Treatment Sequence for Suman

  5. Rinse baking soda with cold water. Blot dry.
  6. Apply enzyme cleaner (amylase for glutinous rice starch, lipase for coconut fat, protease for coconut protein). Leave 16 minutes.
  7. Rinse with cold water. Blot dry.
  8. If a banana leaf green-brown tint, muscovado brown, or mango orange is visible: apply 3% hydrogen peroxide. Leave 8–10 minutes. Blot. One round is typically sufficient for banana leaf pheophytin and muscovado. A second round may be needed for mango carotenoid or latik browning.
  9. If no visible chromophore (plain suman, no banana leaf contact): skip the H2O2 step entirely. Rinse with cold water, blot dry, and air-dry.
