Why Mujaddara Leaves a Dark Stain

Mujaddara is a traditional Levantine comfort dish made from green or brown lentils cooked with rice and topped with a large quantity of onions that have been slowly fried in olive oil until deeply caramelised to a dark mahogany-brown. The caramelised onions are the dominant staining agent: onion caramelisation produces melanoidins — large, dark-coloured polymer molecules formed from the Maillard reaction between onion sugars and amino acids. These dark polymers are water-soluble but adhere to carpet fibres with some persistence, creating a brown-to-dark-amber stain. The olive oil from the onion frying is a secondary staining agent — it migrates through carpet pile and carries the melanoidin pigment with it. Lentil starch adds a starchy residue that can harden as it dries. Cumin and other spices contribute aromatic compounds that persist as smell after the visual stain is resolved.

Step 1 — Remove Solid Food

Scoop the mujaddara off the carpet using a spoon, working from the edge inward. The dish has a moist, sticky consistency from the combined lentils and onions — take care not to press the dark onion residue further into the pile. Blot the area with a dry cloth to absorb surface moisture. The remaining mark will be a dark brown to mahogany stain from the caramelised onion melanoidins in the olive oil.

Step 2 — Cornflour for Olive Oil

Apply cornflour to the stain and allow 12 minutes. Mujaddara uses a generous amount of olive oil for caramelising the onions, so there is meaningful oil content in the spill. The cornflour will turn a pale brown as it absorbs the pigmented oil. Vacuum and apply a second round for 8 minutes before vacuuming again. After the cornflour step, the stain is primarily a melanoidin pigment and starch residue.

Step 3 — Dish Soap to Lift Caramelised Onion Pigment

Mix one teaspoon of dish soap in 250 ml of cold water. Apply and blot from edge to centre. Onion melanoidins are water-soluble — unlike fat-soluble carotenoids, they do not require oil-dissolving action to lift. However, they are still embedded in the oil matrix of the spill, so the dish soap emulsifies the oil and releases the melanoidins together. The stain will visibly lighten as the dark pigment is lifted. Rinse with cold water and blot dry. Repeat if the cloth is still picking up strong dark brown colour.

Step 4 — Enzyme Cleaner for Lentil and Onion Protein

Apply enzyme cleaner containing both protease and amylase. Protease addresses the onion amino acid residues and any lentil protein. Amylase breaks down the lentil and rice starch, which dries to a hard, chalky residue in carpet pile and can cause the carpet to feel stiff if not treated. Allow 18 to 20 minutes dwell time. Blot and rinse with cold water.

Step 5 — Hydrogen Peroxide for Residual Dark Colour

Onion melanoidins that remain after the dish soap and enzyme steps can be oxidised with 3% hydrogen peroxide. Apply to the remaining brown mark and allow 8 minutes. Blot and rinse. One round is usually sufficient for mujaddara — the melanoidins are less resistant to oxidation than carotenoid pigments. For older or larger stains, a second round may be needed after the carpet dries.

Step 6 — Baking Soda for Cumin and Onion Odour

Mujaddara is heavily spiced with cumin and often includes coriander, cinnamon, and allspice. These aromatic compounds persist in carpet pile after the visual stain is resolved. Apply baking soda generously once the carpet is dry and allow it to sit overnight. Vacuum the following morning.

Yes — the intensity of the dark brown stain is directly proportional to the degree of caramelisation and the quantity of caramelised onion in the spill. Traditional mujaddara can use up to twice the volume of onions relative to the lentils, and those onions are cooked to a very deep mahogany rather than a light golden. More caramelised onion means more melanoidin pigment, more olive oil, and a darker, more persistent stain. For a spill with a very generous caramelised onion topping, expect the hydrogen peroxide step to be more important and potentially to need two rounds.

I made mujaddara with lentils that had a red or orange colour. Is the stain different from a brown lentil version?

Red lentils contain a small amount of carotenoid pigment that gives them their orange-red colour before cooking — however, this pigment breaks down significantly during cooking, which is why cooked red lentils turn yellow. The stain from red-lentil mujaddara is very similar to the brown-lentil version, dominated by the caramelised onion melanoidins. You may notice a very faint orange tinge in the stain from any remaining carotenoid, but this is minor and the hydrogen peroxide step addresses it at the same time as the melanoidins. The treatment sequence is identical.

Mujaddara was spilled onto a patterned rug with dark and light sections. How do I prevent the cleaning from affecting the pattern?

Test hydrogen peroxide on the darkest section of the rug in a hidden area first — if the dark dye in the rug pattern is sensitive to oxidising agents, the peroxide step could cause lightening. For patterned rugs with uncertain dye stability, skip hydrogen peroxide and rely on the dish soap and enzyme cleaner steps alone. Most of the melanoidin pigment will be removed by these two steps, leaving only a faint residual that may be tolerable on a dark-background rug. Apply all cleaning solutions conservatively to avoid over-wetting the rug and causing dye bleeding between colours in the pattern.

The carpet feels stiff and slightly crunchy in the stain area after cleaning and drying. What caused this?

Stiffness and crunchiness after a mujaddara stain is caused by lentil and rice starch residue that dried into the carpet pile. The starch was not fully broken down by the enzyme cleaner — either the dwell time was insufficient, the carpet dried too quickly during the enzyme step, or the enzyme cleaner used did not contain amylase. Re-treat with an enzyme cleaner that specifies amylase content. Apply it generously, keep the area damp for 20 minutes, and blot thoroughly. After rinsing and drying, the carpet pile should return to its normal texture. Vacuum after drying to restore the pile direction.
