Ogbono soup is a staple dish across Nigeria and West Africa, made by dissolving ground ogbono seeds (wild mango seeds, Irvingia gabonensis) in palm oil, then adding water, leafy greens (bitter leaf or spinach), crayfish, stockfish, dried shrimp, and assorted meat or offal. Ground ogbono seeds are very high in fat (approximately 65% fat content by dry weight) and also contain mucilaginous polysaccharides that give the soup its characteristic thick, stretchy, rope-like consistency when hot. A spilled ogbono soup has several challenging components: the extremely high fat from ground ogbono seeds and palm oil (requiring two to three cornflour rounds), the deep orange-red palm oil carotenoid pigment (requiring two hydrogen peroxide rounds), the mucilaginous texture (which must be scraped rather than blotted — blotting stretches the mucilage and spreads it), the stockfish and dried shrimp odour (requiring overnight baking soda), and dark leafy green contact marks from bitter leaf or spinach.

Step 1: Scrape the Mucilaginous Soup — Do Not Blot

The most important handling rule for ogbono soup is to scrape, not blot. The ogbono polysaccharides give the hot soup a stretchy, viscous, rope-like texture — pressing a cloth into hot ogbono soup causes the mucilage to stretch and spread across a larger area rather than being absorbed. Use a spoon edge to scrape the soup off the carpet surface, working in short inward strokes. Collect all meat pieces, stockfish fragments, and leafy green pieces. Do not touch the soup surface with a flat cloth until the bulk of the mucilaginous mass has been scraped away.

Step 2: Blot After Scraping

Once the bulk of the soup has been scraped away, blot the remaining liquid with clean cloths from the outer edge inward. Apply cold water lightly and blot again to dilute the concentrated palm oil and ogbono fat in the remaining liquid. The orange-red palm oil colour is water-insoluble — cold water blotting dilutes it only partially. Do not try to remove the colour with water alone; the hydrogen peroxide step later addresses it. The goal of this blotting stage is to remove as much liquid volume as possible before applying cornflour.

Step 3: Apply Cornflour for Ogbono and Palm Oil Fat (Two to Three Rounds)

Ground ogbono seeds are among the highest-fat food substances that appear in soups. Combined with palm oil (which is itself 100% fat), ogbono soup has one of the highest fat loads of any food spill. Apply cornflour generously over the entire spill area. Allow 20 minutes and vacuum. Apply a second round (20 minutes, vacuum). Test with the paper towel sheen test: press a clean white towel against the carpet — if an orange-tinted grease sheen transfers, a third round is needed. Apply a third cornflour round and vacuum. Three rounds are typically required for a standard ogbono soup spill. Only proceed to wet treatment after the cornflour rounds are complete — wet treatment over residual fat creates an emulsion that drives the fat deeper into the backing.

Step 4: Apply Enzyme Cleaner for Protein

Apply cold water over the stained area and blot. Apply enzyme carpet cleaner (protease) and allow 20 minutes. The enzyme addresses the stockfish protein (dried fish has a very dense protein structure), the crayfish and dried shrimp protein, and any meat protein from the added protein in the soup. The ogbono seed fat residue (any not absorbed by cornflour) is partially emulsified by the dish soap step: follow the enzyme rinse with dish soap solution (one teaspoon per 250ml cold water), blot, and rinse with clean cold water.

Step 5: Treat the Palm Oil Colour

Palm oil contains beta-carotene and alpha-carotene at very high concentrations — it is these carotenoid pigments that give both palm oil and ogbono soup their characteristic deep orange-red colour. On pale or light carpet, palm oil leaves a vivid orange-red stain that is one of the more colour-intensive food pigments. Apply hydrogen peroxide 3% over the stained area and allow 10 minutes. Blot and rinse. Apply a second round and allow another 10 minutes. Two rounds are typically needed for a fresh ogbono/palm oil stain. A stain that has dried before treatment may require a third round. Avoid applying peroxide to dark carpet — test a hidden area first.

Step 6: Treat Stockfish and Dried Shrimp Odour

Stockfish (dried and fermented cod) and dried shrimp (crayfish) both contribute very pungent odours from trimethylamine and other amine volatile compounds. These compounds are among the most persistent food odours in carpet. Apply a mist of equal parts white vinegar and water over the treated area and allow to dry. Apply baking soda generously and leave overnight. Vacuum the next morning. For a spill with a full stockfish piece or a large quantity of dried shrimp, two overnight baking soda applications are recommended.

After the main ogbono soup treatment (cornflour, enzyme, dish soap), apply a targeted hydrogen peroxide round to the specific bitter leaf contact zone. The peroxide oxidises the chlorophyll and polyphenol compounds, lightening the dark green mark. One to two rounds are typically sufficient for bitter leaf contact stains — the pigment concentration from leaf contact is lower than from the concentrated soup itself. Do not rub the bitter leaf pieces across the carpet pile during removal — dragging a bitter leaf piece leaves a green smear track that is harder to treat than the original contact point.
