Why Sudanese Ful Medames Leaves a Persistent Aromatic Stain

Ful medames (فول مدمس — literally "buried beans") is the quintessential Sudanese breakfast and one of East Africa's most important everyday foods — dried fava beans (broad beans, Vicia faba) that are slow-cooked for hours, traditionally overnight in a sealed dal pot called a dalla, until completely soft and beginning to fall apart into a thick, creamy, dark-toned mash. In Sudan, ful medames is served with a notably generous hand with cold-pressed sesame oil (simsim oil — a signature of Sudanese cooking, where sesame is a major oil crop), lime or lemon juice, a very large quantity of freshly ground cumin (kmoun — Sudanese ful uses substantially more cumin than Egyptian or Lebanese versions), crushed garlic, and salt. Some versions add finely diced tomato and chili, or a soft hard-boiled egg on the side. The Sudanese ful is eaten for breakfast, scooped up with flatbread (kisra — a thin sorghum flatbread, or ordinary wheat flatbread). When Sudanese ful medames is spilled on carpet, the primary stain challenges are: the cold-pressed sesame oil (a polyunsaturated fat that is very fluid at room temperature), the dark overnight bean cooking liquid (a brown, slightly viscous liquid from the Maillard browning of the long-cooked fava bean protein and starch), and the aroma — specifically the highly persistent and penetrating aroma of ground cumin, which is one of the more difficult spice aromas to remove from carpet fibres.

Cold-Pressed Sesame Oil: The Primary Fat Component

Sudanese cold-pressed sesame oil (simsim oil) is the fat used generously in ful medames — typically a tablespoon or more per serving is drizzled over the beans. Sesame oil is predominantly polyunsaturated fat (approximately 45% linoleic acid) and monounsaturated fat (approximately 40% oleic acid), making it a soft, very fluid liquid fat at room temperature. It is lighter in colour than cold-pressed flaxseed oil and has a mild, slightly nutty aroma when cold-pressed. On carpet, the sesame oil from ful medames wicks readily into the pile because of its low viscosity. Apply dry cornflour immediately — two rounds for a serving of ful medames with the standard sesame oil dressing. The lipase enzyme step then addresses the residual sesame oil. Note that sesame oil, being highly polyunsaturated, is prone to oxidative rancidity on carpet over time (the linoleic acid undergoes autoxidation to form aldehydes and ketones with an unpleasant rancid odour). This is a secondary reason why prompt treatment is important for a sesame oil spill — beyond the immediate stain, an untreated sesame oil residue on carpet can develop an increasingly unpleasant rancid smell over days and weeks as the unsaturated fat oxidises.

Overnight Fava Bean Cooking Liquid

The overnight-cooked fava beans in Sudanese ful produce a concentrated, dark brownish cooking liquid — significantly darker than short-cooked beans — because the long cooking (8–12 hours in a sealed dalla pot) allows extensive Maillard browning of the bean protein and starch in the hot liquid. The fava bean cooking liquid is therefore a dark amber-brown colour, similar to concentrated meat or vegetable broth. On light carpet, this dark cooking liquid (which the beans are served in) creates a brown-amber stain at the contact zone. The protease enzyme step addresses the soluble fava bean protein in the cooking liquid; the hydrogen peroxide step (15 minutes on light carpet) addresses the residual Maillard brown colour. Fava bean skins in Sudanese ful medames are typically either partially removed during soaking or the skinless split fava beans (ful nabat) are used, meaning the skin-based staining is less significant than in dishes using whole unskinned fava beans. If the ful was made from whole skin-on fava beans, the skin pigment (a pale tan-grey from the fava bean hull phenolics) is the same general treatment as any legume skin pigment: enzyme and hydrogen peroxide.

Cumin Aroma: One of the Most Persistent Spice Odours on Carpet

The cumin aroma in Sudanese ful medames deserves specific attention because cumin is particularly problematic on carpet compared to most other spices. Cumin (Cuminum cyminum) contains cuminaldehyde (4-isopropylbenzaldehyde) as its dominant volatile compound — a heavy, penetrating aldehyde with a characteristic warm, earthy, slightly musty aroma. Unlike lighter, more volatile aromatic compounds (such as menthol from mint, or estragole from tarragon), cuminaldehyde is a heavier, slower-evaporating molecule that bonds more tenaciously to carpet fibres, particularly synthetic fibres. Sudanese ful uses a significantly larger quantity of ground cumin than Egyptian or Lebanese ful versions — the cumin is applied generously to the serving bowl. When this cumin-heavy ful falls on carpet, the cuminaldehyde deposits onto the pile fibres in the sesame oil carrier (oil is an excellent aroma-carrier that helps the cuminaldehyde penetrate carpet fibres). The overnight baking soda step is the primary treatment for cumin aroma, but unlike lighter spice aromas that respond well to 12 hours, cuminaldehyde requires a minimum of 16–18 hours of baking soda contact for meaningful reduction. For a heavy cumin spill, consider applying a second round of fresh baking soda after vacuuming the first round. Ventilation of the room during and after cleaning also helps dissipate the volatile cumin compounds.

Ful medames spill on car seat fabric (polyester/nylon blend) versus home carpet: (1) Key differences in car seat fabric — car seat fabric is typically: (a) tightly woven with a shorter pile or no pile (unlike carpet), meaning liquid penetrates through to the foam cushion underneath faster; (b) polyester or polyester-nylon blend, which is hydrophobic (water-resistant) at the individual fibre level but the weave is open enough for liquid to soak through; (c) often difficult to remove for washing — car seats typically cannot be removed for immersion washing in a home environment. (2) Speed is even more critical in a car — the enclosed car environment concentrates the cumin aroma rapidly. The aroma of spilled ful in a hot parked car (ambient temperature of 50–60°C in Australian summer) will intensify quickly. If the spill happens while driving, apply dry absorbent (any absorbent material available in the car — tissues, napkins, clothing) immediately to the seat fabric and floor mat.
