Cold Water Only on the Fried Egg Zone

Step 2 — Cold Water Rinse Across All Zones

Apply cold water to the full spill area — tapa zone, egg zone, and rice zone. Cold water dilutes the soy sauce, cools the rendered beef fat, and prevents the egg from setting. Blot out thoroughly before proceeding.

Step 3 — Baking Soda Paste for Fat Zones

Apply baking soda paste to both the tapa beef fat area and the egg yolk area. The egg yolk lecithin fat and the rendered beef fat both respond to baking soda absorption. Leave for 20 to 25 minutes, then vacuum. The cooking oil from the fried egg is also extracted in this step.

Step 4 — Protease Enzyme Across All Zones

Apply protease enzyme cleaner (cold water dilution) to the full stained area. This step addresses: the egg albumin and egg yolk protein (critical — the egg protein is the most sensitive component), the beef protein from the tapa, the rice starch (if the enzyme product also contains amylase), and the garlic oil protein residue. Allow 12 to 15 minutes dwell across all zones. Blot out and rinse cold.

Step 5 — Dish Soap for Fat Residue

Apply diluted dish soap to the tapa fat area, egg yolk area, and rice starch area. Dish soap emulsifies the residual beef fat, cooking oil from the egg, and garlic oil from the sinangag. Allow two to three minutes, blot and rinse cold.

Step 6 — Hydrogen Peroxide for Soy and Caramel Chromophores

Apply 3% hydrogen peroxide to the tapa zone where the soy sauce and caramelised sugar staining is concentrated. Allow 8 to 10 minutes dwell. Blot and rinse cold. The soy melanoidins and caramelised sugar Maillard compounds both respond well in one to two H2O2 passes. The egg zone and rice zone typically do not require H2O2 unless a yellowish tint from the egg yolk carotenoids remains after the enzyme step — apply targeted H2O2 if so.

Step 7 — Baking Soda Dry Finish

After all liquid treatment steps, apply dry baking soda over the full treated area. Leave for 20 to 30 minutes. The garlic oil odour from the sinangag is addressed in this step — baking soda absorbs the allicin compound residue. Vacuum and allow full ventilation drying.
