Liberian Jollof and Its Palm Oil Carotenoid Carpet Stain

Liberian jollof rice is one version of the iconic West African rice dish — jollof — that varies considerably in character from the more internationally well-known Nigerian and Ghanaian versions. While Nigerian jollof uses long-grain parboiled rice with a tomato-only base and vegetable oil (and generates intense online debate about whether it or Ghanaian jollof is superior), and Senegalese thiéboudienne uses broken rice with a tomato-and-fish base, Liberian jollof has its own distinctive identity. The most characteristically Liberian feature is the use of palm oil as the primary cooking fat — palm oil is more central to Liberian cooking than to Nigerian or Ghanaian cooking, where vegetable oil is more commonly used for jollof. Palm oil (extracted from the red palm fruit Elaeis guineensis) is an intensely red-orange coloured oil from its extraordinary concentration of carotenoids — primarily beta-carotene (approximately 500–700 parts per million in unrefined red palm oil), making unrefined palm oil one of the single richest natural sources of beta-carotene. Liberian jollof is also distinctive for its use of dried and smoked herring (or other dried fish) as a key flavour component in the rice stew alongside chicken or beef, contributing a deep smoky, funky, umami fish character that is less common in Nigerian jollof. The third distinctive element is the presence of a significant amount of Scotch bonnet pepper (habanero in other contexts) for heat. When Liberian jollof spills on carpet, the combination of vivid orange-red palm oil carotenoid, tomato lycopene, and smoked fish creates a multi-layered stain that is more intensely coloured than standard vegetable-oil-based jollof.

Palm Oil Beta-Carotene: An Intensely Vivid Orange-Red Fat Stain

Unrefined red palm oil (the traditional cooking palm oil used in Liberian and broader West and Central African cooking, distinct from the refined, bleached, deodorised white/yellow palm oil used in commercial food manufacturing) has a visually striking, intensely saturated deep orange-red colour from its very high beta-carotene and alpha-carotene content (roughly 500–700 parts per million total carotene — making unrefined red palm oil approximately 30 times richer in beta-carotene than carrots, which are the benchmark source of dietary beta-carotene). On carpet, palm oil creates a combination fat stain (from palm oil's fatty acid composition — approximately 44% palmitic acid saturated fat, 5% stearic acid saturated fat, 39% oleic acid MUFA, and 10% linoleic acid PUFA) plus an intensely vivid orange-red carotenoid colour stain. The beta-carotene and alpha-carotene in palm oil are fat-soluble carotenoids — the same solubility class as lycopene (tomato), capsanthin (chili), and beta-carotene (carrot), all of which require fat-phase treatment. Unlike water-soluble anthocyanins (which can be partially flushed with cold water), fat-soluble carotenoids do not rinse out with water. The correct first step for a palm oil carotenoid stain on carpet is NOT cold water but rather the dry cornflour fat absorption step: apply dry cornflour to the spill area immediately to absorb the red palm oil before it sets into the carpet fibres. Four to five rounds of dry cornflour for a Liberian jollof spill with significant palm oil content. Then lipase enzyme (targeting the palm oil triglycerides). Then hydrogen peroxide for the residual orange-red beta-carotene colour after the fat has been removed. The lycopene from the tomato component of the jollof sauce is addressed simultaneously by the hydrogen peroxide step.

Smoked Dried Herring TMA Aroma and Rice Starch

Smoked dried herring (or other dried/smoked fish such as stockfish — dried unsalted cod, or "dry fish" — common to West African cooking) is a defining flavour component of Liberian jollof that sets it apart from Nigerian or Ghanaian jollof. Dried and smoked fish on carpet creates a particularly intense and persistent TMA (trimethylamine) fishy aroma — more concentrated than fresh cooked fish, because the drying and smoking process concentrates the TMA and adds smoke-derived aroma compounds (phenols from wood smoke, such as guaiacol, syringol, and 4-methylsyringol — the same phenolic compounds responsible for the aroma of smoked salmon, smoked mackerel, and smoked meat). On carpet, dried smoked fish from Liberian jollof creates both the TMA fishy aroma and the smoke phenolic aroma. The dilute vinegar step (1:10 white vinegar, 4–5 minutes contact — slightly extended compared to fresh fish because of the higher TMA concentration from dried fish) is important before the baking soda step. Apply baking soda overnight after the vinegar step (the combination of acid-first-then-base is effective for both TMA and smoke phenolics). The long-grain or medium-grain rice that forms the body of Liberian jollof: when the rice-and-sauce jollof falls on carpet, the rice grains are coated in the palm oil-tomato-fish sauce. Physical collection of all rice grains from the carpet surface before wet treatment. Cold water rinse for the rice starch residue after collection.

Scotch Bonnet Capsaicin Heat and Tomato Lycopene

Scotch bonnet pepper (Capsicum chinense — the same species as habanero, to which it is closely related) is used in Liberian jollof for heat at a level comparable to West African cooking more broadly. Scotch bonnet chilies have a Scoville heat unit rating of approximately 100,000–350,000 SHU — considerably hotter than jalapeño (2,500–8,000 SHU) or serrano (8,000–22,000 SHU). On carpet, Scotch bonnet chili creates both capsaicin heat (the primary alkaloid from the Scotch bonnet) and the distinctive fruity-orange colour of the Scotch bonnet flesh (from habanero-type carotenoids). The capsaicin in carpet fibres does not create a safety hazard in normal household conditions (capsaicin concentration in a food spill is far below the concentration of capsaicin products used as chemical irritants), but the residual chili heat aroma is addressed by the baking soda step. The tomato in the Liberian jollof base (fresh tomato and tomato paste) contributes tomato lycopene (the red fat-soluble carotenoid — addressed by hydrogen peroxide after the palm oil fat has been removed with cornflour). The combined palm oil beta-carotene and tomato lycopene on carpet create a very vivid, intensely saturated orange-red carpet stain. The two carotenoids (beta-carotene from palm oil and lycopene from tomato) both require fat removal first (cornflour + lipase enzyme), then hydrogen peroxide for the residual colour.

My Liberian jollof was made with "palm cream" (also called cream of palm, or palm cream concentrate — a thicker, creamier version of palm oil made from the pulp of the palm fruit Elaeis guineensis, similar in concept to coconut cream vs. coconut oil). Palm cream is the thick, emulsified white-to-pale-orange cream extracted from the palm fruit pulp by adding hot water and straining, before the oil separates. It has a much richer, creamier texture than pure palm oil (similar in texture to a thick, slightly orange-tinted coconut cream) and a more complex flavour. When my jollof made with palm cream fell on the carpet, the stain was a thick, pasty pale orange mass rather than the liquid red-orange oil spill I would expect from standard palm oil jollof. How does palm cream differ from palm oil on carpet?

Palm cream versus pure palm oil in Liberian jollof on carpet: (1) Palm cream is an emulsion of palm oil, water, and palm fruit pulp — unlike pure separated palm oil, which is 100% fat, palm cream contains approximately 20–25% fat (palm oil) emulsified into a water phase with palm fruit pulp solids. The stain from palm cream jollof is therefore lower in concentrated fat and more viscous-pasty in texture at the carpet contact point. The orange-red colour (from beta-carotene) is the same but the fat concentration per unit area is lower than from pure palm oil jollof. Two to three rounds of cornflour for the palm cream fat (versus four to five rounds for pure palm oil). (2) The palm fruit pulp solids in palm cream — palm cream contains orange-red palm fruit mesocarp fibre (the fibrous pulp of the palm fruit) that is not present in pure palm oil. These pulp fibres on carpet create an additional orange-red fibre residue at the spill contact point. Physical collection of the palm cream mass first (it is thick enough to scoop). The fibrous pulp colour is addressed by hydrogen peroxide. (3) The emulsified water phase in palm cream — because palm cream is an emulsion rather than pure fat, it is slightly more responsive to cold water treatment than pure palm oil. The water-phase component of the emulsion can be progressively diluted by cold water application, whereas pure palm oil is completely water-insoluble. After the cornflour fat absorption, cold water rinsing is somewhat more helpful for palm cream than for pure palm oil. (4) The smoked herring, rice, and Scotch bonnet treatment is unchanged — those components of the Liberian jollof are not affected by the palm oil versus palm cream substitution.

I prepared a large pot of Liberian jollof for the Liberian community association here in Sydney and the pot was knocked off the table onto a large area of carpet in the community hall, covering approximately 60cm × 80cm. The jollof contained a significant amount of palm oil (approximately 250ml of unrefined red palm oil for a pot that served 20 people). The palm oil has created a very large, very vivid orange-red stain across the carpet. The community hall manager says the carpet is a beige-neutral toned commercial polypropylene loop carpet. Is polypropylene carpet more resistant to palm oil carotenoid staining than other carpet types?

Palm oil carotenoid staining on polypropylene commercial carpet versus other carpet types: (1) Polypropylene (olefin) carpet is inherently solution-dyed — polypropylene fibre cannot be dyed with aqueous dye solutions after manufacturing (it is hydrophobic and has no dye receptor sites for standard carpet dyes). Instead, the colour pigment is incorporated into the polypropylene melt before it is extruded into fibre. This solution-dyeing process has an important implication for stain resistance: polypropylene fibres that have been solution-dyed are genuinely resistant to water-based staining, because the hydrophobic fibre surface does not absorb water-soluble stains. However, polypropylene IS NOT resistant to oil-based stains — because polypropylene is itself an oily, non-polar polymer, it is actually MORE susceptible to oil and fat staining than nylon, wool, or polyester carpet. The beta-carotene in palm oil is fat-soluble and therefore oil-phase — it is carried by the palm oil fat into the polypropylene fibre, where the hydrophobic palm oil fat can diffuse into the hydrophobic polypropylene polymer matrix. This makes oil-based carotenoid stains (like palm oil beta-carotene) WORSE on polypropylene than on nylon or wool. (2) Commercial loop pile polypropylene carpet — the dense, short loop pile of commercial polypropylene carpet (compared to plush residential carpet) limits how deeply the palm oil can penetrate into the carpet thickness, which is advantageous. The oil sits closer to the surface. (3) Treatment for large palm oil carotenoid stain on polypropylene commercial carpet: cornflour absorption (critical — apply immediately and generously across the full spill area, leave 5 minutes, vacuum, repeat); then a professional carpet cleaner with hot-water extraction equipment (the combination of detergent-solvent carpet cleaning chemical and hot-water extraction is the most effective approach for large palm oil stains on polypropylene carpet in a community hall setting — home treatment alone is insufficient for a 60cm × 80cm palm oil spill on commercial carpet). The hall manager should arrange professional cleaning within 24 hours.

My Liberian jollof uses both dried herring AND "ogiri" or "dawadawa" — fermented locust bean (African carob) condiment that is widely used as a flavour enhancer in Liberian, Sierra Leonean, and other West African cooking. Ogiri/dawadawa is made from fermented locust beans (Parkia biglobosa seeds) and has an extremely strong, pungent, almost ammoniac-fermented smell similar to very strong aged blue cheese, Limburger, or Japanese natto. It is sold in small balls or as a paste and is used in very small quantities as a flavour amplifier. When the Liberian jollof with ogiri fell on the carpet, the aroma was exceptionally strong and pungent — far stronger than I would expect from standard jollof without ogiri. How does ogiri/dawadawa affect the carpet aroma treatment?

Liberian jollof with ogiri/dawadawa (fermented locust bean) on carpet: (1) What makes ogiri so pungent — ogiri is produced by fermenting locust bean seeds (Parkia biglobosa, also called "African carob" or "néré") with naturally present Bacillus bacteria for 1–3 days at warm temperatures. The Bacillus-driven fermentation produces: (a) free fatty acids from the lipid content of the locust bean seeds (butyric acid, propionic acid, and other short-chain fatty acids — the same compounds responsible for the pungent dairy-fermentation aroma of smen, discussed in the rechta and rfissa posts); (b) ammoniacal compounds from proteolysis of the locust bean protein by Bacillus proteases (the ammoniac character that makes ogiri smell "ammoniac" like very strong cheese); (c) indole and skatole (the pungent aromatic amines also responsible for the aroma of very aged blue cheese and certain other fermented foods). The combination of butyric acid, propionic acid, ammoniacal compounds, and indole/skatole makes ogiri one of the most pungent fermented food condiments in world cuisine. (2) Treatment for ogiri aroma on carpet — the pungency of ogiri fermentation compounds requires more aggressive treatment than standard food aroma: (a) dilute white vinegar first (1:5 — slightly stronger than the standard 1:10 dilution — 5 minutes contact, blot) to address the ammoniacal compounds and begin neutralising the butyric acid; (b) baking soda generously overnight, extended to 14–16 hours; (c) vacuum thoroughly; (d) repeat the vinegar step followed by a second overnight baking soda application on the following night; (e) if the aroma persists after two cycles, professional steam cleaning with a deodorising enzyme pre-spray (containing protease, lipase, and deodorising enzymes) is recommended. An ogiri-contaminated carpet that is not treated within 6–12 hours can retain the fermentation aroma for weeks or months without professional treatment.
