Treatment Sequence for Escabeche

  4. Rinse baking soda with cold water. Blot dry.
  5. Apply enzyme cleaner (protease for fish protein and batter protein, lipase for frying oil, amylase for cornstarch gel if available). Leave 22 minutes with damp cloth cover. An enzyme product that includes amylase (starch-digesting enzyme) is especially useful for escabeche because of the cornstarch batter.
  6. Rinse enzyme cleaner with cold water. Blot dry.
  7. Apply 3% hydrogen peroxide. Leave 8–10 minutes. Blot. Inspect: caramel and melanoidin pigments from the soy-sugar sauce require 2–3 rounds. Apply second round immediately if brown tint remains; allow 8–10 minutes per round. Also addresses bell pepper capsanthin and carrot beta-carotene in the same rounds.
  8. Apply white vinegar solution (1 part white vinegar, 4 parts cold water) — shorten contact time to 4–5 minutes because the cooking vinegar in the escabeche sauce has already partially neutralised the fish TMA. Blot dry.
  9. Rinse with cold water. Blot dry. Air-dry with ventilation.
