Two Chemistry Differences That Distinguish Sinigang na Salmon From Other Filipino Fish Stains

Paksiw na bangus uses coconut vinegar (acetic acid). Kinilaw uses coconut vinegar and calamansi (acetic and citric acid). Sinigang uses tamarind, which is primarily tartaric acid with small amounts of malic acid and citric acid. Tartaric acid has different buffering behaviour than acetic acid and behaves differently in carpet fibres — it is a diprotic acid that can form calcium tartrate salts if the carpet has any calcium mineral residue. The pre-enzyme baking soda neutralisation step is still recommended, though the tamarind broth is typically less acidic than pure vinegar at serving concentration. The salmon fat is the more critical difference: at 13 to 15 percent fat by weight, salmon is three to five times fattier than bangus and significantly fattier than the fish in most sinigang variations.

Step 1 — Absorb Broth Immediately and Remove Fish

Cover the full broth zone with paper towels and press firmly — tamarind broth is as thin as plain water and spreads rapidly. Remove salmon pieces, kangkong, radish, and eggplant. The salmon pieces have very high surface fat and will leave an oil mark wherever they rest — remove them promptly. If kangkong leaves have landed, pick them up by hand before they wilt further onto the pile.

Step 2 — Cold Water Rinse to Dilute Tartaric Acid

Apply cold water to the full broth spread area. Cold water dilutes the tamarind tartaric acid, reducing its concentration before it can interact with carpet minerals, and begins flushing the TMA from the fish sauce. Blot out thoroughly. Cold water is used throughout because the salmon protein should not be heat-set (same cold water principle as cooked fish — salmon protein is fully denatured by cooking but warm water can drive it deeper into the backing).

Step 3 — Baking Soda Paste for Salmon Fat and Tartaric Acid Neutralisation

Apply a generous baking soda paste to the salmon fat zone and the full broth area. Sinigang na salmon requires a heavier baking soda application than most fish dish stains because of the very high salmon fat load. Leave for 25 to 30 minutes. The baking soda also neutralises the residual tamarind tartaric acid, raising the pH toward neutral before the enzyme step. Vacuum.

Salmon Fat Is More Difficult to Emulsify Than White Fish Fat

Salmon omega-3 polyunsaturated fat (EPA and DHA) is more difficult to emulsify than the saturated fats in cooking oil or the monounsaturated fat in mild white fish. The baking soda absorption step may need to be repeated before dish soap emulsification if the carpet still feels oily after the first baking soda application. The dish soap step for salmon should also use a longer dwell than for a standard cooking oil spill.

Step 4 — Protease Enzyme for Salmon Protein and TMA

Apply protease enzyme cleaner using cold water dilution. The enzyme addresses the salmon flesh protein (at near-neutral pH after the baking soda neutralisation), the fish sauce TMA amino compound precursors, and the kangkong leaf protein residue if any leaves were present. Allow 15 minutes dwell. Blot out and rinse cold.

Step 5 — Dish Soap for Salmon Omega-3 Fat Emulsification

Apply diluted dish soap to the salmon fat zone. Allow three to four minutes — longer than standard, because salmon omega-3 fat is harder to emulsify than saturated cooking oil. Blot and rinse cold. A second round of dish soap may be needed if the carpet still has an oily texture after the first pass.

Step 6 — Hydrogen Peroxide for Salmon Astaxanthin and Kangkong Chlorophyll

Apply 3% hydrogen peroxide if a pink-orange tint from salmon astaxanthin or a green-grey mark from kangkong chlorophyll remains after the enzyme step has dried. Astaxanthin responds to H2O2 (same as shrimp astaxanthin). Kangkong chlorophyll also breaks down under H2O2 oxidation. Allow 8 minutes, blot and rinse cold.

Step 7 — Extended Baking Soda Dry Finish for Fish Odour

Apply dry baking soda across the full treated area. Leave for two to three hours. Salmon TMA combined with fish sauce patis creates a persistent seafood odour — more so than white fish dishes because of the higher fat content (TMA is partially dissolved in salmon fat and releases more slowly). Vacuum and ventilate fully.

What is astaxanthin and why is it in salmon?

Astaxanthin is a carotenoid pigment that wild salmon accumulate by eating krill and other astaxanthin-rich crustaceans — it is the compound that makes wild salmon flesh pink-orange. Farmed salmon are given astaxanthin supplements. The same pigment is found in shrimp and binagoongang baboy (from the shrimp fermentation). On carpet, astaxanthin leaves a pink-orange tint at the fish contact zone and responds to H2O2 treatment in the same way as shrimp astaxanthin staining.

Is kangkong (water spinach) a significant carpet stain?

Minor to moderate. Kangkong leaves contain chlorophyll — the same green pigment as most leafy vegetables. When fresh kangkong is pressed onto carpet it can leave a green smear.
