Do Not Apply Baking Soda Directly to Ube Stain — Alkali Turns Purple to Green-Grey

Ube anthocyanin is strongly pH-sensitive. In acidic conditions (pH below 7) it is pink-red; at neutral pH it is purple-violet; in alkaline conditions (pH above 8) it shifts toward blue, then green-grey or brown. Baking soda (sodium bicarbonate, pH 8.3) applied directly to the ube zone will turn the vivid purple colour into an unpleasant greenish-grey before it is bleached. Apply baking soda only to the coconut cream fat zone — away from the ube stain. Treat the ube zone with cold water rinse and enzyme first, then H2O2, before any baking soda contact.

Step 1 — Remove Food Components by Zone

Remove the bilo-bilo rice balls, tapioca pearls, ube pieces, jackfruit, and banana chunks. The glutinous rice balls will be very sticky — remove them before they cool further and adhere more firmly. Blot the coconut cream liquid from the outer edge inward.

Step 2 — Cold Water Rinse Across All Zones

Apply cold water to the full stain area. Cold water begins diluting the coconut cream, loosening the starch residues, and flushing the ube anthocyanin while keeping it at near-neutral pH. Blot out thoroughly. The ube zone will remain visibly purple or pink after this step — that is expected.

Step 3 — Baking Soda ONLY on the Coconut Cream and Sugar Zones (Not the Ube Zone)

Apply baking soda paste to the coconut cream fat zone and the sugar syrup zone. Avoid the ube stain zone entirely — the alkalinity will shift the anthocyanin colour unfavourably. Leave for 20 to 25 minutes, vacuum. The coconut fat is high-load (same as laing) and requires a generous baking soda application.

Step 4 — Warm Water for Glutinous Rice and Tapioca Starch

Apply warm water to the bilo-bilo and tapioca zones. Glutinous rice starch re-hydrates with warm water and becomes mobile enough to blot. Tapioca starch also re-liquefies with warmth. Blot out the starch residue. If amylase enzyme is available, apply it now with warm water dilution and allow 10 minutes dwell — amylase breaks down the waxy starch more effectively than warm water alone.

Step 5 — Protease Enzyme for Banana Tannins and Coconut Protein

Apply protease enzyme cleaner using cold water dilution to the banana zone and the broader stain area. This addresses the banana tannin compounds and the minor protein content of the coconut cream. Allow 12 minutes dwell. Blot out and rinse cold.

Step 6 — Dish Soap for Coconut Cream Fat Emulsification

Apply diluted dish soap to the coconut cream fat zone. Emulsifies the residual lauric acid saturated fat after baking soda absorption. Allow two to three minutes, blot and rinse warm.

Step 7 — Hydrogen Peroxide for Ube Anthocyanin and Jackfruit Pigment

Apply 3% hydrogen peroxide to the ube stain zone and the jackfruit zone. H2O2 oxidises the anthocyanin chromophore — this breaks the colour-bearing molecular structure of the ube pigment and lightens it toward colourless. Allow 8 to 10 minutes dwell. Blot and rinse cold. One to two passes is typical for ube anthocyanin. After the H2O2 step has been completed, it is safe to apply baking soda dry finish to the full treated area, as the anthocyanin chromophore is now destroyed.

Step 8 — Baking Soda Dry Finish (Now Safe Across All Zones)

After H2O2 has destroyed the ube anthocyanin, apply dry baking soda across the full treated area including the former ube zone. Leave for 20 to 30 minutes. Vacuum and ventilate.

The ube anthocyanin has shifted to its alkaline colour form — this is a reversible colour change for anthocyanins in some conditions, but it complicates the treatment. Apply cold water to the green-grey area to rinse out as much of the baking soda residue as possible, restoring the pH toward neutral. The colour may shift back toward purple-pink. Then apply 3% H2O2 to the area — H2O2 will bleach the anthocyanin regardless of which colour form it is in. The key is to apply H2O2 before the alkaline-shifted form fully dries into the fibres.

Is ube anthocyanin harder to remove than beet or purple cabbage?

Similar difficulty. All three are anthocyanin pigments and respond to H2O2 treatment. Ube anthocyanin is slightly more concentrated in the flesh than purple cabbage, but less intensely pigmented than beetroot. The key distinction for ube is the coconut cream context — the fat from the coconut cream can trap the anthocyanin in the pile, making it harder to reach with H2O2. Remove the fat first (baking soda, dish soap) before H2O2 for the best result.

Why is glutinous rice starch so much more adhesive than regular rice starch?

Regular rice starch is a mixture of amylose (straight-chain starch, about 20 to 30 percent) and amylopectin (branched-chain starch). Glutinous (waxy) rice starch is almost entirely amylopectin — 99 percent or more. Amylopectin forms a much more cohesive, stretchy gel when gelatinised and does not retrograde (recrystallise) as readily as amylose-containing starch. This means glutinous rice starch stays sticky and flexible at room temperature rather than becoming dry and crumbly like regular rice starch — making the rice balls bond to carpet fibres more firmly.

Does the jackfruit (langka) in the ginataang create a significant stain?

Minor. Ripe jackfruit flesh is yellow-orange from beta-carotene and other carotenoid pigments. It can leave a faint yellow-orange smear at the landing point. H2O2 applied for the ube anthocyanin will simultaneously address any jackfruit carotenoid chromophore. The jackfruit flesh also releases a very sticky, latex-like sap — this is jackfruit latex (similar to fig latex) that can bond to fibres. If you feel a sticky, rubber-like residue at the jackfruit contact point after drying, it is the latex — warm water plus dish soap emulsification is the appropriate treatment.
