Kinilaw is a Filipino raw fish dish — fresh fish (typically yellowfin tuna/tambakol, Spanish mackerel/tanigue, sea bass/apahap, or grouper/lapu-lapu) cut into cubes or thin slices and marinated in cane vinegar (suka) or kalamansi juice for a short period, which denatures the surface protein of the fish in a process similar to ceviche. It is seasoned with ginger (luya), onion, chilli, and calamansi. Some regional versions include coconut cream (gata) for a richer texture — particularly in Visayan kinilaw. It is served as a refresher, appetiser, or pulutan (drinking snack) at Filipino gatherings.

A kinilaw spill on carpet delivers: a high-acid vinegar and calamansi marinade (pH approximately 3), raw or acid-denatured fish protein, TMA fish odour compounds, ginger and chilli aromatics, and coconut cream fat in gata versions. The acid content is the most urgent concern for carpet — cane vinegar at the concentrations used in kinilaw can affect pH-sensitive carpet dyes within seconds.

Critical Priority: Rinse Acid Within 30 Seconds

Kinilaw acid — rinse before any other step

The cane vinegar marinade in kinilaw has a pH of approximately 3. On some carpet dye systems (particularly certain wool and nylon dyes), contact with pH-3 acid can cause a temporary colour shift visible within 30 to 60 seconds. Do not stop to collect fish pieces before rinsing — blot with cold water immediately, then collect solid pieces.

Unlike most food spills where the solid removal comes first, for kinilaw the immediate cold water blot (to dilute and remove the acid marinade from the carpet fibres) takes absolute priority. The cold water blot does not need to be thorough at this stage — even two quick blots with a cold wet cloth dilute the acid significantly and reduce the dye-shift risk substantially. Then collect the fish pieces and proceed with the full treatment sequence.

Component 1: Raw and Acid-Denatured Fish Protein

Fish used in kinilaw is fresh raw fish (or lightly acid-denatured — the surface protein is denatured by the vinegar, but the interior may remain raw if the marinating time is short). Raw fish protein contains myosin and actin muscle proteins, as well as the fish fat content (highest in tuna and mackerel, very low in sea bass and grouper). The critical rule for raw fish on carpet is cold water throughout — hot water permanently sets fish protein into carpet fibres.

The trimethylamine oxide (TMAO) in raw marine fish converts to TMA (the characteristic fish odour compound) when the fish is cut and the flesh is exposed to air. Kinilaw fish in vinegar has slightly reduced TMA because the acidity converts TMA back to a less volatile form — but the fish odour on carpet is still significant. Two overnight baking soda applications are standard for a kinilaw fish spill.

Component 2: Cane Vinegar and Calamansi Marinade

Filipino cane vinegar (suka) is acetic acid at 4 to 5% concentration, with a pH of approximately 3 to 3.5 undiluted. Calamansi (or lime) juice adds citric acid. In kinilaw, a generous quantity of both is used — the marinade is primarily vinegar, with enough fish submerged to denature the surface. This means the marinade is present in relatively high volume compared to a small splash of vinegar from cooking.

Once the cold water priority rinse is done, the remaining acetic and citric acids are fully water-soluble and are removed in subsequent cold water rinse steps. The acid does not create a permanent stain on its own — only the dye-shift risk during the initial contact period is the concern.

Component 3: Coconut Cream (Gata Version)

Visayan kinilaw and some Tagalog versions include coconut cream (gata) mixed into the marinade, creating a creamier, richer version called kinilaw na isda sa gata. The coconut cream adds the standard high-lauric-acid coconut fat component. For a gata kinilaw spill, the baking soda fat absorption step is more important than for a plain-vinegar kinilaw. One baking soda round is sufficient for a moderate coconut cream content — two rounds for a heavily gata-enriched version.

Step-by-Step Treatment Sequence

  1. Cold water blot immediately (priority step) — two to three cold blots to dilute the acid marinade before acid affects carpet dyes.
  2. Remove fish pieces — lift with a spoon.
  3. Baking soda (15 minutes) — for any fish fat and coconut cream (if gata version). Vacuum.
  4. Dish soap emulsification (cold water) — for fat. Blot thoroughly. Use cold water only throughout.
  5. Rinse dish soap — cold water, blot twice. Removes remaining acid residue.
  6. Enzyme treatment (protease, 20 minutes) — for fish protein (raw and acid-denatured). Cold water enzyme solution only. Blot and rinse with cold water.
  7. Hydrogen peroxide (3%) — one round for any residual pigment from the fish or chilli. 15 minutes, blot, dry.
  8. Baking soda overnight (x 2) — for fish TMA odour and ginger/chilli volatile aromatics.

Kinilaw Made With Oysters, Shrimp, or Squid

Kinilaw is also made with other seafood — raw oysters (talaba), fresh shrimp (hipon), or squid (pusit). Each has a different stain profile: oyster kinilaw is relatively low in fat but very high in glycogen (a polysaccharide — addressed by amylase enzyme) and glycine (sweet amino acid). Shrimp kinilaw adds astaxanthin carotenoid (pink-orange pigment, addressed by peroxide). Squid kinilaw introduces squid ink if any ink sac breaks — squid ink (melanin) creates a very dark stain that is addressed by multiple peroxide rounds. For all seafood versions, the cold water acid rinse priority and the cold-water-only rule remain unchanged.
