Cleaning Khao Tom (Thai Rice Porridge) from Carpet

Khao tom (ข้าวต้ม) is a Thai rice porridge made by simmering long-grain jasmine rice in a light chicken broth until the grains partially dissolve into a thick, creamy-textured porridge. It is a staple Thai breakfast dish and comfort food found on Thai restaurant menus across Australia. The recipe combines rice, light chicken stock, ginger, garlic, and fish sauce, typically garnished with poached or minced chicken, fried shallots, fried garlic, spring onion, coriander, and white pepper. The stain profile is largely about starch and consistency rather than colour: khao tom is pale ivory to white (the dissolved rice starch gives it a creamy colour but essentially no colour pigment), making this one of the few thick soups with almost no colour treatment needed. The dominant treatment challenge is the very high dissolved rice starch — even higher than split pea soup on a per-volume basis because the rice grains are partially liquefied, creating a high-density starch suspension. Khao tom cleaning steps

  1. Scoop the bulk of the thick rice porridge using a spoon — the consistency is thick enough that a large proportion can be physically removed before blotting. Do not press.
  2. Blot the remaining liquid.
  3. Apply cornflour if the soup contained a significant amount of fried garnish (fried shallots, fried garlic) or if poached chicken or meatballs were present. If it was plain broth-and-rice khao tom with no oil-fried garnish and no protein pieces, the cornflour round can be skipped — the fat load is very low.
  4. Apply cold water and blot.
  5. Apply dish soap solution and blot.
  6. Apply enzyme cleaner for 25 minutes — the dissolved rice starch concentration in khao tom is very high. This is the most important treatment step. Ensure full surface coverage and do not rush the dwell time.
  7. Rinse with cold water and blot dry.
  8. Colour assessment: in virtually all cases, no hydrogen peroxide is needed — khao tom leaves a pale ivory stain that will not be visible once dry.
  9. Apply baking soda overnight for the fish sauce fermented fish aroma. Vacuum the following day. One overnight application is typically sufficient.

Dissolved rice starch — why khao tom is stickier than plain rice spills

Whole cooked rice grains spilled on carpet are relatively easy to pick up and remove because the starch is mostly contained within the intact grain. Khao tom rice has been cooked until the grain structure breaks down — the starch has leached out of the grain into the surrounding liquid, creating a high-concentration starch suspension. When this porridge penetrates carpet fibres, it deposits dissolved starch (gelatinised amylose and amylopectin) on every fibre surface in the penetrated zone. As the porridge dries, this gelatinised starch forms a stiff, slightly glossy coating that makes the carpet feel crispy and stiff in the spill area. This stiff starch residue also traps subsequent dirt — the area darkens noticeably with foot traffic if the starch is not fully broken down by enzyme treatment. The enzyme amylase step at 25 minutes dwell is the difference between a clean result and a traffic-attracting stiff spot.
