Why Longganisa Annatto Is Harder to Remove Than Kare-Kare Annatto

Step 1 — Blot the Fat Pool Immediately

Remove the sausage piece by lifting, not pressing. Every second the hot fat sits on the carpet, more annatto penetrates deeper. The first sixty seconds determine how deep the stain settles.
Step 2 — Cold Water Rinse
Apply cold water immediately after blotting. Cold water cools the rendered fat and reduces further penetration. It also begins to dilute the soy sauce component and any vinegar if the Vigan-style variety was spilled. Rinse the full stain area and blot out. Do not use warm or hot water — heat keeps the pork fat fluid and drives the annatto deeper.
Step 3 — Baking Soda Paste (Priority Step for This Stain)
Baking soda fat extraction is more important for longganisa than for almost any other Filipino stain because the annatto chromophore is dissolved in the fat. You must extract as much fat as possible before applying hydrogen peroxide — if the fat-annatto matrix remains, the H2O2 cannot access the annatto chromophore directly. Apply a thick baking soda paste and leave for 25 to 30 minutes. Vacuum. If the vacuumed baking soda shows a bright orange colour, the annatto extraction is working — apply a second baking soda pass if the first round absorbs heavily.
Extract Fat Before Applying H2O2 — The Annatto Is in the Fat
Unlike kare-kare annatto (dissolved in water-based sauce), longganisa annatto is fat-soluble and remains bound to the pork fat in the carpet fibre. Applying H2O2 before fat extraction is ineffective — the oxidising agent cannot access the chromophore through a fat barrier. The baking soda extraction step must precede H2O2 for this stain. If in doubt, apply two rounds of baking soda extraction and a dish soap emulsification before the first H2O2 pass.
Step 4 — Dish Soap Emulsification
Dilute one teaspoon of dish soap in 250ml of cold water and apply to the treated area. Dish soap emulsifies the residual pork fat that the baking soda did not fully extract — this is the final fat-reduction step before H2O2. Work in gently, allow three minutes, blot and rinse cold. After this step, the fat-annatto matrix should be substantially reduced.
Step 5 — Protease Enzyme for Soy-Marinated Pork Protein
Apply protease enzyme cleaner (cold water dilution per label) to address the soy-marinated pork protein residue. Allow 10 to 12 minutes dwell. Blot and rinse cold. The soy sauce Maillard compounds in the protein residue are also partially reduced by enzyme treatment before the H2O2 step.
Step 6 — Hydrogen Peroxide for Annatto and Soy Chromophores
Apply 3% hydrogen peroxide to the full stained area. At this point the fat barrier has been largely removed, so the H2O2 can reach the annatto chromophore directly. Allow 10 to 12 minutes dwell — longganisa annatto often needs longer H2O2 contact than kare-kare because the fat-dissolved form is more deeply embedded. Blot and rinse cold. A second H2O2 pass is commonly needed — apply after partial drying. The soy melanoidin chromophores also respond to H2O2 in this same pass.
Step 7 — Baking Soda Dry Finish
After all liquid treatment steps, apply dry baking soda over the full treated area. Leave for 20 to 30 minutes to absorb residual moisture and any remaining fat. Vacuum and allow full ventilation drying. Check under natural light — any remaining orange-red tint after drying is residual annatto and can be addressed with a targeted third H2O2 application.
