It contains lamb, ghee, yoghurt, whole spices (cardamom, cloves, cinnamon, cumin), ginger, and garlic. Cleaning steps

Unlike bolognese or marinara where the red comes from tomato lycopene, rogan josh's red colour comes primarily from Kashmiri chilli carotenoids (capsanthin and capsorubin), which are not capsaicin and produce minimal heat but very intense pigment. Both tomato lycopene and chilli carotenoids respond to hydrogen peroxide, so the treatment approach is the same. The carotenoid pigment in Kashmiri chilli is particularly concentrated because these chillies are bred specifically for colour — the redness is more intense per volume than a typical red chilli.
Rogan josh variations
- Traditional Kashmiri rogan josh (no tomato): the stain is purely carotenoid-based. Two to three rounds of hydrogen peroxide for the concentrated Kashmiri chilli colour.
- Modern restaurant rogan josh (with tomato added): adds lycopene to the carotenoid. The stain is both redder and slightly more resistant — treat as a combined carotenoid and lycopene stain. Two to three rounds of hydrogen peroxide.
- Mutton rogan josh (instead of lamb): mutton has a stronger smell than lamb. Three rounds of baking soda may be needed for the mutton fat smell.
- Rogan josh with cream added (restaurant enrichment): adds dairy fat and protein. Cornflour is more important and enzyme dwell extends to 20 minutes for the combined yoghurt and cream protein.
