Step 2 — Cold Water Rinse for Egg-Safe Dilution

Apply cold water to the full spill area. Cold water dilutes the egg protein and cornstarch broth, keeping both in a removable state. Blot out thoroughly. The broth will thin as it is diluted, making subsequent blotting more effective. Repeat the cold water rinse once.

Step 3 — Baking Soda for Pork-Chicken Fat

Apply baking soda paste to the fat landing zone. Lomi typically uses a pork or chicken-based broth with pork fat rendered in — moderate fat load. Leave for 20 minutes, vacuum.

Step 4 — Protease Enzyme (Cold Water Dilution) for Egg and Pork Protein

Apply protease enzyme cleaner using cold water dilution to the full stain area. Blot and rinse.

Step 7 — Hydrogen Peroxide (If Soy Tinting or Pork Liver Residue)

Batangas lomi is typically a pale broth — no soy melanoidin chromophore in the traditional recipe. Apply H2O2 only if a brown tint from soy seasoning, pork liver (haem compounds), or the egg yolk carotenoids remains after the enzyme step has dried. Apply 3% H2O2 targeted to the discoloured zone, allow 8 minutes, blot and rinse cold.

Step 8 — Extended Baking Soda for Shrimp and Fish Sauce Odour

Apply dry baking soda across the full treated area. Leave for two hours for TMA from the shrimp and fish sauce components. Vacuum and ventilate.
