Sisig is among the highest-fat foods in Filipino cuisine — pork face and ear contain a very high proportion of fat, skin collagen, and cartilage. The fat treatment for sisig is the highest-priority step — apply baking soda immediately and generously. Component 2: Calamansi Citric Acid

Calamansi is a small Filipino citrus (Citrofortunella microcarpa) with a juice very similar to lime in acidity (primarily citric acid, pH approximately 2 to 3 for undiluted calamansi juice). On carpet, the calamansi adds a mild acid that assists in some ways (the acidic environment keeps turmeric-based stains in their yellow form rather than shifting alkaline) but can contribute to residual sourness in the carpet if not rinsed out.

Calamansi citric acid is fully water-soluble and is rinsed out during the cold water steps. No specific treatment step is needed for the acid alone — ensure thorough cold water rinsing after the enzyme step to remove the citric acid residue from the carpet pile.

Component 3: Mayonnaise Emulsion

Modern restaurant and home sisig is frequently topped with a dollop of mayonnaise (Knorr or Best Foods brand are the most common in Filipino cooking) that melts on the sizzling plate and combines with the pork fat. Mayonnaise is approximately 65 to 80% fat by weight — vegetable oil emulsified with egg yolk lecithin. On carpet, the mayonnaise adds an additional oil component alongside the pork fat, and the egg yolk protein adds to the protein load that the enzyme step must address.

The egg yolk in mayonnaise is the most enzyme-accessible component — protease dissolves egg yolk protein very efficiently. The oil component of mayonnaise is addressed by the dish soap emulsification step alongside the pork fat.

Component 4: Chilli and Onion

Sisig is made with fresh red chilli (or bird's eye chilli for extra heat) and raw onion, both finely chopped and mixed into the dish. The chilli contributes capsanthin carotenoid pigments (fat-soluble, addressed by dish soap emulsification and peroxide) and capsaicin (fat-soluble irritant, removed by dish soap). Step-by-Step Treatment Sequence

  1. Do not touch the sizzling plate — the cast iron plate retains heat and can cause burns. Let it cool before handling.
  2. Remove pork pieces — lift with a spoon once the temperature is safe to approach.
  3. First baking soda round (extended, 20 minutes) — apply generously for the extreme pork fat load. Vacuum carefully.
  4. Second baking soda round (10 minutes) — for a sizzling-plate near-boiling fat spill, a second round is recommended. Vacuum.
  5. Dish soap emulsification (warm water) — apply dish soap solution in warm water, agitate gently, blot thoroughly. Two rounds for heavy sisig fat spills.
  6. Rinse dish soap + calamansi acid — cold water and blot thoroughly. The rinsing also removes the calamansi citric acid.
  7. Enzyme treatment — apply protease enzyme cleaner for 20 minutes. Addresses pork face/ear protein and cartilage collagen, egg yolk protein from mayonnaise. Blot and rinse.
  8. Hydrogen peroxide (3%) — apply for 15 minutes, blot, check colour. One to two rounds for chilli carotenoid and any browning from the grilled pork surface Maillard compounds.
  9. Dry completely — fan-dry for several hours.
  10. Baking soda overnight — for concentrated onion sulphur and chilli volatile aromas. One to two nights depending on the chilli and onion quantity.

The sizzling plate stays dangerously hot after the spill

Cast iron sizzling plates retain heat for 10 to 15 minutes after removal from the heat source. Do not attempt to clean the carpet underneath or around the plate until it has cooled to touch — it can re-ignite oil-soaked carpet material.

Egg Sisig Variant

Some sisig preparations include a raw egg cracked directly onto the sizzling plate and left partially cooked in the residual heat. If the egg is only partially set when the plate tips, the runny yolk adds a liquid egg protein component. The same enzyme and cold water treatment applies — never use hot water on raw egg. If the egg white has set on the sizzling plate surface itself (not on the carpet), this is addressed by the cleanup of the plate, not the carpet.
