Silog Carpet Stain: Garlic Fried Rice, Fried Egg, and Protein Variant Guide

25 July 20269 min read

Silog — the portmanteau of sinangag (garlic fried rice) and itlog (egg), followed by a shortened protein name — is the defining Filipino breakfast format. Tapsilog (beef tapa), longsilog (longganisa sausage), tosilog (tocino sweet pork), bangsilog (bangus milkfish), hotsilog (hotdog), chicksilog (fried chicken), and many more variants are served at Filipino breakfast spots and homes across Sutherland Shire every morning. As a carpet stain, silog presents two constant components — garlic fried rice oil and fried egg yolk fat — plus the variable stain chemistry of whichever protein was served.

Sinangag (garlic fried rice) is made from leftover cooked rice refried in cooking oil with fried garlic. The frying step coats every rice grain in a thin layer of oil, making the total fat load moderate despite the rice being the dominant volume component. When a plate of sinangag falls on carpet, thousands of individual oil-coated rice grains distribute their oil load across the carpet pile. Unlike a sauce spill where fat is concentrated in one pool, sinangag fat is dispersed in the rice grains — the baking soda step must reach the fat on individual grains distributed across the spill area.

Fried Egg Component: Egg White and Yolk Chemistry

The fried itlog (egg) in a silog plate has two distinct stain components: (1) Egg white (ovalbumin) — denatured and coagulated white proteins that are fully set by frying. The coagulated egg white is a mechanical stain — it can be scraped or vacuumed from carpet pile as a solid before wet treatment, and the residual coagulated protein is addressed by enzyme protease. (2) Egg yolk — approximately 30% fat by weight, composed of phospholipids (lecithin), cholesterol, and neutral fats. The yellow yolk fat can produce a faint yellow stain on light-coloured carpet that is addressed by the baking soda + lipase enzyme steps. The Maillard browning at the fried egg white edges (the brown crispy edge of a fried egg) adds a minor brown chromophore addressed by H2O2.

Silog Protein Variant Stain Chemistry

Silog protein variant stain additions. The sinangag oil + fried egg base treatment is the same for all variants; the protein adds additional steps.

Base Treatment Sequence for All Silog Variants

Treat the protein component first if it requires urgent action

If the silog variant is tapsilog (beef tapa — myoglobin urgency 30 seconds) or bangsilog (bangus — 30-second myoglobin urgency), address the meat/fish piece with cold water blotting before treating the rice and egg components. For all other silog variants, treat the components together in order.

  1. Remove the fried egg (solid coagulated white) with a spoon — it can usually be lifted as a solid piece. Remove the protein component (tapa slice, longganisa piece, bangus fillet, etc.).
  2. For tapsilog or bangsilog: blot with cold water immediately to dilute the myoglobin. For bangsilog: also apply the vinegar step later.
  3. Vacuum the rice grains from the carpet before any wet treatment. Individual cooked rice grains in carpet pile will form a sticky paste when wet — vacuuming removes the bulk of the rice grains and the oil they carry.
  4. Apply baking soda paste (1 tablespoon baking soda + 1 teaspoon cold water). Leave 16–20 minutes for the garlic fried rice oil and egg yolk fat. For longsilog: extend to 22–26 minutes for the longganisa pork fat.
  5. Rinse baking soda with cold water. Blot dry.
  6. Apply enzyme cleaner (protease for egg white protein and meat protein, lipase for frying oil and egg yolk fat, amylase for cooked rice starch). Leave 18 minutes.
  7. Rinse with cold water. Blot dry.
  8. For bangsilog only: apply white vinegar solution (1 part vinegar, 4 parts cold water). Leave 8 minutes for the bangus TMA. Blot dry.
  9. Apply 3% hydrogen peroxide if any chromophore is visible (tapa melanoidin, longganisa annatto, tocino brown, hotsilog red). Leave 8–10 minutes. Blot. For longsilog annatto: 2–3 rounds. For all other variants: 1–2 rounds.
  10. Rinse with cold water. Blot dry. Air-dry with ventilation.

Silog Stain in Sutherland Shire Carpet?

Rice starch paste, egg yolk fat, and protein chromophores that have set in carpet backing require professional extraction. Local carpet cleaning specialists serving Sutherland Shire can be matched through referral networks.

Frequently asked

Should the rice be vacuumed dry before the baking soda or after?

Always vacuum the rice grains dry — before applying any liquid or baking soda paste. Individual cooked rice grains (both sinangag and plain cooked rice) are coated in gelatinised starch. Adding water before removing the rice grains causes the starch to hydrate further and form a paste that bonds the rice grains to the carpet fibres, making them much harder to remove. Vacuum first on the dry rice, then apply the baking soda paste to the de-riced area.

The silog plate fell face-down — does a face-down spill change treatment?

A face-down silog plate concentrates all three components (rice, egg, protein) in a single contact area under the weight of the plate. The plate pressing down forces the frying oil deeper into the carpet pile. Remove the plate carefully (lift straight up, do not slide — sliding will spread the stain across the clean carpet next to the spill). After plate removal: vacuum the rice, then proceed with the standard baking soda + enzyme + H2O2 sequence. The increased oil penetration depth may require a longer baking soda dwell (extend by 4–6 minutes) and should be monitored for any grease shadow after drying.

The garlic in the sinangag has left a garlic odour in the carpet — how to remove it?

Garlic odour in carpet comes from allicin and its degradation products (diallyl disulfide, allyl methyl sulfide) that are volatile sulfur compounds. These volatiles adsorb to carpet fibre and are released slowly over hours to days as the carpet warms. The enzyme step does not specifically address allicin degradation products (they are not proteins or starches). Baking soda applied after the carpet has dried and left overnight (8 hours) physically adsorbs the remaining sulfur volatiles. Ventilation accelerates outgassing. A strong lingering garlic smell after the standard treatment typically resolves within 24–48 hours of full drying and ventilation.

Is a runny (sunny-side-up, not fully set) egg yolk in a silog treated differently from a fully fried hard yolk?

A runny yolk is entirely liquid — it spreads immediately on carpet contact and penetrates the pile like any liquid fat. Blot the runny yolk immediately before it spreads further. The baking soda step is the same (egg yolk fat is the same chemistry whether the yolk was runny or hard-set). A hard-set yolk is mostly solid and can be partially scraped before wet treatment. If the yolk ran across a wide area before being noticed: apply baking soda across the full runny yolk spread area, not just the egg contact point.

Tocino (sweet cured pork in tosilog) left an orange-brown stain — is this annatto or caramelised sugar?

Filipino tocino is sweet-cured pork using sugar, salt, and optional annatto colouring. The orange-brown tint from tocino on carpet could be either: (1) annatto norbixin from tocino recipes that use annatto for colour — if the stain is bright orange, treat as norbixin (2–3 H2O2 rounds); (2) caramelised sugar from the sugar in the cure — if the stain is dark brown, treat as caramelised sugar (1–2 H2O2 rounds). Many commercial tocino brands use both. When uncertain, apply 3 rounds of H2O2 as the safe default — this covers both annatto norbixin and caramelised sugar chromophores within the same treatment sequence.
