What Nigerian Egusi Soup Leaves on Carpet

Nigerian egusi soup is one of the most widely eaten and deeply beloved soups across West and Central Africa, particularly throughout Nigeria where it is prepared in many regional variations. It is made from ground egusi — the dried and ground seeds of a subspecies of West African melon (Citrullus lanatus var. mucosospermus, related to the watermelon but grown specifically for its seeds). The ground egusi seeds are the defining thickening agent and flavour component of the soup. Egusi is approximately 45–50% fat (predominantly linoleic acid and oleic acid) and approximately 28% protein, making it a nutritionally dense seed that contributes both a very high fat load and significant protein to the carpet stain. The soup is cooked in palm oil — crude unrefined palm oil (also called red palm oil), which gives egusi soup its characteristic vivid orange-red colour from extremely high concentrations of beta-carotene (among the highest carotene content of any food oil). Alongside palm oil and ground egusi, the soup contains dried crayfish (ground dried prawns/shrimp — a fundamental umami and aroma component of West African cooking with a very powerful, concentrated seafood-fermentation aroma), scotch bonnet pepper, leafy greens (ugu/fluted pumpkin leaves, Telfairia occidentalis, or bitter leaf, Vernonia amygdalina), stockfish (dried/reconstituted Atlantic cod), assorted meats (cow tripe/shaki, goat meat, cow skin/ponmo), and sometimes fermented locust beans (iru/dawa-dawa). The result on carpet is among the most challenging stains in this guide — very high fat, very vivid colour from palm oil carotene, and a powerful dried crayfish and palm oil aroma.

  • Dish soap (one teaspoon per 250ml cold water)
  • Hydrogen peroxide 3% (two to three rounds for palm oil carotene colour)
  • Baking soda (two to three overnight applications for dried crayfish, palm oil, and iru aroma)

Step 1: Remove Egusi Paste and Soup Body

Collect the thick egusi paste with a spoon — well-cooked egusi forms a semi-solid, granular paste of cooked ground melon seeds suspended in palm oil. The orange-red of the palm oil is immediately striking. Collect meat pieces (tripe, goat, ponmo) and leafy greens. Stockfish may be present as firm reconstituted chunks. The egusi paste is dense and does not spread as freely as a liquid soup, but the palm oil carrier liquid spreads rapidly around the paste.

Step 2: Blot Palm Oil and Egusi Fat

Blot from the outer edge inward. Palm oil is a highly pigmented, semi-solid fat at room temperature (it solidifies below approximately 35°C) that spreads readily. The vivid orange-red transfers immediately to the blotting cloth. Do not rub — rubbing spreads the orange palm oil carotene pigment deep into the carpet fibres. Apply cold water and blot twice more. The egusi fat (from the ground melon seeds) adds to the palm oil fat load in the carpet.

Step 3: Apply Cornflour for Palm Oil and Egusi Fat (Two Rounds)

Apply cornflour generously over the entire stain zone, allow 20 minutes, vacuum. Apply a second round. Palm oil is among the most challenging cooking oils to remove from carpet because (1) its very high carotene content means that even a small residual fat amount leaves visible orange-red colour and (2) its semi-solid nature at room temperature means it penetrates carpet fibres and adheres readily. Ground egusi seeds add their own 45–50% fat content on top of the palm oil. Two cornflour rounds are essential before the peroxide step — residual fat significantly reduces the effectiveness of hydrogen peroxide on the carotene chromophore.

Step 4: Apply Enzyme Cleaner for Egusi and Meat Protein

Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. Ground egusi seeds are approximately 28% protein — primarily albumins and globulins (seed storage proteins). Protease enzyme addresses egusi seed protein effectively. Meat components (tripe, goat, ponmo/cow skin) all contribute animal protein (collagen from tripe and ponmo, myofibrillar protein from goat meat). Stockfish protein (cod muscle) is also addressed by protease. Leafy green starch and cellulose from ugu or bitter leaf is addressed by amylase. Dried crayfish protein (shrimp muscle protein) is also addressed by protease. Follow with dish soap and rinse.

Step 5: Treat Palm Oil Carotene Colour (Two to Three Rounds)

Apply hydrogen peroxide 3%, allow 10 minutes, blot and rinse. Allow to dry fully before assessing. Apply a second round. Crude red palm oil has one of the highest beta-carotene concentrations of any food oil — approximately 500–700 mg/kg of carotenes, compared to approximately 0.5–5 mg/kg in most vegetable oils. This is what makes palm oil so distinctively and intensely orange-red. Beta-carotene is a fat-soluble carotenoid that hydrogen peroxide oxidises by attacking the conjugated double-bond chain of the carotenoid molecule. Two to three peroxide rounds are standard for a palm oil stain from egusi soup — more than for most other carotenoid stains because of the very high concentration. Allow full drying between rounds. The leafy green chlorophyll from ugu or bitter leaf may contribute a mild green stain also addressed in this peroxide step.

Step 6: Treat Dried Crayfish and Palm Oil Aroma (Multiple Applications)

Apply baking soda over the fully dried area and allow overnight. The aroma profile of an egusi soup spill on carpet is among the most challenging in this guide. (1) Dried crayfish (ground dried shrimp) — contains highly concentrated trimethylamine (TMA) and pyrazine compounds from the drying and fermentation process. Dried crayfish aroma on carpet is persistent, penetrating, and familiar to anyone who has cooked West African food. One overnight baking soda application is usually insufficient. Plan for two to three overnight applications, allowing full vacuuming between each. (2) Palm oil aroma — crude red palm oil has a characteristic earthy, slightly fermented, carotene-rich aroma from its volatile fraction (including carotenoid degradation products). (3) Fermented locust beans (iru/dawa-dawa) if used — add a very pungent legume fermentation aroma (from volatile short-chain fatty acids and pyrazines) that also requires multiple baking soda applications. For a heavy dried crayfish and iru egusi spill, if baking soda alone does not resolve the aroma after three applications, activated charcoal powder (food-grade) left overnight and vacuumed can encapsulate the trimethylamine compounds more effectively.

(3) A diluted white vinegar spray (1:3 with water) applied to the dried area after the final baking soda application, allowed to dry without rinsing, can neutralise the residual short-chain fatty acid volatiles from iru.

(4) Boiled egusi consistency — a boiled-egusi spill is often more liquid and spreads further; fried egusi tends to be more compact and paste-like. Bitter leaf (Vernonia amygdalina — called ewuro in Yoruba, onugbu in Igbo) creates the following differences compared to ugu/pumpkin leaf in a carpet stain: (1) Colour — both bitter leaf and ugu are dark leafy greens with chlorophyll as the primary pigment. The chlorophyll green stain is identical in treatment for both — hydrogen peroxide addresses chlorophyll from both leaf types. (2) Tannin and vernonioside content — bitter leaf contains significant tannin compounds and sesquiterpene lactones (vernoniosides) that give it its characteristic bitter flavour. These tannin compounds can leave a pale brown-yellow tannin mark at the leaf contact zone. Tannin stains are addressed in the dish soap step and partially in the peroxide step. For a heavy bitter leaf contact stain, a diluted white vinegar application (1:3 with water) after the standard treatment can help address residual tannin. (3) Bitter leaf is typically washed extensively (repeated squeezing and water changes) to reduce its bitterness before cooking — this washing process removes much of the vernonioside concentration. In a spill from a finished egusi soup, the bitter leaf has been washed and long-cooked, so its tannin content is significantly lower than in raw bitter leaf.
