Why Embutido Stains Are More Complex Than Plain Pork Mince

A spilled embutido slice delivers several stain agents that plain pork mince does not. The chorizo de bilbao component is coloured with annatto (atsuete) — the same deep red-orange carotenoid pigment found in kare-kare sauce — and this pigment is the dominant chromophore in any embutido spill. Raisins contribute concentrated condensed tannins and anthocyanins from the dried grape skin. Both the annatto and raisin tannins resist cold water and detergent alone and require oxidisation with hydrogen peroxide. The pork fat component is high because ground pork (especially from a fatty shoulder blend) carries significantly more lipid per gram than chicken or lean beef.

Step 1 — Immediate Blotting and Piece Removal

Remove any meatloaf pieces, raisin pieces, or egg slices with a spoon or butter knife. Do not press them into the carpet — lift them cleanly. Then blot the liquid component with a clean cloth, pressing firmly without rubbing. The embutido cooking juice is the immediate priority because it contains both the annatto pigment and the raisin tannins in solution — the longer they remain wet on the carpet, the deeper they wick into the pile and backing.

Step 2 — Cold Water Rinse

Apply cold water only. Hot water sets the egg protein from the hard-boiled egg component and accelerates annatto carotenoid polymerisation into the fibre. Work from the outer edge inward to contain the spread. Blot out the rinse water before the next step — do not allow the stain area to become waterlogged, as excess water drives the pork fat deeper into the carpet backing.

Step 3 — Baking Soda Paste for Pork Fat

Pork fat is the largest volume component in an embutido spill. Apply a thick baking soda paste to the full stained area and work gently into the pile. Baking soda draws the fat upward into the powder matrix as it dries. Leave for 20 to 25 minutes, then vacuum thoroughly. If cheese was in the recipe, the dairy fat component also responds to this step. Do not skip the baking soda stage — removing fat first prevents the subsequent soap and enzyme steps from having to work through a thick fat barrier.

Step 4 — Dish Soap Emulsification

Dilute one teaspoon of plain dish soap in 250ml of cold water and apply to the treated area. Dish soap emulsifies residual pork and chorizo fat that the baking soda did not fully extract. It also helps lift the annatto pigment partially from the fibre surface before the hydrogen peroxide step. Work in gently, allow two to three minutes, blot out, and rinse with cold water. Do not leave soap residue — rinse thoroughly.

Step 5 — Protease Enzyme Cleaner

Apply protease enzyme cleaner (diluted per label with cold water) to address the egg protein from the hard-boiled egg and meatloaf egg binder, the pork protein residue, and the casein from any cheese component. Allow a 10 to 12 minute dwell at room temperature. Blot out and rinse with cold water. The enzyme step also helps break down the protein matrix holding the annatto pigment to the carpet fibres, making the subsequent hydrogen peroxide step more effective.

Step 6 — Hydrogen Peroxide for Annatto and Raisin Tannins

This is the critical step for embutido. Apply 3% hydrogen peroxide to the full stained area and allow 8 to 10 minutes dwell. Annatto achiotein is an oxidisable carotenoid — H2O2 breaks the conjugated double-bond system that gives it the red-orange colour. Raisin condensed tannins and anthocyanins are also oxidised by H2O2. Test on a hidden section of carpet first, especially on coloured or wool carpet. Blot out, rinse with cold water. If the orange-red or brownish-purple tint persists, apply a second H2O2 pass after the area has dried partially.

Annatto Pigment Sets Faster Than Turmeric — Act Within 10 Minutes

Annatto (achiotein) behaves similarly to turmeric on carpet: once it dries into the fibre it becomes significantly more resistant to treatment. Unlike turmeric, annatto does not fluoresce under UV light, making it harder to assess full removal visually. The key difference from kare-kare is that in embutido the annatto is already cooked into the chorizo fat — it arrives as a fat-soluble pigment rather than a water-based sauce. The baking soda fat extraction step is therefore more important than with kare-kare.

Step 7 — Carrot Carotenoid Touch-Up

If a faint orange tint remains after the annatto H2O2 treatment, it may be carrot carotenoid (beta-carotene). Beta-carotene is less persistent than annatto achiotein and typically responds to a further H2O2 application or to repeated dish soap emulsification. Check the treated area under natural or bright artificial light after the carpet dries — residual carotenoid discolouration is easier to see once the area is fully dry.

Step 8 — Baking Soda Dry Finish

After all liquid treatment steps, apply dry baking soda over the entire treated area. Leave for 20 to 30 minutes to absorb residual moisture and any trace fat compounds. Vacuum thoroughly, then allow the carpet to dry fully with ventilation before placing furniture on the treated area.

Wool Carpet: Limit Hydrogen Peroxide Contact Time

On wool carpet, reduce the H2O2 dwell to 4 to 5 minutes and rinse promptly. Wool is naturally off-white to cream in colour and may appear slightly brighter after H2O2 application — this usually evens out as the carpet dries. For high-value wool rugs, test H2O2 on a hidden section and consider consulting a specialist for the annatto component.

Vinegar can actually set some protein-based stains if the pH drops too far, so avoid it on embutido which has a significant egg and pork protein component.

The orange tint is mostly gone but there is still a faint brown ring. What is that?

The brown ring is likely dried raisin tannin at the outer edge of the spill, or possibly the cooking juice with pork fat that wicked outward before blotting.
