Harira (هريرة) is the national soup of Morocco — a complex, deeply spiced broth of tomatoes, lentils, chickpeas, diced lamb or beef, fresh coriander and parsley, celery, ginger, and a turmeric-forward spice blend, thickened with a flour-water slurry (tedouira) or sometimes beaten egg. It is the traditional soup eaten to break the Ramadan fast (iftar) and is widely served in Moroccan restaurants throughout Australia. The staining profile of harira is multifaceted: the turmeric in the spice blend creates a curcumin yellow stain (requiring cold water only and two hydrogen peroxide rounds, the same as mulligatawny), the tomato adds lycopene red-orange colour, the chickpeas scatter across carpet and must be removed before wetting, and the flour thickener creates a concentrated starch matrix at contact points (similar to hot and sour soup's cornstarch). The lamb or beef adds animal fat requiring one to two cornflour rounds. Harira treated immediately can be fully resolved; harira left to dry on carpet is one of the more challenging multi-pigment soup stains because of the turmeric-tomato combination.
Harira cleaning steps
- Remove chickpeas by hand and vacuum. Chickpeas are large enough to pick up individually — remove every visible one before any liquid is applied. Lentils will have mostly dissolved into the broth and cannot be individually removed.
- Blot the soup liquid immediately. Use cold water only from this point — harira contains turmeric, and hot or warm water accelerates curcumin bonding with carpet fibres.
- Apply cornflour for the lamb or beef fat. One to two rounds of 20 minutes (one for lean lamb; two for lamb shoulder or fattier cuts).
- Apply cold water and blot to loosen the flour thickener. Two rinse-and-blot cycles for the concentrated tedouira starch layer.
- Apply dish soap solution and blot.
- Apply enzyme cleaner for 20–25 minutes — for the flour/tedouira starch (amylase), chickpea starch (amylase), lentil starch (amylase), lamb or beef protein (protease), and egg thickener protein if used (protease).
- Rinse with cold water and blot dry.
- Apply hydrogen peroxide (3%) for the combined turmeric and tomato colour. Two rounds of 10–15 minutes each, fully drying between rounds. The turmeric curcumin and tomato lycopene require the same peroxide treatment but respond at slightly different rates — both are addressed by two rounds on most carpet. Three rounds for a heavily spiced harira or a very light carpet.
- Do not apply heat at any stage — turmeric curcumin can be permanently set by heat.
Turmeric + tomato: cold water throughout, two peroxide rounds minimum
Harira combines two of the more persistent food pigments on carpet: turmeric curcumin (yellow, heat-sensitive) and tomato lycopene (red-orange, not heat-sensitive but responds to peroxide). The cold-water rule for turmeric means every water application in the entire treatment must be cold — even in the rinse step after the enzyme cleaner. The combined yellow-orange-red colour from these two pigments can appear as a muddy orange-brown on white carpet that initially looks like it has cleared after the first peroxide round, then reveals remaining colour as the area dries. Always wait for the carpet to fully dry after each peroxide round before assessing whether another round is needed.

The harira was a very traditional version made with preserved lemons (lemons cured in salt). Preserved lemon rind has an intensely salty, fermented flavour and the yellow rind colour. Do preserved lemons affect the carpet treatment?
Preserved lemon rind in harira contributes a high salt concentration (the lemon is preserved in salt brine) and yellow rind pigment from the lemon zest (limonene and other terpene compounds from the lemon oil). The high salt content in preserved lemons means the spill zone may have a slightly elevated salt concentration — rinse with cold water thoroughly to remove the salt and prevent the salt from absorbing atmospheric moisture and creating a damp spot as it hygroscopically draws humidity. The preserved lemon yellow pigment is very mild compared to the turmeric curcumin — it does not add meaningfully to the colour treatment. The enzyme step is unchanged. Lemon salt brine (the liquid from preserved lemons) can discolour some natural carpet fibres (wool, sisal) if left to dry — on synthetic carpet it is not a concern.
Our harira recipe uses smen (aged Moroccan fermented butter) rather than olive oil. Smen has a very strong, pungent smell from the fermentation process — similar to a blue cheese smell. Does smen change the fat treatment or the odour treatment?
Smen (semneh) is clarified butter that has been fermented and aged — the fermentation develops volatile fatty acid compounds (short-chain butyric acid and other fatty acids) that give it a very strong, pungent smell similar to blue cheese or aged ghee. For the fat treatment: smen is a dairy fat (butterfat), similar in composition to ghee. Two cornflour rounds address the smen fat. The key difference from olive oil is the odour: smen has a far more persistent smell on carpet than olive oil or standard butter due to the concentrated volatile fatty acids from fermentation. Plan for two overnight baking soda applications for a harira made with smen, rather than no baking soda for the standard olive oil version. The vinegar mist step (one part white vinegar, three parts water) after the first baking soda night is particularly effective for the butyric acid smell compounds in smen.
