Sisig is a Pampango-origin Filipino dish that became one of the most popular Filipino restaurant and home dishes — made from chopped pork face (pig's cheek, ear, and snout), pork liver, onion, calamansi, and chillies, typically served on a sizzling cast-iron plate with a raw egg cracked on top at the table. The sizzling plate presentation is the defining feature of restaurant sisig and is also a significant factor in the carpet stain risk: the pork fat sizzles actively on the hot cast iron and spatters when the plate arrives or is moved, distributing fine hot fat droplets further than a cold spill would reach.

The Sizzling Plate Factor: Hot Fat on Carpet

The cast-iron sizzling plate for sisig is typically heated to 200–250°C and the food continues cooking on the plate as it is carried to the table. When sisig is brought tableside and the plate is set down — or when it is knocked or a person brushes against it — fine droplets of rendered pork fat at near-boiling temperature can spatter 20–40 centimetres beyond the plate. This creates a wide-area dot-pattern fat spatter stain rather than a single concentrated spill. On wool carpet, the hot fat droplets have more penetrating depth than cool fat — heat reduces viscosity and the hot fat wicks deeper into the pile before cooling and solidifying.

Hot egg on wool carpet sets immediately

If the raw egg cracked onto the sizzling sisig plate has overflowed or been carried onto wool carpet, apply cold water within 30 seconds. Albumin (egg white protein) begins denaturing at 60°C and the egg arrives on the plate at near-boiling temperature. Hot egg protein on wool sets faster than cold egg — cold water immediately prevents irreversible bonding.

Treatment Sequence

  1. Allow the sizzling plate to be moved away from the carpet area to prevent further hot fat spatter.
  2. Blot the primary spill area from the outside edge inward. For fat spatter dots around the main spill: blot each dot individually rather than wiping — wiping spreads the fat.
  3. Apply cold water immediately to the egg component if present. Blot dry.
  4. Apply baking soda paste (1.5 tablespoons baking soda + 1 teaspoon cold water). Spread to cover both the central sisig spill and any outer fat spatter dots. Leave 20–24 minutes for the high pork cheek/ear fat content.
  5. Rinse baking soda with cold water. Blot dry.
  6. Apply enzyme cleaner (protease for pork liver myoglobin, egg albumin; lipase for pork fat, mayonnaise fat; amylase if any bread or rice accompaniment was mixed in). Leave 18 minutes.
  7. Rinse with cold water. Blot dry.
  8. Apply white vinegar solution (1 part vinegar, 4 parts cold water). Leave 6 minutes. This step neutralises any alkaline residue from the baking soda and lifts minor liver TMA. Blot dry.
  9. Apply 3% hydrogen peroxide. Leave 8 minutes. Blot. The H2O2 oxidises pork liver myoglobin (dark red-brown) and capsanthin from chilli. One round is usually sufficient unless the liver content was high — if the liver stain was large, apply a second round after drying.
  10. Rinse with cold water. Blot dry. Air-dry.

The sisig was the bangus (milkfish) variant — does fish sisig stain differently from pork sisig?

Bangus (milkfish) sisig uses deboned milkfish belly — high omega-3 fish oil (lower viscosity than pork fat, spreads more easily on carpet), fish myoglobin (lower concentration than pork liver but present), TMA (from the fish protein — stronger than pork), and calamansi/chilli. Extend the vinegar step to 10 minutes for bangus sisig (stronger TMA than pork sisig). The baking soda step is 14–16 minutes (fish oil is lower viscosity and absorbs faster than pork fat). H2O2 1 round for fish myoglobin (lower concentration than pork liver). The fat-spatter pattern is the same as pork sisig if it was served on a sizzling plate.

Is tokwa (tofu) sisig treated differently from pork sisig?

Tokwa sisig replaces the pork with deep-fried firm tofu. The stain profile is significantly different: much lower fat content (tofu itself has low fat; the frying oil is the main fat source), no myoglobin, similar calamansi and chilli components. Treat tokwa sisig as: baking soda 12–14 minutes (frying oil), enzyme amylase if the tofu left starch residue, vinegar 5 minutes (mild), H2O2 1 round (capsanthin only). No pork liver treatment is needed. The sizzling plate hot-spatter factor still applies if the tofu sisig was also served sizzling.

Can I use dish soap directly on the sisig fat stain instead of baking soda?

Dish soap (surfactant) will emulsify pork fat and help lift it from the carpet surface, but it creates a foam residue that is difficult to rinse fully from deep in the pile. Baking soda physically adsorbs the fat and is removed cleanly by vacuuming and rinsing — it is the better first step for a heavy fat stain like sisig. If baking soda is not available, dish soap solution (1 teaspoon in 250 ml cold water, applied and blotted 3–4 times with fresh cold water rinses) is a reasonable alternative for the fat step. Follow with enzyme lipase regardless of which fat removal method was used.

The calamansi juice from the sisig seems to have lightened the carpet — is the acid damaging it?

Calamansi juice is citric acid (pH approximately 2.5–3.0). On wool carpet, mild acidity is not damaging — wool fibre is naturally acid-tolerant. A very light calamansi bleaching effect on wool is possible if the juice was concentrated and contacted the carpet directly, but this is rare at the dilute concentration present in sisig. On synthetic carpet, calamansi acid is not a damage risk. The apparent lightening may be from the calamansi lifting an existing soil or light discolouration rather than actual fibre bleaching — inspect the carpet after treatment to confirm. If a light patch persists, it is more likely residual visual irregularity from the treatment than acid damage.
