Two Major Chromophores in One Stew
Many Filipino stews have one primary chromophore: adobo has soy melanoidins, afritada has tomato lycopene. Mechado combines both in a thick reduction. The soy sauce that forms part of the braising liquid produces dark Maillard melanoidins through hours of cooking. The tomato paste reduces and concentrates its lycopene — the red carotenoid pigment — and develops additional Maillard browning from the tomato sugars. The result is a deep red-brown sauce that, per volume, is more intensely staining than either fresh soy sauce or fresh tomato on their own.

Step 1 — Remove Beef, Potato, and Carrot Pieces
Mechado is a thick stew — scoop up the solid beef, potato, and carrot pieces with a spoon. The sauce itself is thick enough that it does not spread rapidly; use a card to lift the sauce mass from the outer edge inward. Blot the liquid oil component with paper towels.
Step 2 — Cold Water Rinse to Dilute the Sauce
Apply cold water to dilute the concentrated soy-tomato sauce. The sauce is thick from reduction — cold water thins it so the chromophores can be blotted out rather than remaining as a concentrated deposit. Blot out thoroughly.
Step 3 — Baking Soda for Beef-Lard Fat
Apply baking soda paste to the stain zone. Mechado uses larding (pork fat inserted into the beef before cooking) as well as rendering natural beef fat during braising — the combined saturated fat load is higher than a standard beef stew. Leave for 20 to 25 minutes, vacuum.
Step 4 — Protease Enzyme for Beef Protein and Potato Starch
Apply protease enzyme cleaner (with amylase if available, for the potato starch) to the full stain area. Allow 12 to 15 minutes dwell. The enzyme addresses the beef shank protein, the pork fat protein fraction, and the potato starch thickener dissolved in the sauce. Blot out and rinse cold.
Step 5 — Dish Soap for Fat Emulsification
Apply diluted dish soap to the fat zone. Emulsifies the residual beef fat and lard. Allow two to three minutes, blot and rinse cold.
Step 6 — Hydrogen Peroxide for Soy-Tomato Chromophores
Apply 3% hydrogen peroxide to the stained area. The combined soy melanoidin and tomato lycopene chromophores in mechado sauce are more resistant to a single H2O2 pass than either alone. The soy melanoidins respond to oxidative bleaching; the lycopene responds similarly. Allow 8 to 10 minutes dwell. Blot and rinse cold. A second pass is likely needed for a full-strength mechado sauce spill — reapply once the first application has dried and assess before a third pass.
Step 7 — Baking Soda Dry Finish
Apply dry baking soda across the treated area after all liquid steps. Leave for 20 to 30 minutes. This absorbs residual fat and addresses the minor bay leaf and black pepper terpene aromatic compounds. Vacuum and ventilate.

All three are Filipino tomato-based beef stews, but the chromophore profile differs. Afritada uses tomato sauce with no soy, so the primary chromophore is lycopene. Caldereta adds liver paste, giving it a darker, earthier colour from the haem compounds in the liver. Mechado adds soy sauce to the tomato base, combining melanoidins with lycopene — darker and more persistent than afritada but without the liver-haem complexity of caldereta. For carpet treatment: all three use H2O2, but mechado may need one more H2O2 pass than afritada due to the added soy melanoidin.
What is larding and does it affect the fat removal step?
Larding is a classical technique of inserting strips of pork fat (lard) into beef before cooking, to add moisture and flavour. The lard melts into the braising sauce during cooking, increasing the total fat load compared to a standard lean beef stew. For carpet treatment, this means the fat removal steps (baking soda and dish soap) are more important than they would be for a plain lean beef stew. Use a heavier baking soda application and allow a longer dwell.
The mechado sauce has dried on the carpet. Does that change the treatment?
A dried mechado stain is harder to treat than a fresh one but still responds to the same sequence. Re-hydrate the dried stain with cold water for three to five minutes before any other treatment step. The water softens the dried sauce film and allows the chromophores to begin moving. Proceed with baking soda (re-hydrated fat is easier to absorb), then enzyme, then H2O2. A dried mechado stain may need three H2O2 passes rather than two because the concentrated sauce has fully bonded to the fibres.
Can I skip the enzyme step and just use H2O2 for the dark colour?
Not recommended. H2O2 addresses the colour but does not remove the beef protein or potato starch embedded in the carpet fibres. Skipping the enzyme step leaves the protein and starch in place — they can cause the carpet to feel stiff, attract dust, and develop a faint odour over time as the protein degrades. The enzyme step also breaks down the protein matrix that holds the chromophores in place, making the subsequent H2O2 more effective. Use both steps in sequence for the best result.
