Why Cawl Creates a Fatty, Aromatic Carpet Stain

Cawl (pronounced "cowl") is the national dish of Wales — a hearty, slow-simmered stew or thick broth made with lamb or sometimes beef, alongside traditional Welsh winter vegetables: leeks, swede (rutabaga), parsnip, carrot, and potato. Traditionally simmered over a peat fire for several hours and sometimes served in two courses (broth first, then meat and vegetables), cawl is an intensely flavoured, deeply coloured golden-amber broth rich in rendered lamb fat, caramelised bone-collagen gelatin from the long simmer, and the sulphur-rich aromatics of leek and onion. A cawl spill deposits rendered lamb fat (which is higher in saturated fat and solidifies more readily than chicken fat), a dark golden-brown bone broth with caramelised meat proteins, leek and onion aroma compounds, and vegetable starches from the potato and swede.

Lamb Fat: The Dominant Stain Component

Lamb fat (tallow) is substantially more saturated than chicken or pork fat — it contains approximately 50–55% saturated fatty acids (primarily palmitic and stearic acid) compared to approximately 30–35% for chicken fat. This higher saturation means lamb fat has a higher melting point and resolidifies more quickly once the hot cawl cools on the carpet. If the cawl was still hot when it spilled, the lamb fat is mobile and penetrates carpet pile; as it cools, it sets into a white-yellow waxy solid. Apply dry cornflour or baking soda immediately across the full broth zone. For a hot cawl spill, the warm fat is still mobile and the absorbent works rapidly — act within the first 2–3 minutes. For a partially cooled spill where the fat has begun to set, the absorbent still works but requires two full rounds of 20 minutes each. Then apply a broad-spectrum enzyme cleaner (lipase + protease + amylase) with a 25-minute dwell time.

Bone Broth and Caramelised Gelatin Colour

Cawl is distinguished from simple broths by its long simmering time — traditionally several hours — which converts collagen from the lamb bones and connective tissue into gelatin. This gelatin creates a viscous, lightly sticky broth that clings to carpet fibres more tenaciously than a thin stock. The Maillard reaction during long simmering also creates caramelised amino acid compounds that give the broth its deep golden-amber colour. On light carpet, the golden-brown broth creates a visible amber stain. After the enzyme step and cold water rinse, apply 3% hydrogen peroxide for 15 minutes on light or cream carpet to address the golden-brown Maillard colour. The gelatin component of the broth is addressed by the protease enzyme step (protease digests gelatin into small peptides).

Leek and Onion Aroma Compounds

Leek is a defining ingredient of cawl and of Welsh cuisine generally. Leek, like its allium relatives onion, garlic, and chive, contains sulphur-based volatile compounds (thiosulfinates, propanethiol S-oxide) that are released when the vegetable is cut and cooked. In a long-simmered cawl, these leek sulphur compounds diffuse through the entire broth. When the broth contacts carpet, the leek aroma compounds bind to carpet fibres and contribute a pungent, persistent allium odour to the stain zone. An overnight baking soda application after the enzyme and rinse steps is the primary treatment for the leek aroma. A diluted white vinegar rinse (1:5 vinegar to water) before the baking soda step helps neutralise the alkaline sulphur compounds and reduce aroma persistence.

Potato, Swede, and Vegetable Starch

In a long-simmered cawl, the potato and swede often partially dissolve into the broth, releasing starch and thickening the liquid. Swede (rutabaga) also contains glucosinolates — sulphur-containing compounds that contribute a mild, earthy, slightly bitter aroma. The combined vegetable starch from potato and swede is addressed by the amylase enzyme step. The carrot in cawl adds beta-carotene (orange carotenoid) to the broth in small amounts. For a concentrated, long-simmered cawl with significant vegetable breakdown, the broth may be thick and starchy — the amylase enzyme step is particularly important for this version.

The bowl of broth that spilled was the first-course thin broth only, without the meat or root vegetables in it. How does a cawl broth-only spill (the skimmed first-course liquid) differ from a full cawl spill that includes lamb pieces, potato, leek, and swede?

A skimmed cawl broth may actually create a more visible amber colour stain on light carpet than a full cawl serving, because the fat that would have diluted the colour has been removed. The hydrogen peroxide step (15 minutes on light carpet) is equally or more important for the skimmed broth version. (3) No lamb protein chunks — without lamb pieces, there is no large pork or lamb muscle protein to remove. The protease enzyme step is still needed for the dissolved protein in the broth (gelatin, small peptides from the long simmer) but is less critical than for a full cawl serving. (4) No potato or swede starch chunks — without the root vegetables, there is no bulk starch chunk to collect. The amylase step addresses dissolved starch in the broth from the vegetable contact during simmering, which is present in both courses. (5) Same leek aroma treatment — leek compounds infuse the broth thoroughly during simmering and are equally present in both the first-course broth and the full serving.

The cawl was made with the traditional Pembrokeshire version, which uses salt marsh lamb — lamb that has grazed on the coastal salt marshes of west Wales. Salt marsh lamb is known for its distinctive mineral and slightly briny flavour compared to upland lamb. The cawl also had large amounts of sea salt added during cooking. Salt marsh lamb cawl (Pembrokeshire coastal) versus standard upland lamb cawl on carpet: (1) Saltier broth — the additional sea salt from the salt marsh lamb and the generous salting creates a saltier broth. High salt in the broth increases hygroscopic behaviour — the stain zone will feel damp more readily in humid conditions as the salt absorbs moisture from the air. After treatment, ensure thorough rinsing to remove dissolved salt from the carpet fibres, as salt residue causes ongoing damp-feeling and re-soiling. (2) Slightly different fat flavour compounds — salt marsh lamb has a distinctive flavour attributed to the herbs and plants of the salt marsh (sea lavender, samphire, sea purslane) that the sheep graze on. These aromatic compounds from the diet are present in the lamb fat in small concentrations. In practice, this makes no difference to the stain removal chemistry — lamb fat from salt marsh lamb is treated identically to upland lamb fat. (3) No additional colour — the "marine" quality of salt marsh lamb does not impart a different broth colour. The golden-amber colour of the cawl is from the same Maillard reaction compounds as standard lamb cawl. (4) Brine absorption vs. carpet — the slight brininess of the lamb and the high-salt broth means the broth is osmotically saltier than standard cawl. This affects how the broth moves through the carpet pile (higher osmotic pressure, slightly different capillary behaviour) but does not materially change treatment. (5) Treatment sequence unchanged — salt marsh lamb cawl is treated with the same sequence as standard lamb cawl: absorbent, enzyme, cold water rinse (critical for thorough salt removal), hydrogen peroxide on light carpet, overnight baking soda.

The cawl contained a substantial amount of laverbread (bara lawr) — pureed cooked seaweed (Porphyra umbilicalis, the same seaweed as Japanese nori) that is a traditional Welsh ingredient sometimes added to cawl to thicken it. The laverbread gave the cawl a dark green-black colour in the broth. Does laverbread in cawl significantly change the stain profile compared to standard cawl?

Cawl with laverbread (bara lawr/seaweed puree) versus standard cawl on carpet: (1) Dark green-black colour from laverbread — laverbread is a dark green-black puree of cooked Porphyra seaweed. It contains chlorophyll (green), phycoerythrin (red-brown), and phycocyanin (blue) pigments from the seaweed, which combine to create the characteristic very dark green-black colour of laverbread. Added to cawl broth, laverbread turns the broth a dark murky green-black rather than the standard golden amber. On light carpet, a cawl with substantial laverbread creates a distinctively dark and visible stain compared to standard cawl. (2) Chlorophyll staining — the chlorophyll from laverbread is a relatively stable green pigment on carpet. After the enzyme step, apply 3% hydrogen peroxide for 20–25 minutes on light carpet (extended versus the standard 15 minutes for regular cawl broth) to address the laverbread-darkened broth pigment. (3) Seaweed compounds — laverbread contains alginic acid (alginate) and other polysaccharides from the seaweed cell walls. Alginate is a gel-forming compound that adds further viscosity to the laverbread-thickened cawl. The amylase enzyme step does not fully digest alginate (alginate requires a specific lyase enzyme). However, the physical rinse and vacuum step after treatment mechanically removes most of the alginate residue — it does not bond irreversibly to carpet fibres. (4) Additional iodine — seaweed is very high in iodine. Iodine compounds from laverbread in the cawl could, in theory, create a faint yellow-brown iodine mark on very light carpet. The hydrogen peroxide step reduces iodine compounds. (5) Marine aroma from laverbread — laverbread has a distinctive sea-aroma from the dimethylsulphide (DMS) and other marine volatile compounds in the seaweed. The overnight baking soda application addresses both the laverbread marine aroma and the leek sulphur aroma simultaneously.
