What Samgyeopsal Leaves on Carpet
Samgyeopsal (삼겹살 — literally "three layer meat") is Korean grilled pork belly cooked tableside on a grill pan. The thick pork belly slices have alternating layers of lean meat and fat, with a fat content of 25–35% by weight. As the pork belly cooks, the fat renders out, creating a pool of liquid pork fat on the grill surface. When a grilled samgyeopsal slice falls from the grill or plate onto carpet, it deposits: heavily rendered liquid pork fat (the hottest and most penetrating form of the fat), any accompanying condiments — most commonly gochujang (fermented red chilli paste), sesame oil, garlic slices, and sometimes ssamjang (a mixed fermented paste) — and any fresh dipping sauces or pickled vegetable juices.
What You Will Need
- Cornflour (rendered pork fat — three rounds)
- Cold water
- Enzyme-based carpet cleaner (pork protein)
- Dish soap (emulsified pork fat)
- Hydrogen peroxide 3% (gochujang red pigment)
- White vinegar (garlic and fermented paste odour)
- Baking soda (garlic and pork fat odour)
- Clean white cloths
- Spoon
- Vacuum cleaner
Step 1: Remove the Meat and Condiments
Pick up the samgyeopsal slice. Use a spoon to scrape any gochujang, ssamjang, or garlic that was on the plate alongside the meat. If the meat was being carried in a lettuce or perilla leaf wrap that also fell, remove the wrap leaves — perilla (kkaennip) has a distinctive anise-mint aroma from perillaldehyde that will add to the carpet odour if not removed promptly.
Step 2: Absorb Rendered Pork Belly Fat — Three Rounds
Rendered pork belly fat (liquid at cooking temperatures) penetrates deep into carpet pile on impact. Pork belly has a very high fat content, and the rendering process during grilling converts the solid fat to liquid, making it highly mobile. Apply cornflour generously over the full stained area and allow 20 minutes. Vacuum. Repeat three times. Three rounds are the minimum for a hot samgyeopsal drop; four rounds for a slice that had significant surface fat pooling from the grill. Do not skip to wet treatment until the cornflour rounds are complete — wet treatment over unabsorbed liquid pork fat spreads the fat further.
Three cornflour rounds before any liquid
Samgyeopsal pork belly fat content (25–35%) is among the highest of any meat. At grill temperature, the rendered fat is fully liquid and penetrates fast. All three cornflour rounds must be completed before introducing any water or cleaning solution — water over unabsorbed hot pork fat emulsifies it and spreads it deeper.
Step 3: Treat Pork Protein with Cold Water and Enzyme Cleaner
Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. Blot from outside inward. Rinse with cold water. Follow with a dish soap solution (one teaspoon in 250ml cold water) to emulsify the residual pork fat — pork belly fat is a saturated animal fat that the enzyme step alone does not fully lift. Blot and rinse.
Step 4: Remove Gochujang Red Pigment
Gochujang (고추장) is a fermented red chilli paste with intense capsanthin carotenoid pigment from the red chilli component. It also contains fermented soy and glutinous rice — both add a sticky, dark residue. Apply 3% hydrogen peroxide to the gochujang-stained area and allow 10 minutes. Blot and rinse. Two rounds are typically needed for gochujang because the paste concentration of capsanthin (from the high proportion of dried red chilli in gochujang) is significantly higher than fresh chilli sauce.
Step 5: Neutralise Garlic and Fermented Paste Odour
Apply a mist of equal parts white vinegar and water over the treated area to address the garlic sulphur compounds and the fermented paste aroma from gochujang and ssamjang. Allow to dry fully. Apply baking soda overnight (at least six hours). Vacuum. The combination of garlic and fermented paste makes samgyeopsal one of the more persistent food odours in carpet — two overnight baking soda applications are recommended.
Pork Fat or Gochujang Stain Persisting?
Deep pork belly fat penetration or gochujang pigment on light carpet may need professional hot-water extraction. A matching service can connect you with a vetted local carpet cleaner in the Sutherland Shire.

Frequently asked
We had a full Korean BBQ setup with a tabletop gas grill and the grease drain tray overflowed — a significant volume of liquid pork belly fat (from multiple rounds of samgyeopsal) pooled on the carpet under the grill table. The stain is approximately 30cm diameter and the fat was liquid and hot when it spilled. How do I treat a large hot pork fat spill?
A grease tray overflow creates a large-volume, hot liquid pork fat spill — the worst-case scenario for pork fat on carpet, because the fat volume is large and the heat makes it highly mobile. Immediate containment: fold several layers of absorbent cloth over the spill and press firmly (do not rub) to draw the liquid fat up before it spreads further. Replace with fresh cloths as they saturate. Then apply a very generous layer of cornflour — you will need approximately 1 to 2 cups for a 30cm zone. Allow 30 minutes (longer dwell for a heavier fat deposit). Vacuum and repeat: four to five cornflour rounds for a full tray overflow. Enzyme and dish soap steps follow with 20-minute dwell times. A grease tray overflow that was hot-liquid fat almost certainly warrants professional hot-water extraction — the fat volume penetrates to the carpet backing and subfloor underlay, and home treatment addresses the surface but not the depth.
The samgyeopsal was eaten as ssam — the pork was wrapped in perilla leaves and sesame leaves with ssamjang. Both the perilla and sesame leaves also fell on the carpet. Does perilla (kkaennip) leave a stain?
Perilla leaves (kkaennip, 깻잎) are a fresh herb leaf — they leave a faint chlorophyll green mark at leaf contact points if pressed against carpet, similar to any green herb leaf. Pick up the perilla leaves promptly (within a minute or two of falling) to minimise contact transfer. The characteristic perilla aroma comes from perillaldehyde — a volatile compound with a strong mint-anise scent that is notably persistent. Apply one extra overnight baking soda application specifically for the perilla aldehyde aroma on top of the garlic/gochujang baking soda step. If visible green contact marks appear at perilla leaf contact points: one targeted hydrogen peroxide round to those spots removes the chlorophyll. Sesame leaves (chamkkae, a larger sesame plant leaf) have a similar treatment — green chlorophyll contact marks addressed with peroxide, and a faint aromatic aroma addressed by baking soda.
We dipped the samgyeopsal in sesame oil and sea salt rather than gochujang — the classic southern Korean style. No gochujang or ssamjang was involved. Does sesame-salt samgyeopsal require fewer treatment steps?
Sesame oil and sea salt (chamgireum-sogeum, 참기름소금) dipping is simpler to treat than gochujang because it eliminates the red pigment step entirely. For sesame-salt samgyeopsal: the cornflour rounds (three) address both the rendered pork belly fat and the toasted sesame oil simultaneously. The enzyme and dish soap steps for the pork protein and fat remain unchanged. Skip the hydrogen peroxide step entirely — there is no gochujang capsanthin pigment to oxidise. The odour treatment changes: the white vinegar step is less critical (no fermented paste aroma), but the baking soda overnight step remains important for the sesame oil and pork fat combined aroma. One overnight baking soda application is typically sufficient for sesame-salt samgyeopsal without fermented condiments (versus two rounds for gochujang-dressed samgyeopsal).
