Puto Bumbong Carpet Stain: Purple Pirurutong Rice Anthocyanins and Butter Topping

25 July 20268 min read

Puto bumbong is one of the most recognisable Filipino Christmas foods — the purple rice cake steamed in bamboo tubes (bumbong), served topped with butter or margarine, grated coconut, and muscovado brown sugar. Its distinctive purple-violet colour comes from pirurutong, a heritage variety of black glutinous rice (Oryza sativa var. glutinosa) whose bran layer is rich in anthocyanins. These anthocyanins are the same chemical class as the anthocyanins in ube purple yam — cyanidin-3-glucoside is the dominant species in both black rice and ube — and they bond to wool carpet keratin via the same ionic mechanism within minutes of contact.

Puto bumbong is typically eaten during the Christmas Simbang Gabi season (December–January) and is among the most common Filipino Christmas food stains in Sutherland Shire households and community events. Unlike ube stains that arrive in a liquid sauce, puto bumbong is a semi-solid steamed rice cake — the anthocyanin stain is concentrated at the contact point rather than spreading. The butter or margarine topping adds a fat layer to the contact surface, and the muscovado sugar topping adds a dark-brown molasses chromophore.

Pirurutong Anthocyanins vs Ube Anthocyanins

Both pirurutong (black rice) and ube (purple yam) anthocyanins are dominated by cyanidin-3-glucoside, but they differ in how they reach the carpet. In ube, the anthocyanins are dissolved in the fleshy yam tissue with high water content — they are mobile and spread quickly into carpet fibre. In pirurutong rice, the anthocyanins are concentrated in the outer bran layer of the rice grain, bound to the cell wall matrix. They must first leach out of the bran before migrating into carpet. This makes puto bumbong staining slightly slower to penetrate than ube, but the 2-minute urgency window on wool carpet still applies.

Treatment Sequence for Puto Bumbong

Cold water within 2 minutes for the purple pirurutong anthocyanin

Pirurutong anthocyanins bond to wool carpet keratin within 2–5 minutes of contact. Apply cold water immediately and blot to dilute the anthocyanin concentration before bonding occurs. Do not use warm or hot water — heat accelerates anthocyanin bonding to wool.

  1. Remove the puto bumbong piece immediately. If it has crumbled, lift the larger fragments carefully without pressing the purple-stained crumbles deeper into the pile.
  2. Apply cold water immediately to the purple-stained area. Blot from outside edge inward. Repeat 2–3 times with fresh cold water. This dilutes the pirurutong anthocyanin before it bonds to wool keratin.
  3. Apply baking soda paste (1 tablespoon baking soda + 1 teaspoon cold water). Leave 14–18 minutes for the butter or margarine topping fat. Butter fat (short-chain and medium-chain saturated fatty acids) responds well to baking soda saponification.
  4. Rinse baking soda with cold water. Blot dry.
  5. Apply enzyme cleaner (amylase for the glutinous rice starch, protease for any milk solids from butter, lipase for the butter fat). Leave 15 minutes.
  6. Rinse with cold water. Blot dry.
  7. Apply 3% hydrogen peroxide. Leave 8–10 minutes. Blot. The first round addresses the pirurutong anthocyanin purple. Apply a second round for the muscovado brown if the purple has lifted but a brown tint remains.
  8. Rinse with cold water. Blot dry. Air-dry with ventilation.

Puto Bumbong Purple Still Visible After Treatment?

Pirurutong anthocyanins that have bonded to wool keratin fibres require professional treatment — surface H2O2 cannot reach anthocyanin-keratin bonds formed at the fibre base. Local carpet cleaning specialists serving Sutherland Shire during the Simbang Gabi season can be matched through referral networks.

Frequently asked

Is the puto bumbong from a modern recipe (using food colouring rather than true pirurutong) treated the same way?

Many commercial and home recipes now substitute regular white glutinous rice with added food colouring (typically violet FD&C or natural purple sweet potato powder) when pirurutong is unavailable. FD&C Violet responds to H2O2 readily — 1 round is usually sufficient. Purple sweet potato powder contains the same anthocyanin class as true pirurutong (cyanidin-3-glucoside) and is treated identically. For commercially sold puto bumbong where the colourant source is unknown, apply the full 2-round H2O2 protocol as the safe default.

The puto bumbong was served with grated fresh coconut — does buko add to the stain?

Grated fresh young coconut (buko) is primarily cellulose fibre with minimal fat and almost no pigment. If fresh coconut fibres embed in carpet pile, vacuum after the carpet has dried — fresh coconut fibres soften when wet and embed further if vacuumed wet. The coconut adds no significant chromophore or fat challenge. The enzyme lipase step handles any trace coconut oil from the buko.

The muscovado sugar topping melted into the carpet — will the sugar attract insects or mould?

Muscovado sugar residue in carpet creates a carbohydrate food source for mould and insects (particularly carpet beetles and sugar ants). If sugar is not fully removed by the enzyme and rinse steps, the residual sugar can attract pests within days in Sutherland Shire's warm climate. The enzyme amylase step and cold water rinse together address the sugar residue. If the carpet feels tacky after drying, the sugar has not been fully removed — apply another enzyme round and rinse.

Does margarine (used instead of butter) create a worse stain than butter on puto bumbong?

Margarine and butter create similar carpet stain challenges. Traditional hard margarine with hydrogenated fats may leave a slightly waxier residue that benefits from a longer baking soda dwell (18 minutes vs 14 for butter). Modern soft margarine behaves similarly to butter. The treatment sequence is the same for both — the 14–18 minute range covers both.

Is puto bumbong stain urgent in the same way as dinuguan for urgency?

Both are urgent but for different reasons. Dinuguan urgency is driven by myoglobin heat-setting (60-second window at body temperature). Puto bumbong urgency is driven by anthocyanin-keratin bonding on wool (2–5 minute window). Puto bumbong gives slightly more time because the anthocyanins must leach from the rice bran before migrating into the fibre. On wool carpet, 2 minutes is still the cold-water target for puto bumbong.
