What Scallops Leave on Carpet

Scallops (king scallops — Pecten maximus or Queensland scallops — Pecten fumatus, common on the east coast of Australia) are bivalve molluscs with a lean, sweet adductor muscle and an attached orange or coral-red roe (the gonads). The adductor muscle is very lean — approximately 1–2% fat — but is typically pan-seared in butter (two to three tablespoons per serving) at very high heat, producing a deep golden-brown Maillard crust. When scallops spill on carpet, the stain components are: butter fat from the searing pan (the dominant fat source — brown butter forms rapidly at high heat, adding additional caramelised milk solid compounds), Maillard browning compounds from the seared crust (the deep golden-brown colour from the caramelised protein surface), scallop muscle protein (lean myofibrillar protein from the adductor — responds well to enzyme treatment), and scallop roe if present (the orange coral contains astaxanthin — the same orange-pink carotenoid pigment as in prawn shells and lobster bisque). A cream or white wine sauce accompaniment adds cream fat and casein.

Step 1: Remove the Scallops

Pick up the scallops with tongs. If a whole plate tipped, pick up the scallops first, then blot any cream sauce or pan liquid with a dry cloth. The pan butter may have pooled if the scallops were still in their cooking pan — blot the butter pools from outside inward.

Step 2: Absorb Butter Fat with Cornflour

Apply cornflour over the full butter and sauce contact zone. Allow 20 minutes. Vacuum. Two rounds for seared scallops with pan butter; three rounds if a cream sauce was present (the cream adds additional dairy fat). Brown butter (beurre noisette) used in the sear has a higher Maillard compound load than plain melted butter — the milk solids in the butter caramelise rapidly at high heat, adding a nutty-caramelised compound alongside the pure butter fat.

Step 3: Treat Scallop Protein with Enzyme Cleaner

Apply cold water and blot. Apply enzyme carpet cleaner and allow 20 minutes. The protease addresses the scallop adductor muscle protein. Scallop muscle protein is a lean, delicate seafood protein that responds well to enzyme treatment. Blot from outside inward. Rinse. Apply dish soap solution (one teaspoon in 250ml cold water) to emulsify the butter fat and any cream sauce fat. Blot and rinse.

Step 4: Remove Maillard Browning and Roe Astaxanthin with Hydrogen Peroxide

Apply 3% hydrogen peroxide to the stained area and allow 10 minutes. Blot and rinse. One to two rounds for Maillard browning compounds from the sear crust; two to three rounds if scallop roe (the orange coral) was present — the roe contains astaxanthin carotenoid pigment. The roe astaxanthin is orange-pink and responds to peroxide similarly to prawn shell astaxanthin or lobster bisque astaxanthin. Apply the peroxide specifically to roe contact zones if identifiable.

Step 5: Neutralise Shellfish and Butter Aroma

Apply white vinegar mist (equal parts vinegar and water) for the shellfish amine compounds and any white wine sauce acidity. Allow to dry. Apply baking soda overnight for the combined butter and scallop aroma. Scallop has a mild, sweet shellfish aroma that is less persistent than prawn or lobster — one overnight baking soda application is typically sufficient.
