What Pork Humba Is and Why It Stains So Darkly

Pork humba is a Visayan Filipino braised pork dish cooked in soy sauce, vinegar, brown sugar, black beans (tausi), and banana blossom. It is closely related to adobo but significantly sweeter, with the brown sugar and soy sauce cooked down into a very thick, syrup-like braising glaze. The sauce produces an extremely dark stain because two separate families of dark chromophores arrive together: melanoidins from the caramelised brown sugar and Maillard reactions in the reduced soy sauce, and anthocyanins from the fermented salted black beans. Combined with pork fat and the sticky, reduced sugar-syrup consistency, humba leaves a concentrated, slow-penetrating but very deeply coloured stain.

Melanoidins — The Caramelised Sugar and Soy Component

Melanoidins are the dark brown polymeric compounds produced when sugars react with amino acids under heat (Maillard reaction) or when sugars are heated alone (caramelisation). In humba, both processes occur: the brown sugar caramelises in the pan, and the sugars also react with the amino acids in the soy sauce over a long braising time. These melanoidins are similar to the dark chromophores in minatamis na saging and the black coffee compounds, and they respond to the same treatment: hydrogen peroxide oxidation after the fat and protein steps. Standard enzyme cleaners do not break down melanoidin polymer chains.

Tausi Black Bean Anthocyanins

Tausi (salted fermented black beans) are black because of very high concentrations of anthocyanins — the same class of flavonoid pigments found in purple or red fruits and vegetables. However, unlike fresh anthocyanin sources such as ube or blueberry, the anthocyanins in fermented tausi have been partially oxidised and cross-linked during the fermentation process. This makes them somewhat less pH-reactive than fresh anthocyanins, but also means they are bonded to proteins and are partially addressed by protease enzyme treatment — the protease partially unbinds the cross-linked anthocyanin-protein complex and makes the pigment more accessible to the subsequent hydrogen peroxide step.

The Thick, Sticky Sauce Penetration Pattern

Humba sauce has been reduced over a long braising period until it is almost syrup-like in consistency. Unlike thin soups that spread rapidly across a large footprint, humba sauce spreads slowly but penetrates very deeply in the area where it lands, because the high sugar concentration and viscosity direct the flow downward rather than outward. Blotting from the outer edge inward — the standard technique — is less critical here than with runny soups; instead, the focus should be on preventing the sauce from being pressed deeper into the pile by rubbing or traffic before treatment.

Check for Egg Before Using Warm Water

Some humba recipes include hard-boiled eggs braised in the sauce. If egg is present, the cold water rule applies throughout — the egg albumin fraction will set permanently under heat.

The Correct Treatment Sequence

  1. Remove any solid pork pieces with a spoon or blunt tool. Do not press down — the thick sauce will be driven deeper.
  2. Blot from the outer edge inward with firm pressure to remove as much of the thick sauce as possible before applying liquid.
  3. Apply a thick layer of baking soda to absorb pork fat. Leave fifteen to twenty minutes and vacuum.
  4. Mix one tablespoon of clear dish soap with two cups of cold water (cold if egg was present, warm otherwise). Apply and work gently to emulsify the pork fat. Allow five minutes. Rinse with cold water and blot.
  5. Apply a protease enzyme cleaner to address the pork protein, soy protein, and to partially unbind the tausi anthocyanin-protein complexes. Leave eight minutes and blot.
  6. Apply 3 % hydrogen peroxide to any remaining dark brown or purple-black discolouration — this addresses both the melanoidin and the anthocyanin fractions. Leave four to five minutes. Rinse thoroughly with cold water and blot dry.
  7. Apply a second baking-soda poultice and leave sixty minutes to extract residual pork fat from depth. Vacuum.

When Professional Extraction Is Needed

Humba sauce that has been allowed to dry fully forms a sugar-protein crust bonded to carpet fibres. The caramelised sugar melanoidins and cross-linked anthocyanins in dried humba are very difficult to redissolve and remove with home treatment alone. Professional hot-water extraction with a commercial enzyme pre-treatment is needed for dried or deeply penetrated humba stains.

Why is pork humba harder to remove than regular adobo?

Adobo sauce is relatively thin. Humba is reduced much further with brown sugar until it becomes a thick, syrup-like glaze. This concentrates the melanoidin chromophores and adds anthocyanins from the black beans — two separate dark colour families that adobo does not have. The thick consistency also means the pigment is more concentrated per area.

Do enzyme cleaners work on the dark colour from humba?

Partially. Protease cleaner partially unbinds the tausi anthocyanins that have cross-linked with protein during fermentation, making them more accessible. But melanoidins from caramelised sugar are not broken down by protease, amylase, or lipase. Hydrogen peroxide oxidation is the step that addresses the melanoidin dark colour.
