Asida (عصيدة) is the foundational daily dish of Sudan — a thick, smooth, glossy porridge made from fermented sorghum flour (durra) that is the cultural and nutritional centrepiece of Sudanese home cooking. Asida is eaten at breakfast, lunch, and dinner by Sudanese families across the country; it is served at weddings, funerals, Eid celebrations, and every major life event; and it is a dish that carries deep cultural meaning as the food that has sustained Sudanese communities for centuries. Related versions of asida (fermented or unfermented grain porridge) are eaten across the broader Sahel and Horn of Africa — in Eritrea, Ethiopia, Somalia, Chad, and Niger — though the specific Sudanese version made from fermented sorghum (durra) is distinctive. Traditional Sudanese asida is made from sorghum grain (Sorghum bicolor, the primary staple cereal of Sudan) that has been soaked in water for one to three days to ferment with naturally present lactic acid bacteria, then ground into a fermented paste. The fermentation creates a characteristic sour, complex, lactic flavour in the asida — similar in fermentation type to Ethiopian injera but from sorghum rather than teff, and produced as a thick cooked porridge rather than a flatbread. The fermented sorghum paste is cooked in boiling water while stirring continuously until it becomes extremely thick, smooth, and dense — a semi-solid mound of sorghum porridge with a glossy, elastic surface. Cooking oil or butter is often stirred in during the final minutes to enrich the texture. Physical collection is the first step and the most critical: scoop up as much of the asida mass from the carpet as possible using a large spoon, working from the outside of the fallen mass inward to avoid spreading it further into the carpet pile. Do not press or rub — pressing the asida mass into the carpet forces the gelatinised sorghum starch deeper into the carpet pile weave and makes subsequent removal harder. After collecting the bulk of the mass, gently lift any remaining adherent asida from the carpet surface with a spoon edge, working with the pile direction. Sorghum starch (from the sorghum grain, Sorghum bicolor) gelatinises at approximately 65–75°C during cooking, creating the dense, smooth, cohesive texture of asida. At room temperature, the gelatinised sorghum starch remains a thick, sticky, highly viscous mass that adheres to carpet fibres more strongly than potato starch (which is softer and less adhesive at room temperature). Cold water rinse after physical collection: apply cold water (not hot — heat re-gelatinises any remaining sorghum starch and makes it stickier) to dissolve and flush the residual starch from the carpet pile. Mullah waika is made from dried okra powder — whole okra pods that have been sun-dried until completely desiccated and then ground into a fine, dark green-brown powder. This dried okra powder is stirred into water with tomato, onion, garlic, dried meat (sharmout — dried cured Sudanese beef or camel meat), chili, and spice to form the mullah waika sauce. The defining textural quality of mullah waika (and of all okra preparations, whether fresh or dried) is the okra mucilage — a class of soluble polysaccharides (galactomannans, arabinogalactans, and rhamnogalacturonans, collectively called "okra gum") that form a viscous, gel-like, slightly slimy substance when hydrated. On carpet, the mullah waika okra mucilage creates a characteristic sticky, slightly gelatinous texture at the stain zone that is different from other sauce stains — it is more tenacious and more adhesive than tomato or meat-based sauces because of the okra polysaccharide gel layer. Cold water rinse for the okra mucilage: the okra polysaccharides are water-soluble and can be progressively diluted and flushed from carpet fibres with cold water applications. This lactic acid fermentation aroma is addressed primarily by the baking soda step — baking soda (sodium bicarbonate, alkaline) reacts with the lactic acid in the fermented sorghum residue to produce water and carbon dioxide, neutralising the acid aroma. If sharmout (dried Sudanese beef or camel meat concentrate) was an ingredient in the mullah, its concentrated dried meat aroma is also absorbed into carpet fibres — more persistent than fresh meat protein aroma. Extended baking soda contact time (12 hours overnight) is recommended.

Wheat asida has a neutral, mild grain smell rather than the characteristic sour fermented aroma of sorghum asida. The baking soda treatment for the fermented sorghum lactic acid aroma is therefore less critical for wheat asida — standard treatment without the extended baking soda cycle is sufficient for wheat asida odour. (3) Wheat gluten versus kafirin — wheat flour contains gluten (gliadin and glutenin proteins — the standard wheat protein that protease enzyme addresses very effectively). When the plate was knocked, the entire asida mound plus mullah fell off the plate directly onto the low-pile commercial carpet in the community hall we were using. (2) The impact force of a dropped communal plate of asida — a full tabaq of asida (perhaps 1–2kg of thick sorghum porridge) dropped from plate height onto the carpet will be pressed into the fibres at the impact point with more force than a gentle spill. This means the sorghum starch is pushed into the carpet pile at the impact zone. However, commercial short-pile carpet fibres are denser and closer together, limiting how far the starch can penetrate laterally or deeply. Scrape the impact zone carefully and thoroughly. (3) Whether the stain is permanent depends on treatment speed — sorghum starch on carpet is not inherently permanent if treated correctly and promptly. The stain is NOT permanent if: cold water is applied promptly after physical collection; protease enzyme treatment is applied within the same day; and professional hot-water extraction equipment is used (available to the hall manager via commercial carpet cleaners) to flush the sorghum starch residue from the dense commercial carpet backing. Hot-water extraction (steam cleaning) with a commercial extractor machine is significantly more effective for deep starch removal from commercial carpet than home cold-water treatment alone. (4) The hall manager should be informed: this type of food stain (sorghum starch + okra mucilage) is treatable and should not be permanent if professional cleaning is arranged within 24–48 hours. The key risk factor for permanence is if the stain is allowed to dry fully without treatment and the sorghum starch hardens into the carpet fibres — dried sorghum starch becomes less responsive to cold water treatment.
