A dilute white vinegar rinse (1 tablespoon in 2 cups cold water, 5 minutes) converts volatile TMA to a less volatile form before overnight baking soda addresses the remaining aroma compounds.

Step-by-Step Treatment Sequence

  1. Collect sinigang pieces — pick up meat, vegetable, and sitaw pieces before liquid treatment.
  2. Cold water blot immediately — across the full broth footprint. Cold (meat or fish myoglobin sets with heat). No rubbing.
  3. Dilute white vinegar rinse (1 tablespoon in 2 cups cold water, 5 minutes) — patis TMA aroma. Blot and cold rinse.
  4. Baking soda round 1 (15 minutes) — pork fat or fish oil from the broth. Vacuum.
  5. Baking soda round 2 — second round for pork-rib sinigang with bone-released fat. Vacuum.

Sinigang vs Nilaga on Carpet

The bangus pieces also contain the characteristic bangus bones (bangus is famously bony). When the bangus sinigang fell on the carpet, some of the thin bangus pin bones were scattered. How does bangus sinigang differ from pork sinigang on carpet?

Bangus (milkfish) sinigang versus pork sinigang on carpet: (1) Bangus pin bones — collect all visible bangus bones before any liquid treatment. Bangus is one of the most bony fish commonly eaten in Filipino cuisine. The small, thin pin bones (intermuscular bones) scattered from the fallen bowl can be very difficult to see on carpet pile. Press a clean white cloth firmly over the spill zone after initial bone collection — pin bones may embed in the cloth and become visible. Use bright overhead lighting or a torch at an angle to see fine bones embedded in the pile. (2) Bangus fat profile — farmed bangus (the type almost exclusively sold in Australian Filipino markets) has a significantly higher fat content than leaner fish such as tuna or cod. The fat in bangus is predominantly unsaturated (oleic acid, EPA, DHA). Unsaturated fish oil on carpet: (a) more prone to oxidation than saturated fats — if the bangus sinigang spill is not treated within the same day, the fish oil begins to oxidise and develop a rancid-fishy secondary aroma; (b) lipase enzyme (if available) addresses the unsaturated fish oil better than baking soda alone — however, baking soda (two rounds) is still the primary mechanical approach. (2) Higher tartaric acid content — double-strength tamarind doubles the tartaric acid in the broth. Tartaric acid is itself fairly benign on carpet fibres (it is not a fibre-degrading acid at the concentrations in sinigang broth). Three cold water rinse cycles are appropriate (versus two for standard sinigang) to ensure the higher tartaric acid concentration is thoroughly flushed. (3) The patis aroma treatment is unchanged — the patis concentration is not doubled (only the tamarind was doubled). The standard vinegar rinse plus overnight baking soda protocol applies. (4) The meat protein and fat treatment is unchanged — double tamarind does not affect the pork or bangus fat or myoglobin components. (5) Check after each hydrogen peroxide round — with double-strength tamarind, stop after the colour has resolved (which may be after two rounds even on light carpet, before the planned three) rather than always applying all three rounds. Over-treatment with hydrogen peroxide on light carpet creates a risk of localised over-lightening.

(3) Baking soda is especially important at the tomato contact zone — lycopene is fat-soluble and is carried in the tomato cell lipid fraction. Even though sinigang broth has low fat content, the tomato pulp itself contains fat (from the tomato cell membranes — tomato is approximately 0.2% fat) that must be addressed before hydrogen peroxide can act on the lycopene. One baking soda application directly on the tomato contact zone, pressed firmly in. (4) The tomato contact zone may require three hydrogen peroxide rounds — the broth surround requires two rounds (sinigang standard), but the denser tomato lycopene at the contact point may require three rounds on white or cream carpet. Mark or remember the tomato contact zone location and apply a third H2O2 round there specifically if colour remains after the standard two rounds. (5) The tomato skin at the contact point — tomato skin contains higher lycopene concentration than tomato flesh and also contains cutin (a waxy polymer on the outer surface). The cutin may resist enzyme and baking soda treatment but does not resist hydrogen peroxide. Ensure the H2O2 is applied directly to the former tomato skin contact zone.

(2) Collect shrimp heads first — pick up all shrimp heads (with tomalley) before any liquid treatment. The tomalley will squeeze out of the head if the head is pressed into the carpet. Lift straight up. Some tomalley will have already transferred to the carpet pile. (3) Tomalley protein — tomalley is the shrimp's combined liver and pancreas. It is extremely protein-dense (similar to mammalian liver) and contains lipids, stored energy (glycogen), and the characteristic shrimp pigment astaxanthin (a pink-red carotenoid that gives cooked shrimp their pink colour). (4) Astaxanthin in tomalley — the pink-orange astaxanthin carotenoid in cooked tomalley creates a pinkish-orange stain at the contact zones.
