Treatment Sequence

  1. Blot the monggo stew from the outside inward. The soup is thick and slow-spreading. Remove visible mung bean solids with a spoon.

  6. Rinse with cold water. Blot dry. If the carpet pile still feels stiff or has a slight rubbery film: apply a second enzyme round (15 minutes) before proceeding.
  7. For shrimp-containing monggo: Apply white vinegar solution (1 part vinegar, 4 parts cold water). Leave 8 minutes for shrimp TMA. Blot dry. For pork-only or vegetarian monggo: Skip or use 4 minutes (minimal TMA).
  8. Apply 3% hydrogen peroxide. Leave 8–10 minutes. Blot. The H2O2 oxidises the mung bean pheophytin (olive-green from the bean skin) and the minor tomato lycopene from the sofrito. One round is usually sufficient. Blot. Rinse with cold water.
  9. Blot dry. Air-dry.
