What Swiss Rösti Leaves on Carpet

Rösti (also spelled rosti — a traditional Swiss German potato pancake that is strongly identified with German-speaking Switzerland, particularly the cantons of Bern and Zurich) is one of Switzerland's most iconic dishes. It is made from grated potato — either raw-grated (Rohrösti, which releases more starch and has a crisper exterior) or pre-boiled potato grated cold from the day before (Gschwellti rösti, which is softer and more cohesive). The grated potato is formed into a flat, round pancake shape and fried in a generous amount of clarified butter (Butterschmalz — butter from which the milk solids have been removed) in a heavy iron or non-stick pan until a deep golden-brown crust forms on the bottom, then flipped and the second side crisped. Step 1: Remove Rösti Pieces

Collect the rösti pieces with a spoon. Each piece has a golden-brown crispy crust (which crumbles on contact, releasing caramelised potato fragments) and a soft potato interior that releases starch on carpet contact. The clarified butter in the rösti is immediately apparent — the rösti pieces feel greasy and leave an oil transfer on any surface they touch. If a fried egg was served alongside or on top of the rösti (a traditional Bernese combination), collect egg pieces and treat the egg separately.

Step 2: Blot the Clarified Butter and Potato Starch

Blot from the outer edge inward. The clarified butter in rösti transfers immediately to carpet as a clear, slightly yellowed fat. Unlike regular butter, clarified butter has had its milk solids removed, so it does not have the off-white opacity of regular butter stain — it transfers as a translucent oil. Apply cold water and blot twice more. The grated potato interior also releases white potato starch on carpet contact — this is visible as a dull white residue at the edges of the contact zone.

Step 3: Apply Cornflour for Clarified Butter (Two Rounds)

Apply cornflour generously, allow 20 minutes, vacuum. Apply a second round. Clarified butter (Butterschmalz) is essentially 100% pure milk fat — with the water and milk solids removed during clarification, it is a denser, more concentrated fat than regular butter. This makes clarified butter stains more persistent on carpet than regular butter stains of the same volume, as there is no water content to dilute the fat. Two cornflour rounds are standard for rösti to ensure thorough fat absorption. After the second round, the remaining stain will be the golden-brown Maillard colour from the caramelised potato surface.

Step 4: Apply Enzyme Cleaner for Potato Starch

Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. The primary enzyme target in a rösti spill is the potato starch — amylase enzyme breaks down the gelatinised potato starch that has been released from the grated potato onto carpet. The raw-grated (Rohrösti) version releases significantly more starch than the pre-boiled version, as the starch has not been pre-gelatinised by boiling. Potato contains negligible protein — protease enzyme activity on the potato component is minimal. Follow with dish soap to emulsify remaining clarified butter and rinse.

Step 5: Treat Golden-Brown Maillard Colour

Apply hydrogen peroxide 3%, allow 10 minutes, blot and rinse. The golden-brown colour from the caramelised potato crust (from Maillard reaction of potato reducing sugars and amino acids in the hot clarified butter) is the primary colour stain of rösti on pale carpet. This Maillard brown is a somewhat subtle colour stain compared to turmeric or berry — it appears as a warm golden-tan rather than a vivid colour. One peroxide round is typically sufficient. On cream or white carpet, the Maillard brown may be slightly more visible and warrant a second round after full drying.

Step 6: Treat Butter Aroma Overnight (If Needed)

Rösti has a mild, pleasant aroma — primarily clarified butter (nutty and clean, without the milk-protein lactic note of regular butter), caramelised potato, and onion if the rösti contained onion or leek (a common variation, particularly in German-speaking Switzerland). The aroma is significantly milder than strongly spiced dishes and often does not require a baking soda treatment for a small spill. For a larger rösti spill or one that included onion, one overnight baking soda application addresses any remaining butter and onion aroma.
