionally, the charred corn tortilla (toasted until very dark, almost black) ground into the recado paste contributes concentrated carbon-like Maillard dark-brown compounds to the sauce colour. On carpet, pepián is among the darkest of all Mesoamerican and Latin American sauce stains — comparable in colour intensity to a mole negro (which also uses mulato, ancho, and charred tortilla for its deep colour). Cold water rinse first for the water-soluble components of the chili sauce. Hydrogen peroxide (3%, 22 minutes on light carpet) for the combined carotenoid red-orange, Maillard dark brown from both the dried chilis and the charred tortilla, and any residual pigment. For pepián negro (the near-black version), a second application of hydrogen peroxide may be needed after the first has dried.

Ground Toasted Pepita Oil and Sesame Fat

Ground toasted pumpkin seeds (pepitas) are the defining ingredient of pepián and contribute a significant fat component to the sauce. Toasted pumpkin seeds are approximately 46% fat by weight, with a fatty acid profile of approximately 57% linoleic acid (an omega-6 PUFA), 25% oleic acid (MUFA), and 18% saturated fatty acids — making pumpkin seed fat one of the more PUFA-rich seed fats. The high linoleic acid content means pumpkin seed fat on carpet is moderately susceptible to oxidative rancidity (the same PUFA rancidity mechanism discussed for pine nut, walnut, and grape seed fats in previous posts). The ground pepitas, when incorporated into the stew, release their fat throughout the sauce — so a spilled pepián is a relatively fat-rich stain (from both the pumpkin seeds and the sesame seeds in the paste). Apply three to four rounds of dry cornflour to absorb the combined pepita oil and sesame fat before wet treatment. Lipase enzyme addresses both the pumpkin seed and sesame fat. The toasted sesame seeds in the pepián recado are typically white sesame seeds that have been toasted on a dry comal until lightly golden. Sesame fat is high in linoleic acid (approximately 42%) and oleic acid (approximately 43%) with a unique natural antioxidant sesamin (a lignan) that makes sesame oil considerably more oxidatively stable than pumpkin seed oil at the same PUFA content. The combined pumpkin seed and sesame fat from pepián is therefore moderately stable — less rancidity risk than an equivalent walnut oil stain. However, the toasted sesame aroma compounds (from Maillard browning of sesame seeds on the comal) are absorbed into carpet fibres — the warm, nutty, slightly roasted sesame aroma is addressed by the baking soda overnight step.

Tomatillo Yellow-Green, Charred Tomato, and Chicken Fat

The dry-roasted tomatillo (miltomate in Guatemalan Mayan-Spanish) ground into the pepián paste contributes a distinctive yellow-green to olive-yellow colour from its flavonoid content (primarily tomatillo flavonoids related to the withanolide class of compounds — the chemical family of bioactive compounds characteristic of the Physalis genus) and from its chlorophyll residue. On carpet, roasted tomatillo juice creates a yellow-green stain at the spill perimeter where the tomatillo component concentrates. The tomatillo also contributes its characteristic sharp, citric-tartaric acidity (tomatillo has a pH of approximately 3.8 from its malic acid, citric acid, and tartaric acid content). Cold water first to flush the tomatillo acid. The dry-roasted tomato (jitomate toasted on the comal until deeply blistered and charred on the exterior) in the pepián paste contributes both tomato lycopene (red carotenoid) and charred-tomato Maillard dark brown from the blistered, burnt skin. Together with the dried chilis, the charred tomato deepens the dark colour of pepián. Hydrogen peroxide handles both the lycopene and the tomato char colour. Chicken fat from the braised chicken pieces in the pepián: two to three rounds of cornflour (the pepián fat load is already addressed primarily by the pepita and sesame oil cornflour rounds — the chicken fat adds a moderate additional component). Lipase enzyme covers all three fat sources.

My pepián was made with turkey (chompipe in Guatemala) rather than chicken — the most traditional Mayan version of pepián uses turkey rather than chicken, as turkey (Meleagris gallopavo) is native to the Americas and was domesticated by the Maya long before the Spanish introduced chicken. Guatemalan market turkey (a whole turkey or turkey pieces from local farms — typically a darker-coloured, more strongly flavoured heritage turkey breed than the commercial supermarket turkey) was used. Turkey is much larger than chicken, darker in meat colour (turkey dark meat has significantly more myoglobin than chicken dark meat), and has a more assertive, gamey flavour. When the pepián with turkey fell on the carpet, the turkey myoglobin in the meat juice was more visible and more intensely coloured than chicken myoglobin would have been. How does turkey in pepián differ from chicken on carpet?

Pepián with turkey versus chicken on carpet: (1) Turkey myoglobin is more concentrated than chicken myoglobin — turkey dark meat (thigh, drumstick) contains significantly more myoglobin than equivalent chicken dark meat, giving raw turkey dark meat a deeper red colour and the cooked turkey meat juice a more visible myoglobin component. When a braised turkey piece in pepián sauce falls on carpet, the myoglobin from the turkey meat juice creates a more visible pink-red contact stain than chicken myoglobin. Cold water first (immediately — before the myoglobin oxidises and sets) is even more critical for turkey myoglobin than for chicken. Protease enzyme after the cold water flush for the turkey protein residue. (2) Turkey fat — whole turkey or turkey pieces from heritage birds (including traditional Guatemalan chompipe) have more body fat than commercial chicken pieces. Turkey fat is a semi-solid fat at room temperature (similar to duck fat in composition — approximately 38% saturated fat, 47% monounsaturated, 13% PUFA). For pepián with turkey, add an additional one to two rounds of cornflour on top of the standard pepita-and-sesame cornflour rounds to address the turkey fat. (3) The pepián paste itself — the chili, pumpkin seed, sesame, charred tortilla, and tomatillo stain is unchanged regardless of whether chicken or turkey was used. Pepián verde (green pepián) versus pepián rojo (red pepián) on carpet: (1) Different colour challenge — pepián verde creates a bright green-yellow stain from its tomatillo, fresh green chili, cilantro, and epazote base. The green colour comes from: (a) tomatillo flavonoids and chlorophyll-adjacent compounds (yellow-green); (b) fresh green chili skin chlorophyll (bright green); (c) cilantro and epazote chlorophyll (very bright green). On carpet, pepián verde creates a vivid green stain rather than the dark red-brown of pepián rojo. Cold water first for the fresh chlorophyll before it oxidises to grey-brown. Hydrogen peroxide for the remaining green or grey-green colour from oxidised chlorophyll. (2) No dried chili carotenoid stain — pepián verde has no dried guajillo or mulato chili, so it has no capsanthin red-orange carotenoid stain and no charred tortilla dark brown. The hydrogen peroxide need is therefore lighter than for pepián rojo — the main colour target is the oxidised chlorophyll and tomatillo flavonoids rather than the intense dried chili carotenoids. (3) The pepita and sesame fat treatment is the same for both versions — pumpkin seeds and sesame seeds are used in both pepián verde and pepián rojo. Three to four rounds of cornflour; lipase enzyme. (4) Epazote aroma — epazote (Dysphania ambrosioides — also called "Mexican tea" or "wormseed") is a strong, intensely aromatic Mesoamerican herb with a very distinctive, complex aroma (described as medicinal, petroleum-like, slightly turpentine-adjacent, with a strong herbal quality from its monoterpene content — ascaridole, limonene, paracymene). Epazote aroma on carpet is more pungent and more persistent than cilantro. The baking soda overnight step is important for the epazote volatile aromatics in pepián verde.

Combined pepián sauce + white rice + frijoles volteados (Guatemalan mashed black beans) on carpet: (1) Physical collection priority — remove the rice and any large masses of frijoles volteados and pepián from the carpet surface before wet treatment. Work from outside inward. (2) Frijoles volteados on carpet — the thick, paste-like mashed black beans create a very dark purple-black stain from concentrated black bean anthocyanin (discussed in depth in the gallo pinto post). The frijoles volteados anthocyanin stain is the most visually alarming of the three components and should be addressed with the cold water rinse + hydrogen peroxide treatment. Because frijoles volteados are cooked with manteca (lard or cooking oil) during the refrying process, they also carry a fat component on top of the bean starch and anthocyanin — two rounds of cornflour for the frijoles volteados fat before the cold water rinse. (3) White rice starch — cooked white rice on carpet creates a starch residue from the Guatemalan long-grain white rice (arroz blanco, typically cooked with onion, garlic, and a small amount of tomato, which gives it a very light yellowish colour). Physical collection of rice grains; cold water rinse for the rice starch. (4) Pepián sauce alongside — the dark red-brown pepián sauce is the third stain layer. All three stain components (pepián red-brown, frijoles volteados purple-black, and rice starch) share the same treatment approach: cold water flush first across the entire spill zone, then hydrogen peroxide for the combined dark colour from both the pepián chili and the frijoles volteados anthocyanin. The hydrogen peroxide step covers both the capsanthin/Maillard colour from pepián and the anthocyanin from the black beans simultaneously. One extended hydrogen peroxide application (22 minutes on light carpet) is sufficient to address both colour components together.
