What Nabe Hotpot Leaves on Carpet
Japanese nabe (鍋) is a category of communal hotpot dishes cooked at the table. The most common home version — yosenabe (寄せ鍋, "mixed hotpot") — uses a light konbu and bonito dashi base seasoned with soy sauce, mirin, and sake. Step 1: Remove All Hotpot Ingredients
A nabe spill typically includes a wide range of solid ingredients mixed into the broth. Collect all pieces systematically: napa cabbage leaves (which hold broth like a sponge), tofu pieces (soft and crumbly — scoop rather than pick), shrimp and clam pieces, fish cake rounds, mushroom caps, glass noodle tangles, and carrot slices. Glass noodles are translucent and can be easy to miss against light carpet — inspect the spill area carefully. Chrysanthemum greens (shungiku) are leafy and may spread widely. Collect ingredients from the outer edge inward.
Step 2: Blot the Dashi Broth
Blot the pale amber broth firmly. The light soy-dashi colour is much less intense than a dark soy stain — two cold-water-and-blot cycles are typically sufficient to dilute it to near-invisible levels before treatment. If an egg was swirled in at the end of the meal, the broth may have a slightly thicker, more opaque quality where the egg proteins coagulated — blot these zones first, as they hold broth and will release slowly.
Step 3: Apply Cornflour for Chicken and Seafood Fat
Nabe is a relatively low-fat dish — the broth is a light dashi rather than an oil-based cooking medium. One cornflour round is sufficient for the combined chicken fat and seafood fat that has rendered into the broth during communal cooking. Apply cornflour over the spill area, allow 15 minutes, and vacuum.
Step 4: Apply Enzyme Cleaner for Mixed Protein
Apply cold water and blot. Apply enzyme carpet cleaner and allow 20–25 minutes. Nabe has a particularly high protein variety: chicken protein, shrimp protein, clam or oyster protein, fish cake protein (processed fish paste), tofu protein (soy protein), and egg protein from the swirled egg. Each protein type has a different bonding behaviour in carpet fibres. The extended 25-minute dwell time (rather than 20) allows the enzyme more contact time with the diverse protein mix. Glass noodles are made from starch (mung bean or potato starch) rather than wheat — they are addressed by the cold-water blotting rather than the enzyme step. Follow with dish soap solution. Blot and rinse.
Step 5: Treat Soy Colour and Seafood Odour if Present
If a pale amber tint remains after the enzyme step, apply hydrogen peroxide 3% and allow 10 minutes. One round is typically sufficient for the light soy-dashi colour. For seafood odour from clams, oysters, or shrimp in the broth: sprinkle baking soda over the dried area, allow two hours, and vacuum. The baking soda neutralises the amine compounds from the seafood. If the nabe included oysters, which have a particularly strong odour, an overnight baking soda application is recommended.
