The dish consists of pieces of fatir (a flat, layered tandoor-baked bread) broken into a deep bowl and soaked in a liquid made by dissolving qurut — hard dried balls of fermented and salted soured milk or whey — in water. The resulting liquid (obi non or "bread water") is intensely sour, salty, and rich with casein protein from the fermented dairy. The soaked bread is topped with a salad of thinly sliced raw onion, cucumber, tomato, fresh herbs (dill, coriander, parsley), and dressed with cottonseed or sunflower oil. When qurutob spills on carpet, it creates a stain unlike any other dairy spill: the qurut liquid is far more acidic than fresh yoghurt (pH approximately 3.0–3.5 vs 4.0–4.5 for yoghurt) due to the extended fermentation and concentration process, and the casein protein concentration is much higher than fresh dairy products. Qurut Dissolved Liquid: Concentrated Casein and Lactic Acid

Qurut is produced by heating soured milk or yoghurt to expel whey, then salting the curds heavily and drying them into hard balls — a process that concentrates the casein, lactic acid, and salt into a very small volume. When dissolved in water for qurutob, the resulting liquid has a much higher concentration of lactic acid than fresh yoghurt. The elevated lactic acid (pH approximately 3.0–3.5) is the primary concern for carpet: at this acidity, some synthetic carpet dyes (particularly blue and green azo dyes on nylon) can shift over time if the liquid is left to dry and concentrate further as the water evaporates. The treatment priority for the qurut liquid is therefore: (1) blot immediately to remove as much liquid as possible before it can dry and concentrate; (2) cold water dilution and blotting to reduce the acid concentration; (3) a very dilute sodium bicarbonate solution (1 teaspoon per litre of water) to neutralise the lactic acid — note this is one of the few food stain scenarios where a brief, very dilute alkaline rinse is appropriate; (4) protease enzyme for 15 minutes for the casein protein; (5) final cold water rinse.

Flatbread Starch and Vegetable Oil Components

The fatir flatbread that soaks in the qurut liquid contributes baked wheat starch to the spill. Baked starch (from flatbread) is partially gelatinised from the baking process and then re-hydrated in the qurut liquid — when this starch-and-qurut-liquid mixture lands on carpet, the starch acts as a binder that can make the stain feel stiff and sticky as it dries. The bread starch is addressed by the warm-water step: after the casein and acid treatments, a brief warm water application (40°C) helps dissolve and lift the baked starch residue. The vegetable oil dressing (cottonseed or sunflower oil) is approximately 15–20% saturated fat — much lower than lamb fat or coconut fat — meaning it sets very slowly at room temperature and the dry-absorption step is less urgent than for animal fats. Apply cornflour after the bread removal step to absorb the surface oil, then lipase enzyme for the remaining oil after the protein and acid steps are complete.

Onion, Tomato, and Herb Components

Qurutob is topped with raw onion (thinly sliced), tomato, cucumber, and fresh herbs. Tomato contributes lycopene (a red carotenoid) and citric acid to the stain. Lycopene responds to 3% hydrogen peroxide — apply after all enzyme and acid-neutralisation steps are complete. Raw onion contributes quercetin (a yellow flavonoid pigment) and fructans (sugars) — the fructans are water-soluble and removed by the cold water blotting step; quercetin at low concentration typically does not leave a visible stain on most carpet colours. Fresh herb chlorophyll can leave a faint green pigment on light carpet — hydrogen peroxide also addresses this. Cucumber and fresh herbs contribute mainly water and mild pigments that are unlikely to be primary stain concerns. The dominant stain agents in qurutob are the qurut liquid (casein, lactic acid) and any vegetable oil from the dressing.

Why does qurutob stain carpet differently from regular yoghurt or cheese?

Qurut is dramatically more concentrated than fresh dairy products. Regular yoghurt has approximately 1–2% lactic acid content and 3–5% casein protein. Qurut, after the long fermentation, salt-pressing, and drying process, has a much higher lactic acid concentration per unit of dissolved solid — when dissolved to make qurutob liquid, the resulting pH (approximately 3.0–3.5) is noticeably more acidic than yoghurt (pH 4.0–4.5). This lower pH means the acid acts on carpet dye faster. Additionally, qurut has high salt content from the salting-during-drying process — the dissolved salt increases the ionic strength of the liquid, which can affect how carpet dyes interact with the fibre substrate. Fresh yoghurt is unlikely to cause visible dye shift on most carpet types even if left for several hours; qurutob liquid should be treated promptly.

I used shop-bought labneh (strained yoghurt) to make a shortcut version — is the stain the same?

Commercial labneh is strained yoghurt (concentrated by removing whey through straining through cloth), which has a higher casein and fat content than regular yoghurt but is not fermented and dried to the same extent as qurut. Labneh has a pH of approximately 4.0–4.3 — slightly higher than qurut dissolved in water. A labneh-based shortcut qurutob is less aggressive on carpet dyes than authentic qurut-based qurutob, but the treatment steps are the same: cold water blotting, dilute bicarbonate rinse, protease enzyme. Labneh also has higher fat content than fresh yoghurt, so the lipase enzyme step is more important for a labneh spill than a fresh-yoghurt one.

The qurutob soaked the bread completely, and the soggy bread embedded in carpet fibres — how do I remove it?

Soggy flatbread embedded in carpet is mechanically tricky because the wet bread tears apart rather than lifting cleanly. Use blunt tools (spoon, butter knife) to scoop up as much of the soggy bread mass as possible without pressing it further into the pile. Once the bulk is removed, the remaining paste of bread starch and qurut liquid is treated chemically: blot the excess liquid first, then apply warm water (40°C) to re-liquefy the gelatinised starch and blot repeatedly. The protease enzyme step follows to address the casein. If soggy bread has dried and hardened in the carpet, it must be re-hydrated first: apply warm water and allow 10 minutes of soak time before attempting to break it up and lift it.

Is the cottonseed oil in qurutob harder to remove than other vegetable oils?

Cottonseed oil (paxta moyi, the traditional Tajik cooking and dressing oil) is approximately 26% saturated fat, which is lower than palm oil (50%), beef fat (45%), or even olive oil-based dressings — it remains liquid at room temperature and does not solidify in carpet fibres. Cottonseed oil stains are among the more manageable vegetable oil stains precisely because of their low saturation: the lipase enzyme can access and break down the unsaturated fatty acid chains effectively. The challenge with cottonseed oil specifically is that it contains naturally occurring gossypol (a yellow pigment from cotton plants) in trace amounts — highly refined cottonseed oil has this largely removed, but cold-pressed or less-refined varieties may leave a very faint yellow tinge. This responds to 3% hydrogen peroxide if visible after the lipase enzyme step.
