Dinuguan as a Blood Stain — More Concentrated Than a Cut or Wound

A standard blood stain from a cut involves a small volume of blood (haemoglobin concentration approximately 12 to 18 grams per decilitre). Dinuguan sauce is a reduction of pig's blood cooked with vinegar and aromatics — the blood volume in the sauce is large and the haemoglobin has been concentrated by cooking. The dark maroon-black colour is from haemoglobin that has partially oxidised during cooking (methaemoglobin and denatured haemoglobin compounds). This makes dinuguan a more intensely staining haemoglobin challenge than a typical wound blood stain — the same cold water protocol applies but with a higher chromophore load requiring multiple treatment passes.

This is the single most important rule for dinuguan: never apply hot or warm water, steam mops, or steam cleaners to the stain. Haemoglobin from the pig's blood undergoes oxidative polymerisation at temperatures above approximately 50 to 60 degrees Celsius — the proteins cross-link and bond permanently to carpet fibres. This is irreversible. Use cold water for every rinse step throughout the full treatment sequence. If warm water was accidentally applied, the haemoglobin in those areas may require professional treatment with hydrogen peroxide enzyme extraction.

Step 1 — Remove Solids With Cold Blotting

Remove pork pieces and scoop up the dark sauce with a card, avoiding pressing into the pile. Blot the liquid sauce from the outer edge inward using paper towels dampened with cold water. Do not blot dry — the dry paper towel can smear the haemoglobin. Use cold water-dampened cloths to lift the sauce without spreading.

Step 2 — Cold Water Rinse (Volume Dilution)

Apply cold water generously to the full stain. The goal is volume dilution of the concentrated haemoglobin — the darker the sauce, the more water is needed to bring the haemoglobin concentration low enough for the enzyme step to address it. Apply cold water, blot, apply again, blot again. Do not be stingy with water here. Blot out as much of the dark colour as possible before proceeding.

Step 3 — Baking Soda Paste for Fat Absorption and Acid Neutralisation

Apply baking soda paste to the stain. Baking soda absorbs the pork fat and partially neutralises the vinegar acidity. As with kinilaw, the vinegar in dinuguan means the carpet around the stain is slightly acidic — neutralising before enzyme application improves protease activity. Leave for 15 minutes, vacuum.

Step 4 — Protease Enzyme (Cold Water, Extended Dwell)

Apply protease enzyme cleaner using cold water dilution only. Protease enzyme is effective on haemoglobin — it cleaves the globin protein chains. The haem iron group that carries the dark colour is addressed by hydrogen peroxide in the next step. Allow 18 to 20 minutes dwell — longer than most stains, given the high concentration of blood protein. Blot out and rinse cold. The stain will lighten visibly after the enzyme step.

Step 5 — Dish Soap for Pork Fat

Apply diluted dish soap to the fat zone. Emulsifies the pork offal fat. Allow two to three minutes, blot and rinse cold.

Step 6 — Hydrogen Peroxide for Haemoglobin Chromophore

Apply 3% hydrogen peroxide to the stained area. H2O2 oxidises the haem iron group in the haemoglobin molecule — this is the primary dark chromophore in blood stains and in dinuguan sauce. H2O2 is the standard treatment for blood stains and works on cooking-coagulated haemoglobin as well as fresh blood. Allow 10 minutes dwell. Blot and rinse cold. Dinuguan's very high haemoglobin concentration means two to three passes of H2O2 are likely needed before the maroon-black colour fully clears. Allow each pass to dry before assessing.

Step 7 — Baking Soda Dry Finish

Apply dry baking soda across the treated area after all liquid steps. Leave for 20 to 30 minutes. This addresses the garlic allicin odour and any residual vinegar acetic acid. Vacuum and ventilate. Dinuguan does not have a persistent TMA seafood odour — the odour is primarily from the pork fat and garlic, which clears readily.

Is dinuguan treated the same as a blood stain from a cut?

The same fundamental chemistry applies: cold water only, protease enzyme, hydrogen peroxide for the haemoglobin chromophore. The difference is concentration and cooking state. A cut produces fresh blood with native haemoglobin — easier to treat. Dinuguan sauce contains cooked, partially denatured, and partially oxidised haemoglobin at a much higher concentration. My dinuguan has cooled and the sauce looks almost black. Is it still treatable?

Does the vinegar in dinuguan make it harder to treat than plain blood?

Yes, slightly. The acetic acid in the vinegar partially denatures the blood protein differently from heat denaturation, and can bond some haemoglobin compounds to the carpet fibres more firmly than plain blood. The baking soda neutralisation step before enzyme application is more important for dinuguan than for plain blood. After neutralisation, the treatment proceeds the same way — but the vinegar-fixed protein fraction may require a second enzyme pass.

How is dinuguan different from caldereta (which contains liver)?

Caldereta contains beef or pork liver, which adds haem compounds from the iron-rich myoglobin and haemoglobin in the liver tissue. The haem chemistry is similar to dinuguan — both respond to cold water and H2O2. However, caldereta's liver contribution is relatively small (a few tablespoons of liver paste in a large stew), while dinuguan sauce is primarily blood. Caldereta's primary chromophores are tomato lycopene and haem from the liver; dinuguan's primary chromophore is concentrated haemoglobin.
