Churrasco Dropped on Carpet: Removing Brazilian Grilled Meat Fat and Chimichurri Stains

Churrasco is the Brazilian tradition of grilling large cuts of beef and pork on long metal skewers over charcoal or wood fire. The most iconic cuts are picanha (rump cap — a tender cut with a very thick external fat cap that renders down and bastes the meat during grilling), costela (beef ribs), fraldinha (flank steak), and linguiça (Brazilian pork sausage). The meat is seasoned simply — most traditionally only with coarse rock salt. It is served at the table with chimichurri sauce (a loose paste of fresh parsley, garlic, oregano, red wine vinegar, olive oil, and chilli flakes) and farofa (toasted cassava flour, sometimes with butter and bacon).   4. Mix one teaspoon of dish soap in one cup of cold water. Apply across the stain zone and blot to emulsify the remaining fat and address the char-fat matrix.
  5. If chimichurri sauce also spilled: apply cornflour to the chimichurri zone first (for the olive oil), then include it in the dish soap and enzyme cleaner steps.
  6. Apply enzyme cleaner for the meat protein. Allow 20–25 minutes dwell time, then blot and rinse with cold water.
  7. For char carbon deposits: apply isopropyl alcohol to a cloth and blot the char marks after the soap and enzyme steps — alcohol dissolves the carbon-fat matrix.
  8. For chimichurri parsley chlorophyll (green spots) on light carpet: apply 3% hydrogen peroxide, allow 5 minutes, blot, and rinse.
  9. For red wine vinegar anthocyanin tinge (if red wine vinegar in the chimichurri has coloured the carpet): hydrogen peroxide addresses this at the same step.
  10. Rinse with cold water and blot dry.

Linguiça paprika adds an orange tinge

Brazilian linguiça sausage is seasoned with paprika, which contains capsanthin (orange-red carotenoid). If the dropped item was linguiça, expect a faint orange tinge in the fat zone from the paprika oil. This orange tinge responds to hydrogen peroxide — include the full fat contact zone in the hydrogen peroxide step, not just the meat-contact point.

Chimichurri sauce: separate stain profile

Chimichurri is a loose sauce of extra-virgin olive oil, red wine vinegar, fresh parsley, garlic, oregano, and chilli flakes. It has three stain components that each need a different treatment: olive oil fat (cornflour first — treat together with the meat fat zone), parsley and herb chlorophyll (hydrogen peroxide on light carpet — the parsley in chimichurri is present in high concentration and can leave a noticeable green stain), and red wine vinegar (the acetic acid is mildly corrosive to acid-sensitive wool dyes — apply cold water to dilute the acid quickly on wool carpet, and hydrogen peroxide addresses any anthocyanin from red wine vinegar on light synthetic carpet). If the chimichurri spilled separately from the meat — pooled in the serving bowl that tipped, for example — treat it as a combined olive oil and herb spill with the treatments above.
